STRAWBERRY-LEMONADE ANGEL PIE

Strawberry-Lemonade Angel Pie image

This strawberry, cream, and meringue confection is so gorgeous, it can take the place of any floral centerpiece on your table. It's similar to a pavlova, but the meringue base is formed into a pretty shell and the strawberry filling is cooked with a little gelatin to make this stunner sliceable.

Time 6h20m

Yield Serves 8 to 10

Number Of Ingredients 12

Unsalted butter, softened, for brushing
4 large egg whites, room temperature
1 tablespoon cold water
1/4 teaspoon cream of tartar
1 cup sugar
1/3 cup fresh lemon juice
1 teaspoon unflavored gelatin (from a 1/4-ounce package)
3/4 cup sugar
2 quarts strawberries, hulled and thinly sliced (4 cups), plus more, whole or halved, for garnish
1/4 teaspoon kosher salt (we use Diamond Crystal)
1/4 cup cornstarch
Unsweetened whipped cream, for serving

Steps:

  • Crust: Preheat oven to 300°F with a rack in center. Lightly brush a 9-inch pie dish with butter. Beat egg whites and cold water on high speed until foamy, about 30 seconds. Add cream of tartar and continue to beat until soft peaks form, about 1 minute. Gradually add sugar and beat until thick, glossy peaks form, about 5 minutes.
  • Spread meringue into an even layer along bottom and up sides of prepared pie dish to form crust. (Don't spread past rim, or it will fall over edges during baking.) Bake until crisp and light golden on outside, 40 to 45 minutes. Turn off oven and let cool in oven 1 hour, then transfer to a wire rack and let cool completely.
  • Filling: Meanwhile, add enough water to lemon juice to yield 1/2 cup (about 2 tablespoons plus 1 teaspoon). Combine gelatin and 1 tablespoon lemon mixture in a small bowl.
  • In a medium saucepan, combine sugar, 2 cups strawberries, and salt. Using a potato masher, gently mash berries. Bring to a boil over high heat, then reduce heat to medium-low and simmer, stirring frequently, until mixture is juicy, about 5 minutes. Whisk cornstarch into remaining lemon mixture; stir into pan with berries and return to a boil.
  • Cook until liquid is very thick and clear, about 1 minute. Stir in gelatin mixture, reduce heat to low, and cook, stirring, until gelatin is fully dissolved, 30 seconds. Remove from heat and let cool 5 minutes. Stir in remaining berries and pour into cooled crust. Refrigerate until set, at least 3 hours or, covered, up to 1 day. Top with whipped cream and whole or halved berries just before serving.

BAKED ANGEL HAIR WITH EGGPLANT POT PIE

BAKED ANGEL HAIR WITH EGGPLANT POT PIE image

Yield 8 servings

Number Of Ingredients 12

/3 cup plus 1/4 cup extra-virgin olive oil
4 to 6 Japanese eggplants (about 2 pounds total), cut into 1-inch cubes
Salt and freshly ground black pepper
1 tablespoon minced garlic
1 pound mild Italian turkey sausage, casings removed
1/3 cup dry red wine
3 cups marinara sauce
1 teaspoon dried crushed red pepper flakes
8 ounces angel hair pasta
1 pound mozzarella, diced
1 cup freshly grated Parmesan
1 (17 1/4-ounce) package frozen puff pastry (2 sheets), thawed

Steps:

  • Heat 1/3 cup of oil in a large nonstick frying pan over medium-high heat. Add half of the eggplant and toss to coat in the oil. Sprinkle with salt and pepper. Saute the eggplant until it is golden and tender, about 10 minutes. Decrease the heat to medium. Add half of the garlic and saute until it is tender, about 2 minutes longer. Using a slotted spoon, transfer the eggplant mixture to a large bowl. Repeat with the remaining 1/4 cup oil and the remaining eggplant and garlic. Add the sausage and wine to the same frying pan. Cook over medium-high heat until the wine evaporates and the sausage is brown, breaking the sausage into pieces with the back of a spoon, about 8 minutes. Add the sausage, marinara sauce, and crushed red pepper to the eggplant mixture, and toss to combine. Meanwhile, bring a large pot of salted water to a boil over high heat. Add the angel hair and cook for 1 to 2 minutes, stirring constantly, until pasta is still slightly crunchy and undercooked. Drain. Toss the angel hair with the eggplant mixture. Cool completely. Add the mozzarella and Parmesan and toss to combine. Preheat the oven to 375 degrees F. Roll out 1 pastry sheet on a floured surface to a 13 1/2-inch square. Transfer to a 9-inch springform pan, allowing the excess pastry to hang over the rim. Spoon the pasta mixture into the pan. Place the second pastry sheet atop the pasta filling. Pinch the edges of the pastry sheets together to seal. Trim the overhanging pastry edges to about 1-inch. Fold the pastry edges in to form a decorative border. Cut a slit in the center of the top pastry to allow the steam to escape. Bake until the pastry is brown and puffed on top, about 1 hour and 30 minutes. Let stand for 20 minutes. Remove the pan sides and serve.

GRAPEFRUIT AND COCONUT ANGEL PIE

Grapefruit and Coconut Angel Pie image

Number Of Ingredients 15

For the shell
4 large egg whites at room temperature
1/4 teaspoon salt
1/4 teaspoon cream of tartar
1 cup sugar
1 cup sweetened flake coconut
For the filling
1 envelope (about 1 tablespoon) unflavored gelatin
3/4 cup strained fresh grapefruit juice
4 large egg yolks
1/2 cup sugar
8 ounces cream cheese, softened
1 cup well-chilled heavy cream
2 cups fresh grapefruit sections (cut from about 3 large grapefruit), cut into 1/2-inch pieces and drained well
fresh grapefruit sections for garnish if desired

Steps:

  • Make the shell:
  • In a bowl with an electric mixer beat the egg whites with the salt until they are foamy, beat in the cream of tartar, and beat the whites until they hold soft peaks. Beat in the sugar, a little at a time, beat the meringue for 5 to 7 minutes, or until it is stiff and glossy and the sugar is dissolved, and fold in the coconut. Drop heaping tablespoons of the meringue evenly around the edge of a well-butter 9-inch (1-quart) pie plate, spreading the meringue with the back of the spoon to form the side of the shell, and spread the remaining meringue evenly over the bottom of the pie plate. Bake the shell in the middle of a preheated 250°F. oven for 1 1/4 to 1 1/3 hours, or until it if firm and very pale golden, turn off the oven, and let the shell cool completely in the oven with the door ajar. (Once the shell is cooled completely, it may be left overnight in the oven with the door closed.)
  • Make the filling:
  • In a small bowl sprinkle the gelatin over 1/4 cup of the grapefruit juice and let it soften for 1 minute. In a small saucepan whisk together the egg yolks and the sugar, add the remaining 1/2 cup grapefruit juice, the gelatin mixture, and a pinch of salt, and cook the mixture over moderate heat, whisking, until it registers 160°F. on a candy thermometer. Transfer the yolk mixture to a metal bowl set in a larger bowl of ice and cold water and whisk it constantly until it is thickened to the consistency of raw egg white but is not set. Remove the smaller bowl from the bowl of ice and cold water and reserve the bowl of ice and cold water for later use. In another metal bowl with an electric mixer beat the cream cheese until it is light, fluffy, and smooth, scraping down the side, add the yolk mixture, a little at a time, beating, and beat the mixture until it is smooth and combined well. Set the bowl containing the cream cheese mixture in the reserved bowl of ice and cold water and whisk the cream cheese mixture until is thickened and forms a ribbon when the whisk is lifted. In a bowl beat the heavy cream until it holds stiff peaks and whisk about one fourth of it into the cream cheese mixture. Fold in the remaining whipped cream gently but thoroughly and fold in the grapefruit pieces gently.
  • Pour the filling into the shell, smoothing the top, and chill the pie, uncovered, for 4 hours, or until the filling is set completely. (If the pie is to be chilled for more than 4 hours, cover it with plastic wrap or wax paper.) Just before serving garnish the pie with the grapefruit sections.

Angel pie is a classic dessert dish that has been a favorite of many for years. Made with light and airy meringue, fluffy whipped cream, and a crispy crust, the angel pie is truly a heavenly treat. It is easy to make, and always sure to impress. Whether you are an experienced baker or a novice in the kitchen, these valuable tips will help you perfect your angel pie recipe.

TIP #1: Know Your Ingredients

One of the critical components of any angel pie recipe is the meringue. Meringue is made using egg whites, which needs to be free of any yolk traces. When separating the egg yolks from the whites, ensure that there is no yolk mixed in with the whites, as this will affect the meringue's texture. In addition, it is important to use room temperature eggs as they tend to whip up better. Another important ingredient in making an angel pie recipe is cream of tartar. Cream of tartar is acidic and helps stabilize the egg whites during the whipping process, resulting in a stiffer and more stable meringue. It can be found in most grocery stores' baking supply aisle. Lastly, the crust is an essential element in any pie recipe. Ensure that you have all the ingredients to make the perfect crust. Typically, an angel pie recipe uses graham crackers or pastry crust. Ensure that the crust is crispy and flaky, adding the needed texture to the pie.

TIP #2: Whip It, Whip It Right!

Whipping egg whites is a delicate process that requires patience, precision, and technique. The eggs need to be whipped until stiff peaks form, meaning they should hold their peak when the beaters are lifted. To achieve this, use a clean and dry bowl, beaters, and measuring cup. Once the eggs are separated, add them to the mixing bowl, then add the cream of tartar. Beat the mixture until it is frothy, then slowly add in the sugar, one tablespoon at a time. Continue to beat the eggs until they form soft peaks. Gradually add in the rest of the sugar, until the mixture reaches a glossy consistency, and forms stiff peaks.

TIP #3: Bake it to Perfection

The baking time and temperature are crucial factors in achieving a perfect angel pie. The pie needs to be baked at a relatively low temperature, around 275°F, for about an hour. The low temperature will ensure that the meringue cooks evenly, and the crust doesn't burn. Once the angel pie is done baking, turn off the oven and let it cool down gradually. This will prevent the meringue from collapsing or cracking.

TIP #4: Get Creative

While the traditional angel pie recipe calls for a simple graham cracker crust, feel free to get creative with your crust. Consider using different types of crackers, cookies or nuts to add flavor and texture to your pie. You can also experiment with the filling, adding in different fruits, sauces or syrups to the whipped cream. Adding in shredded coconut, nuts or chocolate shavings on top of the meringue before baking can also give your angel pie a twist to its taste.

TIP #5: Presentation Matters

Presentation is key when it comes to serving an angel pie. A well-decorated pie can be just as visually appealing as it is delicious. Consider using a piping bag to add fun designs and shapes to the top of the pie. Use fresh fruit slices, powdered sugar, or whipped cream to decorate the pie and give it that dazzling look.

Conclusion

Angel pie is a fantastic dessert dish that is easy to make, and always hit the spot. When making an angel pie recipe, be sure to know your ingredients, whip the eggs correctly, bake it to perfection, and add your own unique twist to the recipe. Lastly, presentation matters, make sure to add those finishing touches to make your angel pie look visually appealing. With these valuable tips, you can be sure to create a heavenly dish that will keep everyone coming back for more.
