Time 48m

Yield 4 to 6 servings

Number Of Ingredients 11

2 pounds ripe tomatoes
3 tablespoons extra-virgin olive oil
1 red onion, finely chopped
3 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 oregano sprig
Pinch chili flakes
1 teaspoon sugar
1 pound dried angel hair pasta
1/4 cup grated Parmesan, plus more for garnish
1/4 cup chiffonade basil, plus whole sprigs for garnish

Steps:

  • Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
  • Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
  • Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 8

3 tablespoons extra-virgin olive oil
4 large cloves garlic, grated
Kosher salt
1/3 cup tomato paste
1 pint cherry tomatoes, halved
1 cup heavy cream
10 ounces angel hair pasta
1/2 cup finely grated pecorino

Steps:

  • In a large skillet, warm the olive oil and garlic over medium heat. Add a pinch of salt and 2 tablespoons water. Simmer until the water cooks out and the garlic becomes tender, about 2 minutes. Stir in the tomato paste with 2 more tablespoons water and cook to "fry" the paste for a minute in the oil, stirring. Add the cherry tomatoes and cook over medium heat until they soften, 1 to 2 minutes. Add the cream. Season with salt to taste. Keep warm.
  • In a large pot, bring 4 quarts water to a rolling boil. Add a generous handful of salt. Bring the water back up to a boil. Add the pasta and cook, stirring with a slotted spoon to make sure it does not clump or stick to the bottom, until al dente, 3 to 4 minutes. Reserve 1/2 cup pasta cooking liquid and drain the pasta in a large colander.
  • Add the hot pasta right from the colander to the skillet and toss to coat with the cream. Shut the heat off and allow the pasta to rest for 2 minutes. If too thin, gently warm and reduce over low heat for 1 to 2 additional minutes. If it becomes too thick, simply thin it out with some of the reserved pasta cooking liquid. Serve topped with the cheese.

Valuable Tips for Making Angel Hair with Fresh Tomato Sauce Recipes

Angel hair pasta is a delicate pasta variety that pairs well with fresh tomato sauce. The key to making the perfect angel hair with fresh tomato sauce is to keep it simple and fresh. In this article, we will provide you with valuable tips on how to make the perfect angel hair with fresh tomato sauce recipe.
Tip #1: Use Fresh Ingredients
Fresh ingredients are essential when making angel hair with fresh tomato sauce. Use ripe and juicy tomatoes, fresh herbs, and garlic to infuse the sauce with flavor. Make sure to use fresh and high-quality angel hair pasta, as it is a key ingredient in the dish. The use of fresh ingredients enhances the flavors of the sauce and creates a light and refreshing pasta dish.
Tip #2: Choose the Right Tomatoes
The choice of tomatoes used in the fresh tomato sauce makes a significant difference in the taste of the dish. Choose tomatoes that are ripe, rich in color, and juicy. Roma, cherry, and heirloom tomatoes are great choices for making fresh tomato sauce. Heirloom tomatoes are especially flavorful and work well for this dish.
Tip #3: Keep the Sauce Simple
The key to making a delicious fresh tomato sauce is to keep it simple. Start by sautéing garlic in olive oil until fragrant. Add chopped tomatoes and cook until they break down and release their juices. Season the sauce with salt, pepper, and your choice of fresh herbs, such as basil, parsley, or oregano. Adding too many ingredients can overpower the delicate flavor of the angel hair pasta.
Tip #4: Cook the Angel Hair Pasta Perfectly
Cooking the angel hair pasta perfectly is crucial to the dish's success. Angel hair pasta cooks quickly and can turn mushy if overcooked. Follow the instructions on the package and cook the pasta in salted boiling water. Drain the pasta when it is al dente, and be sure to reserve a cup of pasta water. The starchy water can be used to thin the sauce and add flavor.
Tip #5: Garnish with Fresh Herbs and Cheese
Garnishing the dish with fresh herbs and cheese adds another layer of flavor and texture. Sprinkle freshly grated Parmesan or Romano cheese over the pasta and top with fresh herbs like basil or parsley. The cheese melts into the sauce, creating a creamy and flavorful dish. The herbs add freshness and balance out the acidity of the tomatoes in the sauce.
Tip #6: Add Vegetables or Protein to the Dish
If you want to add more flavor and texture to the dish, consider adding vegetables or protein. Sauteed mushrooms, bell peppers, or zucchini add texture and color to the dish. Protein options like shrimp, chicken, or sausage can also be added to make the dish more filling. Adding these ingredients can transform the dish into a complete meal on its own.
Tip #7: Serve with Bread and Wine
Serving the angel hair with fresh tomato sauce with bread and wine is a great way of rounding out the dish. Freshly baked bread can be used to mop up any excess sauce on the plate, and wine can be used to complement the flavors in the dish. A light and refreshing white wine like Pinot Grigio or Sauvignon Blanc pairs well with the dish and helps cut through the acidity of the tomato sauce.

Conclusion

In conclusion, making the perfect angel hair with fresh tomato sauce is easy if you follow these valuable tips. Use fresh ingredients and keep the sauce simple to enhance the flavor of the dish. Cook the pasta perfectly, garnish with fresh herbs and cheese, and add vegetables or protein to make the dish more filling. Finally, serve with bread and wine to round out the meal. With these tips, you can create a light and refreshing pasta dish that everyone will love.
