Number Of Ingredients 15

125 g butter
225 g dark brown sugar
2 eggs
142 ml sour cream
175 g plain flour
5 ml baking powder
2 1/2 ml bicarbonate of soda
50 g cadbury bournville cocoa
40 ml cadbury bournville cocoa
125 g butter
150 g icing sugar, sieved
vanilla essence
200 g bar of cadbury bournville chocolate
40 ml cadbury bournville cocoa
142 ml double cream

Steps:

  • * Two 20 cm (8-inch), shallow cake tins, greased and base-lined.
  • For the cake, cream together the butter and sugar until the mixture is light in colour anti texture. Gradually beat in the eggs, and then the soured cream (the mixture looks curdled at this stage). Sieve together the dry ingredients and fold them into the mixture. Divide the mixture equally between the tins. Bake at Gas Mark 5/190ºC:/375ºF for 30 - 35 minutes, until cooked. Turn out on to a wire tray to cool.
  • Make the filling by mixing the cocoa with 40 ml (2 Tbs) of boiling water to a smooth paste, allow to cool. Beat together the butter, sieved icing sugar and essence, until light and fluffy. Beat in the cocoa. Slice the cake in half and then sandwich the halves together with the filling.
  • For the frosting, melt the chocolate carefully. Make the cocoa into a paste with water as before and mix with the chocolate. Slowly whisk the cream into the chocolate until smooth and thickened. Spread the frosting evenly over the cake with a palette knife.
  • Serve in slices, with whipped cream or ice-cream. If possible warm each slice in a microwave or oven, if you have made the cake in advance; it can also be served cold but is definitely more interesting hot, with the contrast of ice cream.

Valuable Tips for Making the Perfect American Fudge Cake

American fudge cake, also known as chocolate fudge cake, is a rich and decadent cake that is perfect for any occasion. Whether you are making it for a special occasion or just as a treat for yourself, there are a few tips that you can follow to ensure that your cake comes out perfectly every time. Here are some of the valuable tips that you need to consider when making American fudge cake recipes.
1. Choose the Right Chocolate
Choosing the right type of chocolate is critical when it comes to making American fudge cake. It is recommended that you use high-quality dark chocolate with a high percentage of cocoa solids as it creates a richer and more intense chocolate flavor. Avoid using milk chocolate as it has a lower percentage of cocoa solids and can result in a cake that is too sweet and lacks depth of flavor.
2. Use Room Temperature Ingredients
It is essential to use room temperature ingredients when making American fudge cake. This includes the eggs, milk, butter, and any other dairy products. Room temperature ingredients will blend together more easily, resulting in a smoother and more even texture. It's best to take the ingredients out of the fridge an hour before you begin baking to allow them to come to room temperature.
3. Use a Good Quality Cocoa Powder
Using a good quality cocoa powder will help to enhance the chocolate flavor of your American fudge cake. It is recommended that you use a high-quality Dutch-processed cocoa powder which has been alkalized for a smoother and less bitter taste. However, if you prefer a more traditional cocoa taste, you can use natural unsweetened cocoa powder instead.
4. Sift Dry Ingredients
To ensure that your dry ingredients are well incorporated, it's essential to sift them together before adding them to your batter. Sifting will remove any lumps and aerate the flour, making it easier to blend into the other ingredients. This will help to create a lighter and fluffier cake.
5. Don't Overmix Your Batter
Overmixing your batter can result in a dense and tough cake. You want to mix the batter until all of the ingredients are just combined. Do not overmix as this will cause too much gluten to develop in the flour, resulting in a cake that is too heavy and dense.
6. Use the Right Baking Pan
Choosing the right baking pan is essential when making American fudge cake. A 9-inch round cake pan is the most commonly used for this recipe. The pan should be greased and lined with parchment paper to ensure that the cake comes out easily without sticking to the pan.
7. Bake Your Cake in the Middle of the Oven
Baking your cake in the middle of the oven will ensure that it cooks evenly. Placing the cake on the bottom of the oven can cause it to cook unevenly and result in a dry or burnt cake. Make sure to preheat your oven to the correct temperature before adding your cake batter.
8. Use a Toothpick to Test your Cake
To determine if your cake is fully baked, insert a toothpick or skewer into the center of the cake. If it comes out clean with no batter or crumbs stuck to it, the cake is ready. If it comes out with batter or crumbs, continue baking for a few more minutes and test it again.
9. Let Your Cake Cool Before Frosting
It is important to allow your cake to cool completely before frosting it. This will prevent the frosting from melting and sliding off the cake. After removing the cake from the oven, let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
10. Store Your Cake Properly
To keep your American fudge cake fresh and moist, store it properly. It is recommended to wrap your cake in plastic wrap or store it in an airtight container and keep it at room temperature. This will prevent it from drying out or becoming stale.

Conclusion

By following these valuable tips, you can make the perfect American fudge cake every time. Remember to choose high-quality ingredients, sift your dry ingredients, use the right baking pan, and avoid overmixing. By doing so, you can ensure that your cake is moist, rich, and chocolatey. Enjoy!
