1/2 cup blanched slivered almond
12 tablespoons unsalted butter, at room temperature
1/2 cup confectioners' sugar
1/2 teaspoon salt
1/4 teaspoon almond extract
2 cups flour
10 ounces white chocolate
2 1/3 cups flaked coconut

Steps:

  • Heat oven to 325°F.
  • Spread nuts on baking sheet and toast in the oven until golden brown, 8 to 10 minutes.
  • Cool and chop.
  • With an electric mixer set at medium low speed, beat butter, sugar, salt and almond extract until creamy.
  • On low speed, beat in flour until mixture just comes together.
  • Stir in nuts.
  • Chill until firm.
  • Roll into approximately 1-inch balls.
  • Put on ungreased baking sheets.
  • Bake until golden brown on bottom, 15 to 18 minutes.
  • Cool completely on wire racks.
  • Chop chocolate, put in a small bowl and melt in a 250°F oven.
  • Put coconut in a bowl.
  • Drop cookies, one at a time, into chocolate.
  • Coat and remove with a fork, letting excess drip off.
  • Drop the cookies into coconut.
  • Lightly press coconut onto the cookies.
  • Set on a rack to dry.

2 cups Rice Krispies
1 cup chopped pistachios or almonds
1/3 cup butter, cubed
1 package (8 ounces) pitted dates, finely chopped
1 cup sugar
1 teaspoon vanilla extract
Confectioners' sugar, optional

Steps:

  • In a large bowl, combine Rice Krispies and pistachios. In a large saucepan, combine butter, dates and sugar. Cook and stir over medium heat until mixture is combined., Remove from heat. Stir in vanilla. Pour over Rice Krispies mixture; stir to coat. When cool enough to handle, press into 1-1/4-in. balls. Cool. If desired, roll in confectioner's sugar. Store in an airtight container at room temperature.

Another recipe from my Aunt's recipe clippings. This one also came from the Sept 19, 1969 Chicago Tribune originally. The clipping is crinkled with old yellow tape holding it together to make sure the recipes stayed intact. :) These are not like the typical angel cookies at all - they are little balls of dates, coconut, and Rice Krispies rolled in powdered. Don't use the prechopped dates as they aren't sticky enough - buy the whole pitted dates and chop them yourself. Also be sure to use the canned coconut..the kind that comes in bags is too dry and you will have a hard time getting the cookies to roll up otherwise.

1 (8 ounce) package dates, pitted, hand chopped
1 cup granulated sugar

4 cups flaked coconut
1/4 cup light corn syrup
1 (12 ounce) package semi-sweet chocolate chips
1/4 cup shortening
26 whole almonds

Steps:

  • Line two cookie sheets or large flat surface with waxed paper and place large cooling rack on top. Place coconut in large bowl. Heat corn syrup, one minute in microwave, until syrup boils. Pour immediately over coconut and stir until well mixed.
  • Using a tablespoon measure, shape coconut into 26 balls with hands and place on wire racks. Let rest 10 minutes, then re-roll each ball to keep loose ends from sticking out.
  • Melt shortening and chocolate together in large glass bowl in microwave, or in saucepan on stovetop, stirring once or twice. Working quickly, spoon 1 tablespoon of chocolate over each ball. Lightly press an almond on top of each ball. Let balls stand until set.

1 cup sugar
2 tablespoons milk
1 teaspoon vanilla
1/2 teaspoon almond extract
1/4 teaspoon salt
2 1/2 cups Gold Medal™ all-purpose flour
2 tablespoons Betty Crocker™ yellow sugar
2 tablespoons Betty Crocker™ blue sugar
96 small pretzel twists
2 tablespoons sliced almonds
1 tube (4.25 oz) Betty Crocker™ yellow decorating icing
1 tube (4.25 oz) Betty Crocker™ pink decorating icing

Steps:

  • In large bowl, beat butter with electric mixer on medium-high speed until light and fluffy. Add sugar; beat until creamy, scraping bowl frequently. Stir in milk, vanilla, almond extract and salt. Stir in flour until well mixed.
  • Measure 1/2 cup of dough into resealable food-storage plastic bag; refrigerate. Divide remaining dough in half; roll each into a 6-inch log. Roll 1 log in yellow sugar; roll other log in blue sugar. Wrap logs separately in plastic wrap or waxed paper. Chill until firm, at least 2 hours.
  • Heat oven to 350°F. For each cookie, place 2 pretzels with flat sides touching on ungreased large cookie sheets, 3 inches apart. Cut dough into 48 (1/4-inch) slices. (If dough cracks, allow to sit at room temperature a few minutes.) To make angel body, fold in opposite sides at top of each slice to make triangular-shaped body; place each slice on top of 2 pretzels, so double rounds of pretzels form angel wings at each side. Press lightly into pretzels. Using reserved dough from plastic bag, roll 1/2 teaspoon dough into ball; place on top for head of each angel. Press 2 sliced almonds into dough to make song book. Repeat to make 48 cookies.
  • Bake 11 to 14 minutes or until edges are firm and just begin to brown. Cool 2 to 3 minutes. Remove from cookie sheet to cooling rack. Cool completely, about 15 minutes.
  • Pipe yellow icing on cooled cookies to make eyes and hair. Use pink decorating icing to draw mouths. Let stand until frosting is set.
