FRESH TOMATO, BASIL, AND GARLIC SAUCE OVER ANGEL HAIR PASTA

Fresh Tomato, Basil, and Garlic Sauce over Angel Hair Pasta image

Provided by Food Network

Categories     main-dish

Time 48m

Yield 4 to 6 servings

Number Of Ingredients 11

2 pounds ripe tomatoes
3 tablespoons extra-virgin olive oil
1 red onion, finely chopped
3 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 oregano sprig
Pinch chili flakes
1 teaspoon sugar
1 pound dried angel hair pasta
1/4 cup grated Parmesan, plus more for garnish
1/4 cup chiffonade basil, plus whole sprigs for garnish

Steps:

  • Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
  • Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
  • Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

ANGEL HAIR PASTA WITH SIMPLE GARLIC & BASIL

Angel Hair Pasta With Simple Garlic & Basil image

I adore angel hair pasta, and such a fine pasta doesn't always need a big sauce. Serve with some kind of cheese or "cheez" if you wish, sprinkled on top. My children like it with sliced olives. There are many versions of this simple recipe, this one I adapted from www.cookingnook.com. This would probably be good for 4 as a side dish or 4 for lunch with a salad.

Categories     Spaghetti

Time 35m

Yield 3-4 serving(s)

Number Of Ingredients 9

2 tablespoons olive oil
2 garlic cloves, minced
1/2 cup dry white wine
1 lemon, juice of
1 tomatoes, diced
sea salt, to taste
8 ounces angel hair pasta
1/4 cup fresh basil, roughly chopped
pepper, to taste

Steps:

  • Bring a large pot of salted water to boil over high heat.
  • Meanwhile, heat the olive oil up a large saute pan over medium heat. Once warm add the garlic and cook until it just begins to brown -- too long or too high and the garlic will burn.
  • Remove the pan from the heat and deglaze by pouring in the wine. Return the pan to the heat and cook for a few minutes. The wine should reduce by about half. Add in lemon juice, chopped tomato, and sea salt to taste. Stir once or twice then remove the pan from the heat again and set it aside to wait for the pasta.
  • Add the pasta to the boiling water and cook until desired tenderness, following package directions. Drain, then add the cooked pasta to the pan with the garlic & tomato mixture, along with the basil and some freshly ground pepper. Toss well, (if your pan isn't big enough, just do the tossing in a large serving bowl).
  • *Tip: 4 ounces of uncooked pasta (spaghetti, angel hair, vermicelli, fettuccine or linguine) = a 1-inch diameter bunch of dry pasta = 2 cups cooked pasta. Generally they say 2 ounces of pasta is one serving, but for larger appetites this might not be enough.

Angel Hair Pasta with Basil Tomatoes Recipes: Valuable Tips

Are you craving a delicious and healthy pasta dish? Angel hair pasta with basil tomatoes recipes are perfect for you! This dish is made with fresh ingredients that are both colorful and flavorful. The key to making the perfect angel hair pasta with basil tomato recipe is to choose the right ingredients and to cook them with care. In this article, we will provide you with valuable tips that will help you create the perfect angel hair pasta with basil tomato recipe.
Choose High-Quality Pasta
The pasta that you use will have a significant impact on the overall taste and texture of your dish. It is essential to choose high-quality pasta to ensure that your angel hair pasta is perfectly cooked and has a great texture. Look for pasta that is made with 100% durum wheat semolina as this will ensure that your pasta does not break or become mushy when cooked.
Use Fresh Tomatoes and Basil
Fresh tomatoes and basil are two of the critical ingredients in this recipe. It is essential to use fresh, ripe tomatoes to ensure that your dish is full of flavor. Look for tomatoes that are bright in color, firm, and free of blemishes. Fresh basil is also essential. It adds a bit of sweetness to the dish and provides a fresh, herbaceous flavor.
Season Your Pasta Water
When cooking your pasta, be sure to season the water with salt. Using salted water will infuse the pasta with flavor and ensure that it is not bland. Add about one tablespoon of salt for every four quarts of water. Don't forget to stir the pasta occasionally to prevent it from sticking together.
Don't Overcook Your Pasta
Angel hair pasta cooks quickly, so you don't want to overcook it. Overcooked pasta will become mushy and lose its texture. Follow the cooking time on the package, but start checking your pasta a minute or two before the suggested time. After all, every brand of pasta could have different cooking time.
Don't Overcrowd Your Pan
When cooking the diced tomatoes and garlic, be sure not to overcrowd the pan. Overcrowding will cause the tomatoes to steam rather than sauté, resulting in a mushy sauce. If necessary, cook the tomatoes in batches to ensure that they cook evenly.
Adjust the Salt and Pepper
Before serving the dish, taste the pasta sauce and adjust the salt and pepper. Salt will enhance the flavors of the dish, but too much can ruin it. Add small amounts of salt and pepper at a time until you reach the desired flavor.
Add Cheese Last
When serving the dish, it is best to add the cheese at the last moment. Adding cheese too soon will cause it to melt and coagulate, forming a clumpy texture. Sprinkle the cheese on top of the pasta at the last moment, and let it melt before serving.
Garnish with Fresh Herbs
To make your pasta look as good as it tastes, garnish it with fresh herbs like basil or parsley. Herbs add an extra pop of color to the dish and enhance the flavors of the pasta. In Conclusion Angel hair pasta with basil tomato recipes is a simple yet flavorful dish that will leave your taste buds exploding with flavor. By using high-quality ingredients, adjusting the salt and pepper, and not overcooking the pasta, you can create a perfect dish that will impress your family and friends. Follow these valuable tips, and you'll have everyone asking for seconds!
