Steps:
- In a small skillet coated with cooking spray, saute onion until tender; set aside. , Place bread slices on a baking sheet; spritz with butter-flavored cooking spray. Broil 4 in. from the heat until golden brown, 2-3 minutes., Spread goat cheese over 2 untoasted sides of bread slices. Top with apple slices and reserved onion; sprinkle with cheddar cheese. Broil until cheese is melted, 2-3 minutes longer. Top with remaining slices.

Steps:
- Combine the first 5 ingredients. Spread mixture evenly on one side of 4 slices of bread to within 1/4 inch of the edges. Top with the remaining bread slices.
- Spread the outside of each sandwich with softened butter.
- Place the sandwiches on a hot griddle; cook over medium heat until bread is golden, turning once.
ULTIMATE GRILLED CHEESE
Steps:
- Preheat the oven to 400 degrees. Arrange the bacon on a baking rack set over a sheet pan in a single layer and roast for 20 to 30 minutes, until nicely browned. Drain on a plate lined with paper towels and cut in 1-inch pieces.
- Meanwhile, combine the mayonnaise, mustard, Parmesan, salt, and pepper in a small bowl. Lay 12 slices of bread on a board and spread each one lightly with butter. Flip the slices and spread each one generously with the mayonnaise mixture. Don't neglect the corners!
- Grate the cheeses in a food processor fitted with the largest grating disk and combine. Distribute the bacon evenly on half the slices of bread. Pile 1/3 cup grated cheese evenly on top of the bacon and top with the remaining bread slices, sauce side down.
- Meanwhile, heat an electric panini press. When the press is hot, cook the sandwiches for 3 to 5 minutes in batches until the bread is toasted and the cheese is melted. Allow to cool for 2 minutes. Cut in half and serve warm.
GRILLED CHEESE DELUXE
I love tomato and mayonnaise on a sandwich, and I also love grilled cheese, which makes this a perfect sandwich!

Steps:
- Add butter to the outsides of the bread.
- Lay down one slice in stovetop pan, add the 2 slices of cheese, then lay down other slice of bread on top of cheese.
- Cook in the pan till it is a perfect grilled cheese -- about 7-9 minutes.
- Put grilled cheese on plate and immediately pull the two pieces of bread apart.
- Lay the tomato down on the cheesiest side.
- Add 3-4 tbs (big heaping spoons) of mayonnaise to other side and smooth out until you have a very thick layer of mayonnaise.
- You can now add the onion (*which is good but optional*).
- You can also add the lettuce (*optional; I have never added lettuce before, but I am sure it is good, but I would just add mayonnaise and tomato first [and onion if you want]*).
- I add a little salt & pepper to the tomatoes.
- Now lay the mayonnaise cheese bread down on top of the tomatoes for an extremely delicious sandwich!
