AMISH HAM SPREAD - MY WAY
I make this delicious spread for hubby to take to work. He loves it for sandwiches or on crackers, for a quick snack. It's so easy to make. This is my version. This recipe is for 3 pounds of bologna...you can easily halve the recipe. Hope you enjoy! My photo's

Steps:
- 1. I process bologna in food processor till pretty fine.
- 2. Place in large bowl; adding all other ingredients. Stirring till well blended. I don't measure mayo, I go by the thickness we prefer.
- 3. Refrigerate overnight, it is so much better after the flavors have time to mingle. Serve on bread or even crackers. Enjoy!

When it comes to ham salad this is top of the list for me....I love this version and ever since I tried some at a local Amish store I had to learn how to make it. It is a simple recipe and can be seasoned up if you want. I have altered a recipe I found in an Amish newspaper and my main addition is the horsey sauce, which I love....

Steps:
- 1. Shredding the baby swiss cheese, chop the ham and rinse/drain the sauerkraut really well. I usually squeeze the kraut with my hands to get the most liquid out as possible.
- 2. Add all your ingredients in a bowl and stir together till well combined.
- 3. This is the horsey sauce that I use. It most certainly has a bite to it.

HAM SPREAD
This recipe uses leftover ham with onion and dill pickle relish for a delicious sandwich spread or dip for crackers. You can substitute 10 green olives with pimentos for the dill pickle relish.

- Cut up ham to put into food processor, grind on pulse until very coarse. Add the onion and dill pickle relish close to the end of this stage. Put into mixing bowl and add mustard and creamy salad dressing; mix well.
