SKINNY PIMENTO CHEESE

Skinny Pimento Cheese image

This lightened-up version of a classic Southern spread is super yummy. We loved the creamy combination of the light mayo and Greek yogurt. The Greek yogurt adds a very slight tang. It's simple to make and after tasting it you'll never buy store-bought spread again. Great on a sandwich, on top of crackers or dipped into veggies.

LOW FAT PIMENTO CHEESE SPREAD

Low Fat Pimento Cheese Spread image

Being from So California originally I had never heard of pimento cheese. Once I tasted it I was hooked. But....way too many calories for me to have it as anything more than occasional treat. So, I went to work trying to make it as low fat as I could and still have that great flavor. I just made this and it's resting comfortably in the fridge. Might have to "tweak" it a bit, but here goes! Cooking time is chilling time.

Tips for Making Low-Fat Pimento Cheese Recipes

Pimento cheese is a quintessential Southern dish that has been enjoyed for decades. It is versatile enough to be used as a dip, sandwich spread or even as a topping for burgers. However, the traditional recipe is not the healthiest, as it contains a lot of mayonnaise and cheese. Luckily, there are several ways to make low-fat pimento cheese recipes that are just as tasty.
1. Use Greek Yogurt Instead of Mayo
One of the easiest ways to make a low-fat pimento cheese recipe is to replace some or all of the mayonnaise with Greek yogurt. Greek yogurt is a great source of protein and calcium and has a creamy texture that makes it a perfect substitute for mayo. To make this substitution, use an equal amount of Greek yogurt as the amount of mayonnaise called for in the recipe.
2. Use Low-Fat Cheese
Another way to reduce the fat in pimento cheese is to use low-fat cheese. Choose a low-fat cheddar cheese that is still flavorful but contains less fat than regular cheddar. You can also use reduced-fat cream cheese to add creaminess and reduce the overall fat content of the recipe.
3. Add Vegetables
Adding vegetables to your pimento cheese recipe is a great way to add more nutrition and flavor while reducing the amount of cheese and mayonnaise needed. Try adding finely chopped celery, red or green bell peppers, or even carrots to the mix. These vegetables will add a crunch and a pop of color to your dish.
4. Use Fresh Pimentos
Traditionally, pimiento cheese recipes call for canned pimentos. However, using fresh pimentos can add a lot of flavor without adding extra salt, sugar, or preservatives that may be found in canned versions. Roast the fresh pimentos beforehand to enhance their flavor and make them easier to peel.
5. Add Fresh Herbs and Spices
Herbs and spices can add a lot of flavor to a low-fat pimento cheese recipe. Experiment with adding fresh basil, cilantro, oregano, or thyme to the mix. You can also add some spice by using cayenne pepper or smoked paprika. Don't be afraid to try different seasoning combinations to find the perfect flavor for your dish.
6. Serve with Fresh Vegetables
Instead of serving pimento cheese with crackers or chips, try serving it with fresh vegetables like carrots, celery, or cucumber. This will add nutrition to your dish while reducing the overall calories and fat content.
7. Make Ahead of Time
Pimento cheese can be made ahead of time and stored in the refrigerator for up to a week. This makes it a great dish to prepare in advance for a party or a quick snack. Simply store the cheese in an airtight container and take it out when you're ready to serve.
8. Use in Different Ways
Pimento cheese is incredibly versatile. Besides using it as a dip or spread, you can also use it as a topping for grilled chicken or fish. You can also stuff it into mushrooms or serve it as a filling for sandwiches. The possibilities are endless!
Final Thoughts
Making low-fat pimento cheese recipes doesn't mean sacrificing flavor. By making a few simple substitutions and adding fresh vegetables and spices, you can create a dish that is just as tasty as the traditional recipe while being healthier. Don't be afraid to experiment with different ingredients to find your perfect combination!
