This is a healthy yet oh so delicious version of a traditional Swedish cake recipe. Don't be thrown by the vinegar--it's the secret ingredient!

3 cups flour
1 cup Splenda granular, sugar substitute
2 teaspoons baking soda
1 teaspoon salt
6 tablespoons baking cocoa
1/4 cup oil
1/2 cup unsweetened applesauce
2 cups cold water
2 tablespoons white vinegar
1 tablespoon vanilla

Steps:

  • Mix dry ingredients together in large bowl.
  • Mix wet ingredients together in separate bowl.
  • Add wet to dry a little at a time, stirring as you add.
  • Pour batter into a very well greased bundt cake pan (this is a sticky cake), bake at 350 degrees F for 35-40 minute.
  • Serve w/ fat free cool whip or any other frosting or drizzle you choose.

This is our family's favourite chocolate cake. It is a moist cake that keeps well. Ice/frost with your favourite chocolate icing or frosting.

4 ounces butter
2 tablespoons golden syrup
1 1/2 cups milk
1 teaspoon baking soda
2 cups flour (large)
2 teaspoons baking powder
2 tablespoons cocoa
2 cups sugar (small)
2 eggs
2 tablespoons vinegar

Steps:

  • Melt butter and golden syrup together.
  • Warm milk and dissolve the baking soda in it.
  • Sift together the flour, baking powder and cocoa into large bowl of mixer.
  • Stir through the sugar.
  • Add eggs, butter mixture and milk mixture.
  • Beat on medium speed until combined.
  • Lastly add vinegar and beat well for 2 minutes.
  • Pour into a 9" tin which has been greased and bottom lined with baking paper.
  • Bake at 350F for 45 minutes or until cake springs back after touching with finger.
  • Cool in tin for 10 minutes before turning onto a rack to cool completely.
  • Ice/frost with your favourite chocolate icing/frosting.

Steps:

  • Cake mix.
  • in a large mixing bowl cream butter and sugar, adding eggs one at a time and mixing well after each addition.
  • beat in vanilla extract.
  • whisk cocoa and boiling water until smooth.
  • in seperate bowl combine flour, baking soda, baking powder, and salt.
  • add dry ingredients and cocoa mixture alternately and beat until smooth.
  • pour batter into 3 greased and floured 9-in. round baking pans. bake at 350 for 25-30 minute until a toothpick comes out clean. cool for 10 minute remove from pans to wire racks.
  • filling.
  • in a mixing bowl, beat cream powderd sugar and vanilla on high speed until soft peaks form.
  • chill until firm.
  • frosting.
  • in a sauce pan, melt chips and butter over medium heat; stir in cream.
  • remove from heat; stir in powderd sugar.
  • chill for at least 1 hour or until completely cooled.
  • beat on high to achieve fluffy, spreadable consistancy.
  • to put it all together, spread half the filling over one cake layer; top with second layer and remaining filling.
  • top with third layer; frost top and sides of cake.
  • chill for 2 hours before cutting.

250 g butter
1/3 cup cocoa powder
1 teaspoon baking soda
3 cups self raising flour
4 eggs, lightly beaten
90 g butter
1/3 cup water
1/2 cup caster sugar
1 1/2 cups confectioners' sugar

  • Grease and line a deep 27X33cm baking dish.
