AMERICAN TURKEY TURNOVERS

American Turkey Turnovers image

This is a recipe that is frozen for future use, one of many I made in preperation for the birth of my daughter. I got it from "More Make Your Own Groceries". This would probably be a good use for leftover Thanksgiving turkey While the original instructions say these should take 50 to 60 minutes to cook, I have made this in two different ovens and they took 10 to 15 minutes to cook in those. I used a slightly different method to create the circles for the pastry than recommended in the original recipe, and have included both for you to choose from.

Time 1h25m

Yield 12 turkey turnovers

Number Of Ingredients 13

1/2 cup onion (finely chopped)
1/2 cup celery (finely chopped)
4 tablespoons butter
1 (10 1/2 ounce) can condensed cream of chicken soup
1/2 teaspoon salt
1/4 teaspoon pepper
3 -5 dashes poultry seasoning
3 cups cooked turkey or 3 cups chicken (very finely chopped)
2 cups white flour or 2 cups whole wheat pastry flour
1 tablespoon curry powder (optional)
1 teaspoon salt
2/3 cup vegetable shortening
1/3 cup ice water

Steps:

  • Saute onion and celery in butter.
  • Stir in remaining ingredients for filling.
  • Sift together flour, curry powder (if using), and salt.
  • Using either a butter knife, or a pastry blender cut in shortening until the mixture looks like a coarse meal.
  • Sprinkle in 1/4 cup of the ice water, reserving the rest.
  • Toss with a fork to mix.
  • Quickly press the dough into a ball and set aside.
  • If there is any flour left in the bowl, use reserved water to dampen and then press into the rest of the dough.
  • There are two ways to do this next step, the second being the one I came up with myself.
  • Choose the one that seems better to you.
  • On a floured surface roll dough 1/8 in thick, and then cut into twelve 6 inch rounds.
  • Or make twelve balls of dough and roll into 6 inch rounds.
  • Spoon about 2 heaping tablespoons of the filling onto half of each of the rounds.
  • Brush the margin of each round with a little warm water.
  • Fold the empty half over.
  • Use a fork to seal the edges, and then prick the top here and there.
  • Use a spatula to carefully transfer the finished turnovers to a cookie sheet.
  • Cover loosely with wax paper and freeze overnight.
  • Package the turnovers in foil or freezer bags and label as necessary.
  • When ready to cook preheat over to 425.
  • Place desired number of turnovers on a cookie sheet and cook for as little as 15 minutes (in my experience) or as much as 60 minutes (according to original instructions).
  • The edges should be golden when finished.

Time 30m

Yield 8 Turnovers, 8 serving(s)

Number Of Ingredients 14

1 1/2 cups whole cranberry sauce
1 pear, peeled and diced fine
1 small shallot, diced fine
1/4 cup apple cider (you could use apple juice)
1/2 teaspoon allspice
1/8 teaspoon ground ginger
2 (8 ounce) cans Pillsbury Refrigerated Crescent Dinner Rolls
2 cups fine diced turkey
2 scallions, fine chopped (whites and greens)
1 shallot, diced fine
1 (4 ounce) container spreadable herb cheese spread
1/4 cup pecans, fine chopped (one of those small pre-chopped bags)
1/2 teaspoon butter
1 egg, beaten

Steps:

  • Sauce -- Mix everything; cranberry, pear, shallot, seasoning and cider in a small sauce pan and just simmer on low. Will take around 20 minutes for the pear to soften. Just stir now and then, nothing more. Just let it hang out on low heat. This is your dip.
  • Turkey -- In a small saute pan, add the butter and bring to medium high heat. Add the shallot and cook 1 minute, then add the scallions, nuts and turkey and cook another 2 minutes until heated through. Remove and let cool slightly before you fill your turnovers.
  • Turnovers -- You can use a baking sheet sprayed with non-stick spray, but I prefer to use parchment paper for no clean up. Heat the oven to 375.
  • Crescent Rolls -- Roll out both cans of crescent rolls on the parchment paper or on the baking sheet. I like to use my rolling pin and roll, just until the seams are pressed together and it resembles one large sheet. You will have two flat sheets. Cut each sheet with a pizza cutter or a knife; the top left corner to the bottom right corner corner and vice versa to make 4 large triangles per sheet. Two (2) cans will give you 8 triangles.
  • Filling -- Spread the Boursin or herbed cheese on each triangle in the center and then place a couple of tablespoons of the turkey mix on top of that and bring the corners up to the center and press together. I just crimp together in the middle and sort of make like a small package. No exact method.
  • Brush with the beaten egg and cook 15-18 minutes on the baking sheet until golden brown.
  • Serve -- Once golden brown, just serve with the warm cranberry sauce for dipping and a nice bowl of soup for an easy midweek dinner. ENJOY!

The Preparation Process

The following is a step-by-step guide on how to prepare American Turkey Turnovers:

Thanksgiving is just around the corner and what better way to celebrate it than with a delicious American turkey turnover recipe. This recipe has been passed down from generations and brings family and friends together over a hearty meal. The flaky and buttery crust filled with juicy and tender turkey meat creates a perfect balance of flavors. In this article, we will be sharing valuable tips to help you make the perfect American turkey turnovers.
Tip 1: Pick the Right Turkey Meat
The key ingredient in a turkey turnover is, of course, the turkey meat. When preparing the turkey, it is important to select the right cut of meat. The most commonly used cut for turnovers is turkey tenderloins or turkey breast. The tenderloins are leaner and cook faster than the turkey breast. However, the turkey breast meat is juicier and more flavorful. Choosing the right cut of meat depends on your preference, but both options can be used.
Tip 2: Seasoning the Turkey
Seasoning the turkey meat is crucial to ensure that it is flavorful and juicy. Most recipes call for seasoning the turkey with salt and pepper, but you can add other herbs and spices to enhance the taste. A combination of garlic powder, thyme, and rosemary is common when preparing turkey meat. You can also add a bit of paprika or chili powder to give the turkey meat some heat.
Tip 3: Preparing the Crust
The crust is what makes the turkey turnover flaky and buttery. When preparing your crust, it is important to use chilled butter and cold water. This helps keep the butter solid, which creates layers in the crust as it bakes. You can also add a bit of sugar to the crust to give it a slightly sweet taste. The dough should be handled as little as possible to prevent overworking it, which can result in a tough crust.
Tip 4: Rolling Out the Dough
When rolling out the dough for the crust, it is important to use a lightly floured surface and rolling pin. You should roll out the dough evenly and to the desired thickness, usually around 1/4 inch. If the dough starts to stick to the surface or rolling pin, dust it with a bit more flour. Once the dough is rolled out, use a pastry cutter or sharp knife to cut it into circles or squares, depending on your preference.
Tip 5: Filling the Turnovers
When filling the turnovers, it is important not to overstuff them. This can cause the filling to spill out of the crust and create a mess. You should leave enough space around the edges to seal the turnovers properly. Use a spoon or fork to place the turkey meat and any other fillings, such as vegetables, cheese, or gravy.
Tip 6: Sealing the Turnovers
The key to sealing the turnovers is to use a fork and press down around the edges. You can also use egg wash to help seal the edges and give the turnovers a shiny appearance. To create a design on top of the turnovers, use a sharp knife to make a few cuts on the top.
Tip 7: Baking the Turnovers
When baking the turnovers, it is important to preheat the oven to the desired temperature. The turnovers should be placed on a baking sheet lined with parchment paper or a silicone mat. Brush the tops of the turnovers with egg wash and bake until they are golden brown and cooked through. The baking time will vary depending on the size of the turnovers.
Tip 8: Serving the Turnovers
Once the turnovers are baked, let them cool for a few minutes before serving. These turnovers can be served as an appetizer, side dish, or main course. You can also add a dipping sauce, such as cranberry sauce or gravy, to enhance the flavor.

Conclusion

In conclusion, making the perfect American turkey turnovers requires attention to detail and following the right steps. From selecting the right cut of meat to baking the turnovers, each step is crucial in creating a delicious meal. These valuable tips will help you make the perfect American turkey turnovers that your family and friends will love.
