13 1/4 ounces brie round
1/2 cup red wine
4 tablespoons sugar
2 tablespoons chocolate chips
1/4 cup olive oil
4 tablespoons almonds, chopped
1/4 teaspoon allspice
2 pears, peeled and finely chopped
1 baguette

Steps:

  • Preparation:.
  • Combine wine and sugar in saucepan and reduce over medium heat for 10 minutes.
  • Remove from heat and stir in the chocolate chips.
  • Cut baguette into 40 thin slices. Brush both sides with olive oil and broil until golden on both sides. Cool.
  • Cut brie into 4 quarters. Cut each quarter into 10 slices. Lay slices on chilled plate.
  • In small skillet, toss almonds until golden brown. Remove from heat and toss with allspice.
  • Assembly:.
  • Place baguette rounds on cookie sheet.
  • Spread 1/2 teaspoon of chocolate wine sauce on each slice.
  • Divide minced pear evenly among the slices.
  • Lay a slice of brie on top of each "crouton.".
  • Sprinkle with toasted almonds.
  • Heat in 350 degree oven for five minutes.

GIANT BAKED BRIE WITH APRICOTS AND WALNUTS

This is a simple and impressive baked Brie for a crowd. A quick apricot and walnut compote nestled in the pastry along with the warm cheese makes an elegant but easy party starter for any gathering.

1 tablespoon unsalted butter
1cup walnuts, chopped
1 teaspoon chopped fresh thyme
Kosher salt
2 tablespoons brandy, hard cider or apple cider
One 2-pound wheel of Brie (about 7 inches in diameter), at room temperature
1 cup dried apricots, diced
1/2 cup apricot preserves
One 17.3-ounce box (2 sheets) puff pastry, thawed if frozen
All-purpose flour, for rolling the dough
1 large egg, beaten
Apple and pear slices and assorted crackers, for serving

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Melt the butter in a small skillet over medium heat. Add the walnuts and cook, tossing occasionally, until lightly toasted, 1 to 2 minutes. Add the thyme, season lightly with salt and toss. Stir in the brandy and remove from the heat. Transfer to a small bowl and stir in the dried apricots and preserves. Let cool to room temperature.
  • Place the Brie on the center of the prepared baking sheet and cut off the rind on top. Spread the apricot compote evenly over the top of the Brie.
  • Unroll the puff pastry sheets on a floured work surface. Brush a 2-inch strip down the long edge of one sheet with the egg and line up the second sheet with the first, overlapping the edge brushed with egg so that the two stick together. Flour the pastry well and roll with a floured rolling pin to make a 14-inch square. Trim the corners from the pastry to make a circle (you want to make the largest circle possible). Reserve the trimmings. Transfer the pastry to the baking sheet and cover the Brie. Tuck the edges underneath the Brie.
  • Reroll the pastry scraps and cut out five or six 2-inch leaf shapes, then score them with the back of a butter knife to create simple veins in the leaf. Brush the pastry-wrapped Brie with the egg. Arrange the leaves decoratively on top of the Brie and brush with the egg.
  • Bake the brie until the pastry is puffed and deep golden, about 40 minutes. Let stand about 20 minutes before serving with apple and pear slices and crackers.

1/2 cup red wine
4 tablespoons sugar
2 tablespoons chopped bittersweet chocolate
1 loaf French bread, sliced into 40 slices
1/4 cup olive oil
1 (13 1/4 ounce) package alouette baby brie cheese, Original
4 tablespoons almonds, finely chopped
1/4 teaspoon allspice
2 ripe pears, peeled and finely diced

Steps:

  • Preheat oven to 350º F.
  • Combine wine and sugar in a non-reactive saucepan and reduce over medium heat for 10 minutes.
  • Remove from heat and cool slightly. Stir in the chocolate to blend and set aside.
  • Brush bread slices with olive oil and broil until golden brown on both sides. Cool.
  • Cut wheel of Alouette Baby Brie into 4 quarters. Cut each quarter into 10 slices. Lay slices on a chilled plate.
  • In a small skillet, over medium heat, toss the chopped almonds until golden brown.
  • Remove from heat, add allspice and blend. Set aside to cool.
  • Peel and finely dice pears.
  • Assembly:.
  • Place the French bread slices on a cookie sheet. Spread a ½ teaspoon of the chocolate wine sauce on each slice.
  • Divide the minced pear equally among the slices.
  • Lay a slice of Alouette Baby Brie on top of each "crouton" and sprinkle with toasted almonds.
  • Heat in oven for 5 minutes.

1 package alouette baby brie cheese, Original (13.2 oz. or 8 oz.)
1 cup ocean spray cran-fruit cranberry orange sauce
2 tablespoons packed dark brown sugar
3 teaspoons rum or 3 teaspoons orange extract
1/8 teaspoon ground nutmeg
2 tablespoons chopped pecans

Steps:

  • Preheat oven to 450º F.
  • Remove top rind of Alouette Baby Brie leaving a 3" rim around the circumference of the cheese.
  • In a small bowl combine Cran-Fruit, brown sugar, extract and nutmeg.
  • Top Alouette Baby Brie with cranberry mixture and sprinkle with 2 tablespoons chopped pecans.
  • Place in an ovenproof dish and bake in a 450º F oven for 4-5 minutes.
  • Serve warm with assorted crackers or apple slices.

This is a wonderful Holiday recipe for a gathering of friends. I also change it a bit with just heating whole cranberry sauce and pouring it over a whole brie or camembert cheese.

1 small brie cheese (single double or triple creme)
1 tablespoon brown sugar
1 tablespoon chopped pecans
1 teaspoon butter, melted
strawberries or butter cookie

Steps:

  • With a long sharp knife, cut off and discard the top rind of the cheese.
  • Combine sugar, pecans and butter, mix well.
  • Sprinkle mixture evenly over surface of cheese.
  • Place cheese in an ovenproof container slightly larger than the cheese.
  • Broil 6 inches from source of heat until cheese is soft, slightly melted and topping is bubbly.
  • Serve warm with strawberries or cookies.
  • Variations: Replace brown sugar, pecans and butter with 1/4 cup apricot jam mixed with 2 tsp.
  • brandy.
  • After removing top rind from cheese, prick surface with fork and pour 1 tsp.
  • more brandy over all.
  • Top with apricot mixture and bake in 350 degree oven 10 minutes.

1/4 cup toasted pecans

Steps:

  • Preheat oven to 350°F.
  • In an ovenproof dish, bake pecans for about 7 minutes being careful not to over cook.
  • Spread caramel over the top of the Alouette Baby Brie.
  • Sprinkle pecans on top.
  • Serve at room temperature.
