CHERRIES, AMARETTO SOUR CREAM AND BROWN SUGAR

Cherries, Amaretto Sour Cream and Brown Sugar image

I was about to make Sheri D's Amaretto Sourcream Strawberries #161835, when my mom stopped by with 3 pounds of fresh Bing Cherries from Eastern Washington. She makes the 5 hour drive annually in July just to get fresh cherries and stock up on wine for the year! She saw what I was making and suggested the following recipes for the cherries. I don't care for the taste of powdered sugar, and I don't think the recipe needs it, so I don't use it, but you decide. These are so simple, elegant (except for spitting out the pits) and yummy! Enjoy!!

If you want that zing, try this over ice cream, sponge cake, cooked roast pork. You may thicken the juice for the sauce. It is so good! I had fun making this recipe, so easy. If you can't get dark red Bing cherries substitute other cherries.

AMARETTO MERINGUE CAKE WITH STRAWBERRIES & CHERRIES

Amaretto meringue cake with strawberries & cherries image

This Pavlova cake is inspired by the fruity filling of the Austrian dessert, Spanische Windtorte, with strawberries, cream, cherries and almonds

Provided by Cassie Best

Categories     Afternoon tea, Dessert, Treat

Time 1h30m

Number Of Ingredients 10

400g strawberries , hulled then halved or quartered (save a few whole with stalks on, to serve)
400g cherries , halved and pitted (save a few whole with stalks on, to serve)
50g icing sugar , plus 1 tbsp
600ml pot double cream
50ml amaretto
½ tsp almond extract
6 large egg whites
300g white caster sugar
¾ tsp white wine vinegar
100g flaked toasted almonds

Steps:

  • Heat oven to 140C/120C fan/gas 1 and cut 3 pieces of baking parchment to fit 3 baking sheets for the meringues (if you don't have 3 baking sheets, you can cook it in batches - simply divide the meringue mixture into 3 and cook separately). Using a plate or the base of a cake tin, draw a 20cm circle on each piece of parchment, then flip over so that the pencil side is facing down. Put 3 oven racks in your oven - if you only have 2 but have a large grill pan, this will work too, sat in the bottom of the oven.
  • Put the egg whites in a large bowl, and whisk with an electric hand whisk until thick and holding soft peaks. Start adding the sugar, 1 or 2 tbsp at a time, whisking continuously. When all the sugar has been incorporated, the meringue should be thick, glossy and holding stiff peaks. Add the vinegar and whisk again briefly. Use a blob of meringue to stick down the corners of each piece of parchment to the trays. Divide the meringue between the 3 circles on the parchment, swirling it towards the outline to make thin circles. Scatter the almonds over, saving a few to serve on top once assembled. Bake for 1 hr, then leave to cool in the oven.
  • When the oven is completely cold, remove the meringues and place somewhere cool and dry for up to 24 hrs, or assemble straight away. Toss the fruit with 1 tbsp icing sugar and set aside to macerate for 10-15 mins. Pour the cream, amaretto, almond extract and remaining icing sugar into a large bowl, and whisk until softly whipped. Use a little of the cream to stick your least successful meringue to a cake stand or plate. Spread over a third of the cream and scatter with some strawberries and cherries. Top with the remaining meringues, cream and fruit, finishing the top layer with the whole strawberries and cherries. Scatter over the remaining almonds and serve. Leftovers will keep in the fridge for 1 day.

The origins of amaretto cherries can be traced back to Italy, where amaretto liquor has been a popular beverage for centuries. Amaretto is an almond-flavored liqueur that is made from almonds, apricot kernels, spices, and alcohol. It has a rich, sweet, and nutty flavor that blends perfectly with the tartness of cherry juice. 4. Simmer the cherries for 5-10 minutes or until they are soft and tender.
  5. Remove the cherries from the heat and let them cool for a few minutes.
  6. Once the cherries have cooled, drain the syrup from the saucepan and add the amaretto liquor.

In this article, we will go over some valuable tips for making amaretto cherries recipes that are sure to come out perfectly every time. Tip #1: Choose the Right Cherries When making amaretto cherries recipes, it is essential to choose the right type of cherries. You will want to select a firm, sweet cherry with a thick skin that can hold up to the alcohol infusion process. The best types of cherries to use are the Bing or Royal Ann varieties. Tip #2: Use High-Quality Amaretto The quality of the amaretto you use will greatly impact the flavor of your cherries. It is crucial to use high-quality amaretto to ensure a delicious end result. Many people prefer brands such as Disaronno or Lazzaroni Amaretto for their flavor and quality. Tip #3: Infuse Your Cherries for the Right Amount of Time Infusing your cherries with amaretto can take some time, and it is essential to get the timing just right. Most recipes call for cherries to be infused for at least two weeks before they are ready to use. This time frame allows the cherries to fully absorb the flavors of the alcohol, resulting in a deliciously decadent treat. Tip #4: Use a Sealable Jar When infusing your cherries, it is best to use a sealable jar to keep the cherries fresh and prevent any leaks. A mason jar or airtight container works well for this purpose. It is also important to ensure that your jar is thoroughly cleaned and sterilized before you begin the infusion process. Tip #5: Add a Touch of Lemon Juice Many recipes include a touch of lemon juice in their amaretto cherry preparations. This addition helps balance out the sweetness of the cherries and amaretto, creating a more complex and enjoyable flavor profile. Adding just a small amount of lemon juice can make a big difference in the overall taste of your recipe. Tip #6: Stir Your Cherries Regularly While your cherries are infusing, it is important to stir them regularly. This helps ensure that each cherry gets evenly coated with the amaretto, resulting in a consistent flavor throughout. Aim to stir your cherries at least once every two or three days to achieve the best results. Tip #7: Serve Your Cherries in Style When it comes time to serve your amaretto cherries, be sure to do so in style. These delicious treats can be used to top ice cream, garnish cocktails, or as a sweet addition to your favorite dessert. Consider using a fancy stemware glass or dessert dish to showcase your cherries and add an extra touch of elegance to your presentation.
