1/2 pound uncooked shrimp (16-20 per pound), peeled and deveined
1/4 teaspoon salt
1/8 teaspoon crushed red pepper flakes
2 tablespoons olive oil, divided
8 fresh asparagus spears, trimmed and cut into 2-inch pieces
1/2 cup sliced fresh mushrooms
1/4 cup chopped seeded tomato, peeled
4 garlic cloves, minced
2 teaspoons chopped green onion
1/2 cup white wine or chicken broth
1-1/2 teaspoons minced fresh basil
1-1/2 teaspoons minced fresh oregano
1-1/2 teaspoons minced fresh parsley
1-1/2 teaspoons minced fresh thyme
1/4 cup grated Parmesan cheese
Lemon wedges

Steps:

  • Cook pasta according to package directions. Meanwhile, sprinkle shrimp with salt and pepper flakes. In a large skillet or wok, heat 1 tablespoon oil over medium-high heat. Add shrimp; stir-fry until pink, 2-3 minutes. Remove; keep warm. , In same skillet, stir-fry the next 5 ingredients in remaining oil until vegetables are crisp-tender, about 5 minutes. Add wine and seasonings. Return shrimp to pan., Drain pasta; add to shrimp mixture and toss gently. Cook and stir until heated through, 1-2 minutes. Sprinkle with Parmesan cheese. Serve with lemon wedges.

16 stalks fresh asparagus
1 tablespoon olive oil
4 cloves garlic, minced
1/4 teaspoon pepper
2 1/4 cups plum tomatoes, seeded & chopped (Roma)
1/4 cup dry white wine
1/4 teaspoon salt
1 tablespoon butter (no substitutes)
9 ounces fresh angel hair pasta
1/4 cup shredded fresh basil

Steps:

  • Trim asparagus& rinse in cold water.
  • Remove the tips& set aside.
  • Bias slice the rest of the stalk into 1- 1 1/2 inch pieces& set aside.
  • Heat oil in a large skillet over medium heat.
  • Add garlic& pepper; cook& stir for a minute.
  • Add tomatoes; cook& stir for another 2 minutes.
  • Add asparagus pieces, wine& salt; cook, uncovered, for 3 minutes.
  • Add asparagus tips& continue cooking, uncovered, for another minute.

1 lb very ripe tomatoes, peeled and chopped
1 bunch of tender Baby Spinach
5 garlic cloves, crushed
1/2 lime, zest of
2 limes, juice of
1/4 teaspoon Tabasco sauce (to taste)
2 ounces angel hair pasta (capellini)
3 -4 tablespoons olive oil
salt and pepper
parmesan cheese, freshly grated

Steps:

  • Combine the tomatoes, spinach, garlic, lime zest and juice in a bowl. Stir in the Tabasco sauce and olive oil, cover and set aside for 20-30 minutes.
  • Bring a large pan of lightly salted water to a boil and cook pasta until done, about 10 minutes(less for al dente).
  • Drain the pasta and return to clean pan. Add the tomato mixture and toss well. Season with salt and pepper to taste. Add the Parmesan cheese to taste, toss again, and serve in warm bowls, with extra Parmesan on top, if desired. Enjoy!

  • You could substitute young sorrel leaves or rocket for the spinach, and lemon juice and rind for the lime.

1/2 pound uncooked medium shrimp, peeled and deveined
2 tablespoons olive oil
2 garlic cloves, minced

1 teaspoon sugar
1 teaspoon reduced-sodium chicken bouillon granules

1/2 cup chopped green onion

Steps:

  • Boil asparagus in water for 5 mins, then drain and cool down quickly with cold water.Cut asparagus into 1 inch pieces,set aside.
  • In a small skillet melt the butter over med heat and add the onions, garlic and pepper flakes, saute for 5 mins until soft.
  • Add the cream, parmesan cheese and lemon juice and simmer for 5 mins until sauce thickens slightly. Add the asparagus and black pepper to the sauce. keep warm.
  • Cook the pasta until al dente, drain and serve imediately with the asparagus sauce on top.

2 lbs asparagus
salt, for water
2 tablespoons olive oil
8 garlic cloves, shaved thin and julienned
1 cup shallot, peeled and julienned
1 pinch crushed red pepper flakes
2 lemons, juice of
3/4 cup fresh chives, chopped fine
1 lb angel hair pasta
salt and pepper
1/2 cup parmesan cheese, freshly grated

Steps:

  • Rinse the asparagus and remove the bottom inch of the stem.
  • Cut the tips into 2 inch pieces.
  • Cut the remaining piece julienned.
  • Set the asparagus aside.
  • Bring a large pot of water to a boil, add salt.
  • In a large nonstick skillet, saute the garlic, shallots and red pepper flakes in olive oil, until tender but not browned.
  • Add the lemon juice and reduce by half.
  • Drop the pasta and the asparagus tips into the boiling water.
  • Cook until the pasta is ala dente, about 3 - 4 minutes.
  • Drain for a few minutes and add to the pan.
  • While the pasta is cooking add the remaining asparagus to the pan with the shallots and saute until they begin to wilt.
  • Toss in the chives, the pasta and cook until the remaining water has evaporated.
  • Season with salt and freshly ground pepper.
  • Remove from heat and add the Parmesan cheese.
  • Serve immediately.
  • (When I make this a second time, I'm going to add a little lemon zest in step 7).

1 limes, juice of or 1 tablespoon lime juice

  • Add some Pasta water if needed.

1/2 cup fresh basil, chopped
1/2 cup parmesan cheese, freshly grated
2 tablespoons extra virgin olive oil
