1 tablespoon butter
3/4 cup pecans, chopped
1 cup mayonnaise
3 tablespoons fresh tarragon, chopped
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
4 cups cooked chicken breasts, chopped
1 medium Granny Smith apple, diced
1 cup celery, diced
4 tablespoons red onion, finely chopped

Steps:

  • In a small skillet, melt butter over medium-low heat. Add pecans. Cook stirring constantly for 6 to 8 minutes or until fragrant and toasted.
  • Whisk together mayonnaise, tarragon, lemon juice, and lemon zest in a large bowl. Stir in chicken, apples celery, and onion until blended. Add salt and freshly ground pepper to taste.
  • Cover and chill 2 to 24 hours. Stir in 1/2 cup toasted pecans just before serving. Sprinkle with remaining pecans.

1 ½ cups grilled skinless, boneless chicken thighs, chopped
½ red apple - peeled, cored, and diced
½ cup halved green grapes
⅓ cup toasted chopped pecans
¼ cup diced red onion
¼ cup diced celery
¼ cup mayonnaise
¼ cup low-fat plain Greek yogurt
2 tablespoons chopped fresh tarragon
1 teaspoon Dijon mustard
1 lime, zested and juiced
salt and freshly ground black pepper to taste

Steps:

  • Combine chicken, apple, grapes, pecans, red onion, and celery in a medium bowl.
  • Whisk mayonnaise, yogurt, tarragon, Dijon mustard, and lime zest and juice together in a small bowl. Stir dressing into the chicken mixture. Season with salt and pepper.

1/2 cup mayonnaise
2 teaspoons sugar
2 teaspoons minced fresh tarragon or 1 teaspoon dried tarragon
1/4 teaspoon salt

1 cup fresh shelled peas or frozen peas, thawed

1 tablespoon garlic salt
1/2 cup mayonnaise
1/2 cup milk
1/2 cup fresh lemon juice
2 tablespoons dijon-style mustard
2 tablespoons dried tarragon leaves, crushed
1 tsp. freshly ground pepper
1/2 lb California seedless grapes
1 cup (4 oz.) slivered almonds, toasted
1/2 cup (1 oz.) green onions, minced
1/2 teaspoon parsley, minced
Lettuce leaves

Steps:

  • Sprinkle pulled chicken meat with garlic salt. Mix mayonnaise and milk. Add lemon juice, mustard, tarragon and pepper; mix well. Toss chicken, grapes, almonds and green onions in large bowl. DRESSING:
1/4 cup finely chopped onion
1/4 cup Dijon mustard

I've been looking for the lightest and tastiest chicken salad recipe, but had no luck. So I've decided to make my own.

Number Of Ingredients 10

3 cups cooked chicken breasts (seasoned with salt, pepper and garlic powder)
1 1/2 cups Miracle Whip light
1/2 cup finely chopped fresh celery
1 1/2 cups chopped fresh seedless grapes
1 tablespoon chopped fresh green onion
1 teaspoon chopped fresh cilantro
1 tablespoon chopped fresh tarragon leaves
1 dash red pepper flakes
salt and pepper
1 teaspoon lime juice

Steps:

  • Cook the chicken by pan searing with a tsp of olive oil.
  • Let the chicken cool down, then shred the chicken with your hands.
  • Chop and mix all the fresh ingredients.
  • Mix the chopped ingredients, the chicken and the Miracle Whip.
  • Serve on grilled French bread with tomato and lettuce as a sandwich or on a croissant. Enjoy!
