ANGEL HAIR PASTA WITH SUN-DRIED TOMATOES & GOAT CHEESE

Angel Hair Pasta With Sun-Dried Tomatoes & Goat Cheese image

Absolutely delicious... and addictive. I've been known to eat all of mine, plus the portions set aside as leftovers. Thank God for gyms! **NOTE** Sun-dried tomato oil is the oil that comes in the jar of sun-dried tomatoes. Chicken broth can be substituted for the white wine, but in my opinion the wine works better with the other ingredients.

ANGEL HAIR PASTA WITH LEMON, GARLIC AND TOMATOES

Angel Hair Pasta With Lemon, Garlic and Tomatoes image

Served with a fresh salad, I think this is a perfect summer weekday meal. It comes together very fast if you prepare all the ingredients beforehand. (note: typo in wine amount has been corrected - 1/4 cup, not 1 1/4 cup - yowza, that'd be a lot of wine!)

Provided by Primordial

Categories     European

Time 20m

Yield 4 serving(s)

Number Of Ingredients 10

1 lb angel hair pasta
1/2 cup fresh basil, chopped
1/2 cup parmesan cheese, freshly grated
2 tablespoons extra virgin olive oil
4 -8 garlic cloves, finely minced
1/4 cup dry white wine
1/2 cup fresh lemon juice
2 1/2 cups vine-ripe tomatoes, seeded and diced medium
1 teaspoon coarse salt
fresh ground black pepper (to taste)

Steps:

  • Cook the pasta in several quarts of salted water (keep an eye on it - angel hair cooks a lot faster than other pasta and you don't want it mushy). Place it in a large serving bowl, add the basil and Parmesan cheese and toss to mix.
  • While the pasta is cooking, heat the olive oil in a large skillet and saute the garlic for a minute or so until it *just* begins to change color. Add the wine and cook until it has been reduced by about half (2-4 minutes). Stir in the lemon juice and tomatoes and remove the sauce from heat until the pasta is ready.
  • Pour lemon-tomato sauce over pasta mixture, add salt and pepper to taste and toss to mix. Serve with extra Parmesan on the side, if desired.

What is Angel Hair Pasta?

Angel hair pasta, also known as capellini, is a delicate, thin pasta that is similar in size and shape to spaghetti. It's made from durum wheat semolina, which gives it a slightly nutty flavor and a firm texture. Angel hair pasta is often used in lighter dishes, such as with seafood or vegetables, and pairs well with a variety of sauces.

What are Garlic Sun-Dried Tomatoes?

Garlic sun-dried tomatoes are a flavorful addition to any dish. Sun-dried tomatoes are made by drying ripe tomatoes in the sun or in a dehydrator until they become shriveled and dry. Once they’re dried, they become an intense burst of tomato flavor with a chewy texture. Garlic is often added to sun-dried tomatoes for an extra layer of savory flavor.

Angel Hair Pasta with Garlic Sun-Dried Tomatoes: Valuable Tips

Angel hair pasta with garlic sun-dried tomatoes is a classic Italian recipe that is decadent and delicious. This recipe is known to be simple to prepare, tastes incredible, and is perfect for a quick weeknight dinner. The combination of garlic-flavored olive oil, sun-dried tomatoes, and al dente pasta feels like a bite of heaven in your mouth. Here are some valuable tips to help you make the perfect angel hair pasta with garlic sun-dried tomatoes.
1. Pick the Right Pasta
The first and essential tip when making angel hair pasta with garlic sun-dried tomatoes is choosing the right pasta. As the name suggests, angel hair pasta is super thin and delicate, making it perfect for this recipe. Ensure that you purchase a high-quality angel hair pasta brand to enjoy a satisfying and rich flavor in every bite.
2. Use Fresh Garlic and Sun-Dried Tomatoes
The other vital tip is to use fresh garlic and sun-dried tomatoes while making this dish. Fresh garlic has a more robust and fresher flavor profile than the pre-minced garlic in jars. Sun-dried tomatoes, on the other hand, add a chewy texture and concentrated flavor to the pasta.
3. Cook the Pasta Wisely
Cooking the pasta plays a crucial role in the outcome of your dish. One of the critical tips when preparing angel hair pasta is to cook it al dente. Al dente means that the pasta has a firm texture when bitten, but is not too hard or chewy. Ensure you cook the pasta according to the instructions and taste it frequently to avoid over or undercooking.
4. Use High-Quality Olive Oil
The olive oil that you use in preparing this dish plays a significant role in the overall taste of the recipe. Ensure that you use high-quality olive oil to help bring out the flavor profiles of garlic and sun-dried tomatoes. Avoid using low-quality olive oil as it has a weaker taste profile, and goes against the classic Italian flavors.
5. Add Prosciutto or Bacon to Enhance the Flavor
To enhance the flavor of your angel hair pasta, consider adding bits of prosciutto or bacon to the recipe. This addition creates a salty, meaty flavor that goes well with this recipe. Additionally, you can also add some red pepper flakes to the dish to create some subtle heat.
6. Add Fresh Herbs to the Dish
Adding fresh herbs such as parsley, basil, and oregano to your recipe will ensure your plate has a rich, fresh flavor. These herbs also help counterbalance the rich flavor profiles of garlic and sun-dried tomatoes.
7. Use Quality Parmesan Cheese
Grate some parmesan cheese and add it to the dish to give it a creamy, cheesy flavor. When adding cheese, opt for high-quality parmesan as it adds a rich taste that stands out in the dish.
8. Avoid Overcooking the Garlic
Garlic can burn easily, creating a bitter taste and aroma that can ruin the dish. When cooking the garlic, ensure you do it slowly and avoid overcooking. In conclusion, with these valuable tips, you'll create the perfect angel hair pasta with garlic sun-dried tomatoes every time. Choose the right pasta, cook it al dente, use fresh garlic and sun-dried tomatoes, high-quality olive oil, and cheese, and be wise with your cooking to create a perfect, delicious dish. Making pasta can be undeniably convenient and effortless when done right.
