1 (6 ounce) package dry bread stuffing mix
1 (12 ounce) package jumbo pasta shells
1 (10.75 ounce) can condensed cream of celery soup
1 (10.75 ounce) can condensed cream of chicken soup
2 (14 ounce) cans chicken broth
1 pinch salt and pepper to taste
1 pinch garlic powder
1 whole cooked chicken, boned and shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare the stuffing according to package directions.

2 tablespoons olive oil
FILLING:
1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1-1/2 teaspoons Italian seasoning
1 teaspoon salt, divided
1/2 teaspoon pepper, divided
1 tablespoon olive oil
2 tablespoons butter
1/3 cup seasoned bread crumbs
3 cups part-skim ricotta cheese
1 cup shredded part-skim mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup 2% milk
1/4 cup chopped fresh Italian parsley
ASSEMBLY:
4 cups meatless pasta sauce
1/4 cup grated Parmesan cheese
8 ounces fresh mozzarella cheese, thinly sliced and halved

  • Preheat oven to 375°. Cook shells according to package directions for al dente; drain. This is my idea of comfort food! Not very figure-friendly but the taste is so worth it :) I usually avoid using "cream of" anything or instant stuffing, but I make an exception for this recipe. I use boneless chicken breasts, but it's a great way to use up any leftover chicken too. Steps 1-4 can be done ahead of time (and freezes well). This makes a large batch so it's good for feeding a crowd. I like serving this with a side of fresh peas and crusty bread to soak up the sauce.

1 lb cooked chicken, shredded
1 (6 ounce) envelope of stove top chicken prepared stuffing, cooked according to directions
2 (11 ounce) cans Campbell's Cream of Chicken Soup
1 (11 ounce) can chicken broth
1/2 cup mayonnaise
32 large pasta shells
salt

  • Prior to cooking pasta shells, add salt and a few tablespoons of oil to the boiling pot of water. Cook pasta shells according to package directions and drain. Rinse with cold water, drain again and set aside to cool.

1/2 cup buffalo wing sauce (more or less depending on heat preference)
