PIE CRUST

Pie Crust image

Alton Brown's Pie Crust recipe from Good Eats on Food Network is buttery, flaky and infinitely adaptable.

Provided by Alton Brown

Time 1h40m

Yield 1 (9-inch) piecrust

Number Of Ingredients 6

3 ounces (6 tablespoons) butter, chilled
1 ounce (2 tablespoons) lard, chilled
6 ounces (approximately 1 cup) all-purpose flour, plus extra for rolling dough
1/2 teaspoon table salt
1/4 cup ice water, in spritz bottle
Approximately 32 ounces of dried beans, for blind baking

Steps:

  • Place butter and lard in freezer for 15 minutes. When ready to use, remove and cut both into small pieces.
  • In the bowl of a food processor, combine flour and salt by pulsing 3 to 4 times. Add butter and pulse 5 to 6 times until texture looks mealy. Add lard and pulse another 3 to 4 times. Remove lid of food processor and spritz surface of mixture thoroughly with water. Replace lid and pulse 5 times. Add more water and pulse again until mixture holds together when squeezed. Place mixture in large zip-top bag, squeeze together until it forms a ball, and then press into a rounded disk and refrigerate for 30 minutes.
  • Preheat oven to 425 degrees F.
  • Place 2 metal pie pans in the refrigerator to chill.
  • Remove dough from refrigerator. Cut along 2 sides of the plastic bag, open bag to expose dough, and sprinkle both sides with flour. Cover again with plastic and roll out with a rolling pin to a 10 to 11-inch circle. Open plastic again and sprinkle top of dough with flour. Remove pie pans from refrigerator and set first pan on top of dough. Turn everything upside down and peel plastic from bottom of dough. Place second pan upside down on top of dough and flip again. Remove first pan from atop dough. Trim edges if necessary, leaving an edge for meringue to adhere to. Poke holes in dough and place in refrigerator for 15 minutes.
  • Place a large piece of parchment paper on top of dough and fill with dry beans. Press beans into edges of dough and bake in the oven for 10 minutes. Remove parchment and beans and continue baking until golden in color, approximately 10 to 15 minutes longer. Remove from oven and place on cooling rack. Let cool completely before filling.

ALTON BROWN'S DAIRY-FREE CHOCOLATE PIE

Alton Brown's Dairy-Free Chocolate Pie image

This recipe is based on one from a Dr. Oz December 2011 episode where Chef Alton Brown was a featured guest. Alton Brown discussed how he lost 50 pounds and has kept the weight off for two years. One of his secrets is recipes like this no-bake, low-calorie chocolate pie. This satisfies your sweet tooth while substituting tofu for dairy products. Alton prefers coffee liqueur, but you can substitute just about any of your favorite liqueurs. Prep and cook times do not include the two hours chill time. This recipe is originally from Alton's book, "Good Eats: The Early Years". I have tweaked this to suit my preferences.

This is an amazing, fantabulous, NO BAKE recipe! Don't let the tofu scare you. I only tried this recipe because I'm an Alton fan but it is simple, easy, quick and yummy!

Categories     Pie

Time 2h10m

Yield 1 pie, 8 serving(s)

Number Of Ingredients 6

2 cups chocolate chips
1/3 cup coffee liqueur, like Kahlua (or substitute 1 tsp of Almond Extract)
1 (14 ounce) package soft silken tofu
1 teaspoon vanilla extract
1 tablespoon honey
1 chocolate wafer pie crust (or graham cracker crust)

Steps:

  • Place a small metal bowl over a saucepan with simmering water. Melt the chocolate and coffee liqueur in the bowl. Stir in vanilla.
  • Combine the tofu, chocolate mixture, and honey in the blender jar. Liquefy until smooth.
  • Pour the filling into the crust and refrigerate for 2 hours, or until the filling is set. Don't pause in this step or it might set up before you finish getting it into the pan! If it does it's okay but it makes it difficult to spread into the pan.
  • Note: I have bad luck finding a good prepared chocolate wafer crust so I use a prepared graham cracker crust.
  • Optional: Add a dollop of cool whip or dump the whole tub on the cake like a meringue. I think it's too rich this way, my husband loves it.

Silken tofu: where have you been all my life?!? Note: I have made a few minor adjustments to ingredients and order of incorporation, which worked better for me, and hopefully will for you, too. Alton Brown is a popular celebrity chef, and he has made it his mission to come up with some innovative and delicious recipes. To cater to those who prefer options without dairy, he has come up with a brilliant recipe for a dairy-free chocolate pie. This pie is delicious and indulgent, while still being kind to those who are lactose intolerant or vegan.

What is a dairy-free chocolate pie?

A dairy-free chocolate pie is essentially a pie that is made without using any animal-based dairy products. This means that the pie is free from milk, cream, cheese, yogurt, and butter. Alton Brown's recipe for this pie swaps out the usual dairy ingredients with plant-based alternatives, making it suitable for anyone who is lactose intolerant or vegan.

Ingredients required for a dairy-free chocolate pie

To make Alton Brown's dairy-free chocolate pie, you will need a few key ingredients. These include:
  • 1 1/2 cups of all-purpose flour
  • 1/4 cup of unsweetened cocoa powder
  • 1/4 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 3/4 cup of white sugar
  • 1/2 cup of vegetable shortening
  • 1/2 teaspoon of vanilla extract
  • 1/2 cup of unsweetened applesauce
  • 1/2 cup of semisweet chocolate chips
  • 1/2 cup of unsweetened almond milk
  • 1/4 cup of vegetable oil
  • 1/4 cup of cornstarch
  • 1/2 teaspoon of xanthan gum

Instructions to make Alton Brown's dairy-free chocolate pie

To make this delicious dairy-free chocolate pie, follow these simple steps:
  1. In a large bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking powder, salt, and white sugar. Mix all the ingredients together until they are well combined.
  2. Next, add the vegetable shortening to the bowl and mix it in with a pastry cutter. Alternatively, you can pulse the mixture together in a food processor until it starts to resemble coarse sand.
  3. Add the vanilla extract and unsweetened applesauce to the bowl and mix them in until the mixture forms a dough. Once the dough has formed, wrap it in plastic wrap and refrigerate it for at least 30 minutes. This will help to make the dough easier to handle later on.
  4. Preheat your oven to 350°F (175°C).
  5. Take your refrigerated dough and roll it out with a rolling pin until it is 1/4 inch thick. Place the rolled-out dough in a 9-inch pie dish and trim off any excess dough that hangs over the edge of the dish.
  6. Fill the pie crust with semisweet chocolate chips, and set it aside while you make the chocolate filling.
  7. In a large saucepan, combine unsweetened almond milk, vegetable oil, cornstarch, and xanthan gum. Whisk the ingredients together until they are well blended.
  8. Next, add in the semisweet chocolate chips and stire them together until they have melted and the mixture is smooth.
  9. Pour the chocolate filling into the pie crust and smooth out the surface with a rubber spatula.
  10. Bake the pie in the preheated oven for 30 to 35 minutes, or until the chocolate filling has set.
  11. Once the pie has finished baking, remove it from the oven and let it cool to room temperature before serving.

Conclusion

Alton Brown's dairy-free chocolate pie is an excellent recipe for anyone who is looking for a rich and indulgent dessert that is suitable for those who are lactose intolerant or vegan. The use of plant-based ingredients in this pie makes it a great option for people who want to reduce their intake of animal products. With a little bit of effort, you can make a delicious and satisfying dessert that will impress your family and friends!
Alton Brown's dairy-free chocolate pie recipe is an excellent dessert option for those who are lactose intolerant or avoid dairy products for other reasons. This recipe is not only dairy-free but also gluten-free, making it a satisfying choice for a variety of dietary requirements.

Valuable Tips for Making Alton Brown's Dairy-Free Chocolate Pie

Choose High-Quality Chocolate
The quality of chocolate that you use in your recipe can make all the difference in the final product. While it's essential to use dairy-free chocolate, you should also choose a high-quality brand with a high percentage of cacao. The higher the percentage of cacao, the less sweet the chocolate will be, and the more intense the chocolate flavor will be. Look for a brand that is vegan and free from additives.
Make a Homemade Crust
While you could purchase a pre-made gluten-free pie crust, making your pie crust guarantees that you know precisely what has gone into it. Plus, homemade pie crust is so much tastier than the store-bought version. You can make a crust with gluten-free flour, almond flour, or a combination of both. A Paleo or Keto pie crust recipe is an excellent choice if you're keeping an eye on carbohydrates.
Don't Overbake the Crust
If you're making a chocolate pie with a baked crust, it's crucial not to overbake it. Overbaking will cause the crust to turn hard or crumbly, which is not appetizing. To avoid overbaking, take the pie crust out of the oven as soon as it starts to turn light brown. The crust will continue to bake when you add the filling. If you want to use a no-bake crust, chill it for at least an hour before adding the filling.
Use a Low Heat Setting
The best way to cook the chocolate filling is to use a low heat setting, stirring continuously with a whisk. Using this technique will ensure that the chocolate melts evenly without burning. Burning the chocolate will affect the flavor and texture of the pie. If you're using a double boiler, be sure that the water never touches the bowl with the chocolate in it.
Save Some Chocolate for the Topping
When preparing the chocolate pie, you can reserve a small amount of chocolate to make a chocolate ganache topping. Place the remaining chocolate chips or chocolate into a microwave-safe bowl, add a tablespoon of coconut oil and heat for about 20 seconds until completely melted. Drizzle the melted chocolate on top of the pie once it has curdled completely, along with other toppings such as chopped nuts, whipped coconut cream, or fresh berries.
Chill the Pie Before Serving
Once you've added the chocolate filling to the pie crust, refrigerate the pie for at least 3 hours, or until the filling sets. The refrigeration process will also help the crust set properly. For an even firmer pie, you can leave it in the fridge overnight. Be sure to let the pie sit at room temperature for a few minutes before cutting and serving.
Experiment with Flavors
While the original Alton Brown chocolate pie recipe is perfect as is, you can experiment with different flavors by using various toppings or flavorings. For example, you could make a mint chocolate pie by adding mint extract to the filling or topping. Alternatively, you could add orange zest or juice to the filling to make a chocolate-orange pie instead. The possibilities are endless, so don't be afraid to get creative!

Conclusion

Making Alton Brown's dairy-free chocolate pie recipe may take some effort, but the final product is sure to impress. With the tips outlined above, you can ensure that your end product is not only dairy-free and gluten-free but also delicious and visually appealing. Don't forget to experiment with flavors and toppings to make it truly your own.
