AMAZING DEVILED EGGS

Amazing Deviled Eggs image

I made this recipe up myself and have perfected it over the years. I've taken these to church potlucks and have beaten out sweet grandmas with the hushed compliments I've received. They always go fast! It's the addition of the sour cream that sets them apart. (Also, I bought an egg cooker, such a great investment.)

Time 35m

Number Of Ingredients 9

1 carton small eggs (12 eggs)
1/2 c mayonnaise
1 tsp yellow mustard (gives the right amount of tang)
4 Tbsp mango chutney (cut up any chunks)
1 Tbsp worcestershire sauce
3 dash(es) tabasco sauce
1/2 tsp onion powder
1 tsp curry powder
1 pinch paprika on each egg

Steps:

  • 1. Put all eggs in soup pot, cover with cold water and bring to a boil. Boil for 10 minutes. When done, drain hot water and fill pan with cold water to cook eggs.
  • 2. One at a time, peel the hardboiled eggs and set aside. Note - Peeling the eggs under cold water helps make the peeling easier.
  • 3. Slice each egg in half lengthwise. Once all are sliced, carefully pull out the cooked yolk and add to a large bowl. Set the remaining white egg halves on a beautiful deviled egg platter.
  • 4. Mash the cooked egg yolks with a fork into a small crumble. Add salt and pepper to taste.
  • 5. Add remaining ingredients, except paprika, and mix together. Put bowl of mixture in refridgerator for at least an hour to harden up the mixture so it is easier to fill egg halves.
  • 6. Using a teaspoon, fill each egg halve until well mounded. Sprinkle with paprika for color and serve.

Deviled eggs are a classic appetizer that can be enjoyed at any time. They are a popular item to bring to potlucks, picnics, and parties. Moreover, they are incredibly easy to make, and there is a wide range of deviled egg recipes to experiment with. However, to make amazing deviled eggs, there are a few things to keep in mind. In this article, we will provide some valuable tips to follow when making the perfect deviled eggs. Tip 1: Choose the Right Type of Egg The first step in making amazing deviled eggs is to choose the right type of egg. The type of egg to use is crucial, as it can affect the taste and texture of the deviled egg. Ideally, you want to use large, fresh eggs to make your deviled eggs. Fresh eggs are easier to peel and will have better flavor and texture. Tip 2: Boil the Eggs Properly The next step is to boil the eggs correctly. Overcooking or undercooking the eggs can result in poor-tasting deviled eggs. To boil the eggs, place them in a pot of cold water and bring them to a boil. Once the water reaches boiling, turn off the heat and cover the pot with a lid. Let the eggs sit in the hot water for around 10 minutes for medium-sized eggs, 12 minutes for large eggs, and 15 minutes for extra-large eggs. Tip 3: Properly Cool the Eggs After boiling, remove the eggs from the hot water and quickly cool them under cold running water or place them in an ice bath. Rapid cooling will prevent the eggs from overcooking and will make them easier to peel. Tip 4: Make a Perfect Boiled Egg The key to making amazing deviled eggs is to make a perfect boiled egg. A perfect boiled egg should have a fully cooked yolk and a tender, creamy white. To achieve this, avoid overcooking the eggs, as it can cause the yolk to turn green and rubbery. Similarly, undercooked eggs will have a runny yolk and an undercooked white. Tip 5: How to Peel the Eggs Peeling hard-boiled eggs can be tricky. To make the process easier, peel the eggs under running water, as the water will help to remove the shell fragments. Gently crack the egg on a hard surface, then start peeling from the wider end of the egg. Remove the shell in small pieces to avoid damaging the egg white. Tip 6: Use a Sharp Knife to Cut the Eggs To ensure that your deviled eggs look neat and tidy, use a sharp knife to cut the eggs in half. A dull knife can cause the whites to tear, making it challenging to fill the egg halves evenly. Tip 7: Remove the Yolk Carefully Remove the yolks from the whites with care to avoid tearing the egg whites. A small spoon or a special egg yolk remover tool can be useful. The yolk can be transferred to a bowl or a food processor. Tip 8: Cream the Yolks Smoothly To ensure that your yolks are smooth and creamy, use a food processor to blend them with the other ingredients. A food processor will produce a fine texture that makes for the perfect deviled egg filling. Tip 9: Mix the Ingredients Correctly To make sure that your deviled egg filling tastes amazing, you must mix the ingredients correctly. The filling should have a balance of flavors between sweet, salty, sour, and spicy. Be careful not to overdo one ingredient, as it can overpower the other flavors. Tip 10: Add Cheese to the Filling For an added dimension of flavor, consider adding cheese to the filling. Cream cheese, cheddar cheese, or goat cheese can be great options. Tip 11: Add Some Crunch To add some texture to your deviled eggs, you can add some crunch. Chopped celery, diced pickles, or crushed potato chips can provide a satisfying crunch. Tip 12: Garnish with Fresh Herbs Adding fresh herbs to your deviled eggs can provide a pop of color and flavor. Chopped chives, parsley or dill can be great options. Conclusion Making amazing deviled eggs is easy if you follow some basic tips. Choose the right type of egg, boil them properly, cool them under running water, peel the eggs under running water, use a sharp knife to cut the eggs, remove the yolk carefully, blend the yolks smoothly, mix the ingredients correctly, add cheese to the filling, add some crunch, and garnish with fresh herbs. With these simple tips, your deviled eggs are sure to be a hit at your next gathering.
