BLUE CHEESE & BACON BURGERS
My husband and I had burgers at a restaurant once that had blue cheese and bacon. It was so good, so I attempted to make our own. After lots of trial and error, I've got the recipe down. I typically make the burgers and freeze them for future use. The blue-cheese butter freezes well too for steaks or other uses.

Steps:
- Mix together the softened butter and blue cheese until well mixed. Roll into a log about 2-3 inches in diameter and wrap in Parchment paper. Refrigerate until hardened. You can also freeze if you don't plan to use for a while.
- Once the butter is hardened, mix together the remaining ingredients in a large bowl by hand. Form the meat into 4-6 balls (depending on how big you want your burgers).
- Slice 1/2 inch slices from hardened blue cheese/butter log. Place each butter/blue cheese circle into the middle of the burger ball and press into middle, shaping into a thick burger shape. Repeat for all remaining burgers. Ensure that butter/blue cheese is sealed into the middle of the meat. Grill burgers until desired doneness.
- Cook bacon as usual on stove or oven. If you have non-peppered bacon, add a generous amount of pepper before cooking.
- Serve burgers on your favorite bun with bacon. Add your favorite toppings -- fresh tomatoes, lettuce, extra blue cheese, ketchup, mustard, extra blue cheese, etc.
- These are awesome! I love to make them huge -- 1/3 to 1/2 pounders and serve without a bun and have a salad as a side dish. They are so yummy!

- In a large bowl, mix the ground beef, blue cheese, bacon, scallions, hot pepper sauce, Worcestershire sauce, black pepper, salt, and mustard.
- Cover and refrigerate for 2 hours.
- Preheat grill for high heat. Gently form the burger mixture into 4 patties.
- Grill patties to your desired doneness.
- Serve on rolls with lettuce, tomato, avocado and mayo.

BACON BLUE CHEESE BURGERS
Very moist and cheesy burgers! Perfect for your cookout or anytime. These were featured on the local news for tailgating recipes for the Packers at Lambeau Field. I usually use kaiser rolls for the buns, as these are nice and juicy. If they are in season, be sure to throw some sliced Vidalia onions on top.

Steps:
- Mix beef, seasoning salt and pepper in a medium bowl. Don't overmix or you'll get loose messy yucky stuff. Shape meat mixture into 8 to 12 patties (depending on the size of burger you want.).
- In a bowl mix together blue cheese,cream cheese, and chives.
- Divide cheese mixture equally and place on centers of half the patties. Top with remaining meat patties then tightly pinch edges together to seal in filling.
- Oil hot grill or grill pan to help prevent sticking. Grill burgers for about 4-6 minutes per side.
- Top burgers with bacon. Serve burgers on toasted rolls with spring mix lettuce on top.

BLEU CHEESE AND BACON BURGERS
Steps:
- For bleu cheese butter:
- In a small bowl with a fork, smash together butter and 2 tablespoons bleu cheese crumbles; set aside.
- In a mixing bowl, stir to combine ground beef, 1/3 cup bleu cheese crumbles, bacon pieces, and steak seasoning. Wet your hands to prevent sticking and shape into 4 patties slightly larger than the buns. Cover with plastic and set aside in refrigerator.
- Set up grill for direct cooking over high heat. Brush and oil grate before cooking. Salt and pepper burgers and place on hot grill. Cook for 4 to 5 minutes per side for medium. Serve hot on toasted onion roll. Spread with bleu cheese butter, lettuce, tomato, onion, and sliced avocado, if using.
- INDOOR: Follow instructions for preparing burgers. Preheat broiler. Place burgers on wire rack over foil lined baking sheet or broiler pan. Broil 6 inches from heat source for 4 to 5 minutes per side for medium.
