SLOW COOKER POT ROAST

Slow Cooker Pot Roast image

Taking the time to make a smooth, thick gravy for this slow-cooked dinner is worth it. As the pot roast cooks, the water and juices from the vegetables and meat will thin the gravy out, creating just the right consistency.

Time 8h50m

Yield 8 to 10 servings

Number Of Ingredients 15

One 4-pound beef chuck roast
Kosher salt and freshly ground black pepper
1/3 cup all-purpose flour, plus more for coating
3 tablespoons olive oil
4 medium carrots, cut into 2-inch pieces
3 stalks celery, peeled and cut into 2-inch pieces
1 medium onion, cut into 1/2-inch wedges
3 cloves garlic, mashed
3 tablespoons tomato paste
1 cup red wine
3 cups low-sodium beef broth
3 bay leaves
2 sprigs fresh thyme
1/2 teaspoon ground allspice
1/2 cup loosely packed parsley leaves, chopped

Steps:

  • Sprinkle the roast all over with 2 1/2 teaspoons salt and 1 1/2 teaspoons pepper. Coat in flour and shake off any excess. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the roast to the skillet and cook until golden brown on all sides, about 8 minutes, turning as needed. Transfer the roast to the insert of a 6-quart slow cooker, along with the carrots, celery, onions and garlic.
  • Add the remaining 1 tablespoon oil to the skillet over medium heat. Add the tomato paste and stir until the oil begins to turn brick-red, about 1 minute. Add the flour and wine and whisk until thick (it's OK if there are some lumps). Add the beef broth, bay leaves, thyme, allspice, 1/2 teaspoon salt and a few grinds of pepper and bring to a simmer, whisking, until the gravy is smooth and thickens slightly, about 4 minutes.
  • Pour the gravy into the slow cooker. Cover and cook on low for 8 hours. The roast and vegetables should be tender.
  • Remove the roast and let rest for a few minutes. Discard the thyme stems and strain the vegetables, reserving the gravy. Toss the vegetables with half the parsley and season with salt and pepper. Stir the remaining parsley into the gravy and season with salt and pepper. Slice the roast against the grain. Serve the meat and vegetables on a platter, moistening them with some of the gravy; serve the remaining gravy on the side.

Crock-pot cooking is an exhilarating experience, especially if you are making Angie's awesome pot roast crockpot recipes. Pot roast is a hearty and flavorful dish that is slow-cooked, allowing the meat to tenderize and the flavors to meld together. To make Angie's awesome pot roast crockpot recipe even more enjoyable, there are several valuable tips to follow that will enhance your experience.

Cut of Meat

Choosing the right cut of meat is crucial in making an excellent pot roast. For this recipe, it is best to use a tough cut of meat such as chuck roast. The connective tissue in the meat will break down during the slow cooking, resulting in a tender and flavorful pot roast. Also, be sure to choose a cut with marbling as this will help keep the roast moist and juicy.

Searing the Meat

Searing the meat before adding it to the crock-pot is an essential step in creating a flavorful pot roast. The process of browning the meat seals in the juices and results in a caramelized surface that adds depth of flavor to the dish. To sear the meat, heat oil in a pan over high heat and add the meat, making sure not to overcrowd the pan. Cook the meat until it is well-browned on all sides, then transfer it to the crock-pot.

Vegetables and Aromatics

Adding vegetables and aromatics to the pot roast not only adds flavor but also nutrients. Aromatics such as onions, garlic, and celery enhance the flavor of the meat, while vegetables such as carrots and potatoes add bulk and nutrition to the dish. To add even more flavor, consider using fresh herbs such as thyme and rosemary.

Liquid

Adding the right liquid to the crock-pot is crucial to creating a tender pot roast. Beef broth, red wine, or a combination of both are excellent choices as they add depth of flavor to the dish. Be sure to add enough liquid to cover the roast but not too much as this can result in a watery sauce.

Cooking Time

The beauty of crock-pot cooking is that it is a slow-cooking process, allowing the flavors to meld together and the meat to tenderize. For this recipe, the pot roast should be cooked on low for 8-10 hours or on high for 4-6 hours. It is essential not to rush the cooking process as this can result in tough meat.

Sauces and Gravy

A flavorful pot roast deserves an equally delicious sauce or gravy. To make a sauce, remove the meat and vegetables from the crock-pot and strain the liquid into a saucepan. Bring the liquid to a boil and reduce until the desired consistency is achieved. To make a gravy, create a roux by whisking together melted butter and flour in a saucepan over medium heat. Add the strained liquid and whisk until the mixture thickens into a creamy gravy.

Serving Suggestions

Pot roast is a hearty and filling dish that pairs well with a variety of sides. Mashed potatoes, roasted vegetables, and a green salad are all excellent choices to serve alongside Angie's awesome pot roast crockpot recipe. For a complete meal, consider adding a dessert such as apple pie or chocolate cake.
