Categories     World Cuisine Recipes     European     Italian

Time 55m

Yield 4

Number Of Ingredients 13

⅓ cup all-purpose flour
¼ teaspoon fresh ground black pepper
¼ teaspoon paprika
1 pound skinless, boneless chicken breast halves, pounded thin and cut into 2-inch pieces
2 tablespoons olive oil
1 clove garlic, minced
¼ cup butter, divided
1 cup dry white wine
⅓ cup chicken broth
¼ cup fresh lemon juice
2 tablespoons capers
2 tablespoons chopped fresh parsley
1 (8 ounce) package angel hair pasta, cooked and drained

Steps:

  • Whisk together flour, black pepper, and paprika in a shallow dish. Dredge the chicken pieces in the flour mixture, coating evenly; set aside. Heat olive oil in a large skillet over medium-high heat; stir and cook the garlic until light brown, about 1 minute. Remove the garlic from the skillet and set aside.
  • Place 2 tablespoons of butter into the skillet with the olive oil. Cook the chicken pieces in the oil and butter over medium-high heat until brown, about 5 minutes per side. Remove the chicken from the pan and set aside.
  • Pour the wine into the hot skillet and bring to a boil over high heat, scraping the browned pieces from the bottom and sides of the pan. Boil the wine until it is reduced by half, about 5 minutes. Whisk in the chicken broth, reserved garlic, lemon juice and capers. Cook for 5 minutes over medium-high heat. Stir in the remaining 2 tablespoons butter and parsley. Return the chicken pieces to the skillet and continue cooking over medium heat until the sauce thickens, about 15 minutes.
  • Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well.
  • Remove the chicken pieces to a serving dish and drizzle with a few tablespoons of the sauce and capers. Place the cooked angel hair pasta into the skillet with the remaining piccata sauce and toss to coat.

Elegant and delicious. 2/22/09 After reading some reviews and problem of too much liquid I would suggest decreasing to perhaps 1 1/2 cups or use the pasta water which has the starch from the pasta that would provide a thickener. Also, be sure all of the flour was used to coat the chicken; that could also be a part of the problem Thanks for the all the input reviewers!

CHICKEN ANGEL HAIR PASTA BAKE RECIPE RECIPE - (4.2/5)

Chicken Angel Hair Pasta Bake Recipe Recipe - (4.2/5) image

Provided by á-129552

Number Of Ingredients 10

1 Pound Shredded Chicken (we prefer boneless skinless chicken breast but you can use thigh or leg quarters just make sure to remove fat and skin)
2 Cups Low Fat Low Sodium Chicken Broth
1/2 Package Angel Hair Pasta (approximately 8ounces uncooked) cooked until just soft - will finish cooking in oven
1/3 Cup Non Fat Sour Cream
1/4 Cup Skim Milk
1/4 Cup Grated Parmesan Cheese
3 Dashes Hot Sauce (Tabasco or similar)
1 Teaspoon Dried Italian Seasoning Blend (1/3 Tsp. Oregano, 1/3 Tsp. Thyme, 1/3 Tsp. Basil)
1 Teaspoon Garlic Powder
Black Pepper as desired

Steps:

  • 1. I like to boil up a big batch of chicken at the begging of the week. Shredded it up and store it and then it's ready to go for recipes that night and for a couple of nights to follow. Boiling chicken is super easy. You just toss it into a pot of water and let the pot reach boiling and continue cooking until your chicken is cooked through. This recipe is also a perfect way to use up leftover shredded chicken. 2. Get your oven ready, turning it on to 350°F. Prep your casserole dish with non-stick cooking spray. 3. Now, it's as easy as combining all of your ingredients, including your cooked and shredded chicken and your cooked and drained pasta into a large bowl. Mix together all the ingredients so everything is well coated. Pour all into your casserole dish and bake for 35 minutes or until bubbling and browned around the edges! Makes 6 servings at 4 Weight Watchers Points each.

Chicken is the star ingredient of this dish, and it is crucial to ensure that it is well-seasoned to bring out its flavor. You can season the chicken with a combination of herbs and spices, such as garlic powder, paprika, salt, and black pepper. It is also a good idea to let the chicken marinate in the seasoning for at least an hour before cooking. This will allow the flavors to penetrate the meat, resulting in a more flavorful dish.

Tip 2: Cook the Chicken Properly

Cooking the chicken for the right amount of time is crucial when making angel hair chicken recipes. Undercooked chicken can be dangerous and overcooked chicken can be tough and dry. One of the best ways to cook the chicken is by pan-frying it over medium-high heat. Make sure that the pan is hot before adding the chicken to ensure that it cooks evenly. Cook the chicken until it is golden brown on both sides and has reached an internal temperature of 165°F.

Tip 3: Use Fresh Vegetables

Using fresh vegetables is another essential tip for making delicious angel hair chicken recipes. While frozen vegetables can be convenient, they can sometimes lack the same texture and flavor as fresh vegetables. When making this dish, try to use a variety of fresh vegetables such as bell peppers, onions, and mushrooms. You can also add some green vegetables like broccoli or sugar snap peas to add some color and nutrition to the dish.
