"ALMOST FAMOUS" CORN PUDDING

Provided by Michael Symon : Food Network

Categories     side-dish

Time 1h20m

Yield 8 to 10 servings

Number Of Ingredients 10

Three 15-ounce cans creamed corn
Three 8-ounce boxes cornbread mix
4 large eggs
6 cups fresh or frozen corn kernels
2 cups sour cream
1/2 cup sliced scallions (green and white parts)
1 1/2 sticks (12 tablespoons) unsalted butter
8 ounces mascarpone
Kosher salt and freshly cracked black pepper
Unsalted butter, for the Dutch oven

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  • Whisk together the creamed corn, cornbread mix, eggs, corn kernels, sour cream and scallions in a large bowl. Melt the butter and mascarpone in a small saucepot over low heat, stirring occasionally. (Be careful not to simmer or the mixture will separate.) Pour the melted butter and mascarpone into the large bowl with the rest of the ingredients. Season with salt and pepper and mix well to combine.
  • Butter a large Dutch oven and pour the mixture in. Place over indirect heat, cover the grill and bake at 325 to 375 degrees F until the mixture is set and golden brown on top, about 1 hour. Take off the grill and serve!
  • (Alternatively, you can bake the corn pudding in a 350 degrees F oven for 1 hour.)

If you are looking for a recipe that can help you create the best caramel corn, then you have come to the right place. In this guide, we will share valuable tips on how to make almost famous caramel corn recipes that are perfect for any occasion.

Tip 1: Use the right ingredients

The first step to making the perfect caramel corn is to use the right ingredients. You will need popcorn kernels, butter, brown sugar, corn syrup, salt, and baking soda. Make sure that you use fresh popcorn kernels that are free from any dirt or debris. Using fresh kernels will ensure that your popcorn pops perfectly, giving you the best caramel corn.
Popcorn Kernels
You can choose between yellow and white popcorn kernels. Both kernels are the same in terms of taste, but yellow kernels tend to be larger and have a thicker hull, which makes them perfect for caramel corn. White kernels, on the other hand, tend to be smaller and have a thinner hull, which makes them perfect for air-popped popcorn.
Butter
The quality of the butter that you use will affect the taste of your caramel corn. It is recommended that you use unsalted butter for this recipe. Unsalted butter will allow you to control the amount of salt that you add to your caramel corn.
Brown sugar
Brown sugar is the key ingredient that gives caramel corn its signature caramel flavor. You can use dark or light brown sugar depending on your preference.
Corn syrup
Corn syrup is added to the caramel mixture to give it a smooth texture. You can use light or dark corn syrup depending on your preference.
Salt
Salt is added to balance out the sweetness of the caramel. You can use sea salt or kosher salt depending on your preference.
Baking soda
Baking soda is added to the caramel mixture to make it lighter and airier. Be careful not to add too much baking soda, as it will give your caramel corn a bitter taste.

Tip 2: Pop your popcorn the right way

To make the perfect caramel corn, you need to pop your popcorn the right way. The way you pop your popcorn will affect the final result, so it is important to follow these tips:
Stovetop popcorn
Stovetop popcorn is the best popcorn for making caramel corn because it has a richer flavor and texture than microwave popcorn. To make stovetop popcorn, you will need a large pot with a lid, popcorn kernels, and oil. Here's how to do it: 1. Measure out 1/2 cup of popcorn kernels. 2. Add 2 tablespoons of oil to a large pot. 3. Heat the pot over medium-high heat. 4. Add the popcorn kernels to the pot. 5. Place the lid on the pot and shake the pot back and forth to make sure all the kernels are coated in oil. 6. Let the popcorn pop for 3-5 minutes, shaking the pot every minute or so. 7. Once the popping slows down to one pop every 2-3 seconds, remove the pot from the heat. 8. Carefully open the lid and pour the popcorn into a large bowl.
Microwave popcorn
If you don't have access to a stovetop, you can still make caramel corn using microwave popcorn. However, make sure that you use plain, unsalted popcorn, as flavored microwave popcorn may affect the flavor of your caramel corn. Here's how to do it: 1. Pop a bag of plain, unsalted microwave popcorn according to the package instructions. 2. Once the popcorn is popped, pour it into a large bowl and remove any unpopped kernels.

Tip 3: Mix your caramel corn properly

Once you have popped your popcorn, it's time to make the caramel mixture. Follow these tips to make sure that your caramel is mixed properly:
Use a large enough pot
When making the caramel mixture, make sure that you use a pot that is large enough to hold all the popcorn. This will make it easier to mix the popcorn and ensure that each kernel is coated in caramel.
Stir frequently
As you are mixing the popcorn with the caramel, make sure to stir it frequently. This will help to distribute the caramel evenly and prevent it from burning.
Let it cool before serving
Once you have mixed the caramel and popcorn, let it cool before serving. This will allow the caramel to harden and give your caramel corn a delightful crunch.

Tip 4: Customize your caramel corn

One of the best things about making your own caramel corn is that you can customize it to your liking. Here are some ideas to get you started:
Add nuts or chocolate
You can add chopped nuts or chocolate chips to your caramel corn to give it an extra layer of flavor and texture.
Try different types of sugar
Instead of brown sugar, you can try using other types of sugar, such as honey or maple syrup, to give your caramel corn a unique flavor.
Experiment with different spices
You can add different spices to your caramel mixture, such as cinnamon or nutmeg, to give your caramel corn a warm and cozy flavor.
Add some salted caramel to your recipe
You can add salted caramel to your recipe to give it a sweet and savory taste that is sure to satisfy your taste buds.

Conclusion

In conclusion, if you want to make almost famous caramel corn recipes, follow these tips and you will be on your way to making the perfect snack for any occasion.
