JAPONAISE (ALMOND MERINGUE) TORTE
Japonaise? No, not Japanese mayonnaise lol. This is a wonderful cake made of discs of almond meringue sandwiched together with a coffee-flavored butter cream. It was popular when I was a child growing up in Australia and, happily, I recently discovered this recipe which originally appeared in a Vogue Entertaining magazine. It is not at all difficult, and is best made a day in advance and refrigerated until just before serving. Very rich!!

Tips for Making Almond Torte
1. Choose the Right Almonds
The key to making a good almond torte is selecting the right almonds. You can use whole blanched almonds or almond flour to make your torte. Almond flour is perfect because it is fine and It has a consistent texture, which makes it easy to combine with other ingredients. You can make your almond flour by grinding whole blanched almonds in a food processor or by buying almond flour from a grocery store.
2. Use Room Temperature Ingredients
When baking an almond torte, it is best to use ingredients at room temperature. This means that you need to remove any eggs and butter from the fridge at least two hours before you start baking. The eggs and butter should be at room temperature to ensure that the mixture emulsifies well. Cold ingredients will cause your torte to be less fluffy, and not rise properly.
3. Add a Leavening Agent
If you are not using self-rising flour, add a leavening agent to help the almond torte rise. You can add baking soda or baking powder to your flour mixture to help the torte rise. Generally, a torte needs only a small amount of leavening agent to give it the perfect rise and fluffy texture.
4. Use Alternate Sugars
You can use alternate sugars instead of regular white sugar to make your almond torte. Brown sugar, honey, or maple syrup will give your torte a unique subtle flavor. Keep in mind that each of these alternate sugars will produce a different texture than regular sugar. Also, don’t be tempted to reduce the sugar amount altogether, as the sugar is essential to keep the torte moist and tender.
5. Create a Moisture barrier
To keep your almond torte moist, it is essential to create a moisture barrier. This can be done by lining the base of the baking pan with baking paper or spraying it lightly with cooking oil to prevent the torte from sticking to the pan which can cause it to be dry.
6. Don’t Overmix
When mixing your ingredients, you should mix them gently using a wooden spoon, an electric mixer or a stand mixer. Do not overmix the batter, as this will cause it to be dense and tough. Just mix the ingredients until just combined, but make sure there are no lumps remaining in the batter.
7. Bake at the Right Temperature
The key to baking an almond torte is to use the right temperature. Generally, the perfect baking temperature for a torte is 350°F (180°C). Higher temperatures will cause the torte to brown too quickly, and its inside may be undercooked. It is essential to preheat your oven before baking so that your torte cooks evenly.
8. Know When it's Done
You need to check the torte during the baking process to avoid over or undercooking. You will know the torte is ready by checking with a toothpick if it comes out clean when inserted into the center. The torte will also have a golden color and will shrink a little from the sides of the baking pan. When you remove it from the oven, allow it to cool in the pan for about 10 minutes before transferring it to a cooling rack.
9. Let it Set
After your torte has cooled completely, cover it and let it settle overnight. The overnight settling process will help the torte to reach its maximum moisture levels, and you will have a more satisfying texture when it is cut the next day.
10. Presentation
The presentation of the torte is as vital as its taste. You can dust powdered sugar or Cocoa Powder over the torte to give it a polished look or add fresh fruit for a pop of color. You can also serve the almond torte with whipped cream, raspberry sauce or caramel sauce to add extra flavor to your dessert.

Remember, you don't have to follow these tips to the dot, you can always experiment with the recipe by adding your own unique flavors or additions to create a personalized dessert.
