Almond-Crusted Curry Chicken Salad Tea Sandwiches image

Blanched almonds add a delicious crunch to elegant tea sandwiches filled with flavorful curried chicken.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers     Finger Food Recipes

Yield Makes 2 dozen

Number Of Ingredients 13

1 cup toasted sliced blanched almonds
1 whole skinless and boneless chicken breast (about 10 ounces)
1 teaspoon coarse salt
1 small onion, unpeeled and quartered
4 whole black peppercorns
5 cups water
1 1/2 cups mayonnaise
2 teaspoons curry powder
2 tablespoons mango chutney
3/4 teaspoon white-wine vinegar
3 tablespoons unsweetened shredded coconut, toasted
1/2 cup (1 stick) unsalted butter, room temperature
24 thin slices white bread

Steps:

  • Preheat oven to 350 degrees. Spread almonds on a baking sheet, and toast until fragrant and golden, 5 to 7 minutes. Transfer to a bowl to cool, and gently crush. Set aside.
  • In a medium saucepan, combine chicken, salt, onion, peppercorns, and the water. Bring to a boil over medium-high heat; reduce heat, and simmer until chicken is cooked through, about 20 minutes. Transfer chicken to a plate to cool; reserve stock for another use.
  • When chicken is cool enough to handle, shred the meat and chop into small pieces. Return to plate; cover, and place in refrigerator until ready to use.
  • In a small bowl, combine mayonnaise, curry powder, chutney, vinegar, and toasted coconut; stir to combine. Reserve 1/2 cup curry mayonnaise, and stir remaining mayonnaise into chicken. Thinly spread butter on two slices of bread; cover one slice with a thin layer of chicken salad, and top with other bread slice. Set aside. Repeat with remaining ingredients.
  • Stack several sandwiches; use a serrated knife to trim crusts and cut into two rectangles. Arrange sandwiches in a single row on the serving tray; they should rest on one long edge with the short ends standing upright. Spread a dab of reserved curry mayonnaise on short ends, and gently pat on almonds. Serve immediately. (Do not cover with damp paper towels or the almonds will become soft.)

ALMOND TEA CAKES FROM KING ARTHUR FLOUR®

Almond Tea Cakes from King Arthur Flour® image

Also known as financiers or friands, these almond-scented, bite-sized cakes are a perfect treat for a mid-morning or afternoon snack. They're prettiest when filled with fresh berries; but if looks aren't important, a teaspoonful of jam works quite well, also.

Provided by King Arthur Flour

Categories     Trusted Brands: Recipes and Tips     King Arthur Flour

Time 1h10m

Yield 28

Number Of Ingredients 9

¾ cup unsalted butter
1 ⅓ cups King Arthur Almond Flour
½ cup King Arthur Unbleached All-Purpose Flour
1 ¾ cups confectioners' sugar or glazing sugar, plus extra for dusting
½ teaspoon salt
5 large egg whites
2 tablespoons honey
1 teaspoon almond extract
Fresh berries or jam

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease the cups of a mini-muffin pan.
  • Melt the butter in a medium-sized saucepan set over medium heat. Swirl the butter in the pan and continue to cook until it turns golden and smells nutty.
  • Pour the browned butter into a heat-safe bowl, and let it cool to room temperature.
  • In a separate bowl, stir together the almond flour, all-purpose flour, sugar, and salt.
  • Mix in the egg whites, honey, almond extract, and browned butter.
  • Scoop the batter into the prepared muffin cups (a tablespoon cookie scoop works well here). Top each cake with a fresh berry or two (or a dollop of jam).
  • Bake the cakes for 15 to 18 minutes, until they're golden brown around the edge and firm to the touch in the middle.
  • Remove the cakes from the oven, and cool them in the pan for 5 minutes before turning them out onto a rack to cool completely.
  • Repeat with the remaining batter.

ALMOND-LEMON TEA CAKE

Almond-Lemon Tea Cake image

Make and share this Almond-Lemon Tea Cake recipe from Food.com.

Provided by ratherbeswimmin

Categories     Dessert

Time 1h35m

Yield 8 serving(s)

Number Of Ingredients 13

3/4 cup cake flour, sifted
1/2 teaspoon baking powder
1/8 teaspoon salt
5 large eggs
1 teaspoon vanilla extract
3/4 cup almond paste, at room temperature
1 cup sugar
1 cup unsalted butter, at room temperature
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
3 tablespoons fresh lemon juice
3 tablespoons fresh orange juice
3/4 cup sugar

Steps:

  • Note: the key to making this cake batter smooth is incorporating the almond paste completely before the eggs are added; the success of the glaze-a pretty crystallized look and a proper set-requires 2 things, the glaze must be made just before it is brushed on the cake, and the cake must be warm from the oven so the sugar and juices can penetrate it properly and form crystals.
  • Position a rack in the lower third of the oven; preheat oven to 350°.
  • Lightly butter and flour an 8 ½ inch tube pan OR a 9x5 inch loaf pan, knocking out the excess flour.
  • Make the cake: sift together the flour, baking powder, and salt twice.
  • In a small bowl, combine the eggs and vanilla; whisk just to combine.
  • In the bowl of a stand mixer fitted with paddle attachment, beat the almond paste on low speed until it breaks up.
  • This can take up to a minute, depending on how soft and warm it is.
  • Slowly add the sugar in a steady stream, beating until incorporated.
  • If you add the sugar too quickly, the paste won't break up as well.
  • Cut butter into 1 tablespoon pieces.
  • Continue on low speed while adding the butter, a tablespoon at a time, for about 1 minute.
  • Stop the mixer and scrape down the sides of the bowl with a rubber spatula.
  • Then turn on the mixer to medium speed; beat until mixture is light in color and fluffy, 3-4 minutes.
  • With the mixer still on medium, add the eggs in a very slow, steady stream and mix until incorporated.
  • Stop the mixer and again scrape down the sides; resume mixer at medium speed and mix for another 30 seconds.
  • Add in the citrus zest and mix in with a wooden spoon.
  • Finally, add the flour mixture in batches, stirring after each addition until incorporated.
  • Scrape down the sides of the bowl one last time; spoon batter into prepared pan; smooth the surface with an offset spatula.
  • Bake 45-50 minutes, until the top springs back when lightly touched and a pick comes out clean; let cool in pan on a wire rack for 5-7 minutes.
  • Meanwhile, stir together the lemon and orange juices and sugar in a small bowl.
  • Place the wire rack holding the cake over a sheet of waxed paper or foil to catch any drips; invert the cake onto the rack.
  • Brush the entire warm cake with the glaze, then let the cake cool completely on the rack (the cake breaks apart easily when warm, so don't attempt to move it).
  • When the cake is cool, transfer it to a serving plate; serve at room temperature.

While it is generally easy to make, there are several tips that can help you create the perfect almond tea recipe. In this article, we explore valuable tips for making almond tea recipes that you will love.

1. Choose the Right Almonds

The quality of almonds that you use in your tea recipe can make a big difference in the taste and texture of the final product. When selecting almonds, it is important to choose high-quality nuts that are fresh and not rancid. Rancid almonds are no good for tea recipes as they can have an unpleasant flavor and aroma. It is also recommended to use unroasted or blanched almonds for the recipe as they have a milder taste compared to roasted ones.

2. Use a High-Quality Tea Blend

If you are adding almond flavor to your tea, then the type of tea blend you use is also important. High-quality tea blends work best with almond tea recipes. Consider using loose-leaf tea, which can add more depth to the flavor compared to tea bags. Green tea, black tea, white tea, and oolong tea are all great options for making almond tea.

3. Add Sweeteners Wisely

Almond tea can be naturally sweet, but it is still essential to choose the right sweeteners to enhance its flavor. When adding sweeteners to the recipe, consider using natural sweeteners like honey or maple syrup instead of processed sugars. Not only do these sweeteners taste better, but they are also healthier for you.

4. Experiment with Different Milk Options

The type of milk you use in your almond tea recipe can also affect the taste and texture of the beverage. Dairy milk and almond milk are the most common options, but you can also experiment with other non-dairy milk alternatives like soy or oat milk. The type of milk you use can also give the tea different textures, so feel free to experiment and find what works best for you.

5. Use the Right Equipment

To create the perfect almond tea recipe, you need to have the right equipment. A tea infuser, a teapot, and a milk frother are all essential tools to have when making almond tea. You can also use a blender to blend the almonds into a smooth paste before adding them to the tea. Proper equipment ensures that your tea is prepared to perfection.

6. Know When to Add the Almonds

The timing of adding the almonds to your recipe is important. Almonds can be added to the tea when brewing or after it's brewed. If added while brewing, the tea can have a stronger almond flavor while adding it after the tea is brewed tends to give it a milder taste. You can also add the almonds to the tea when it is served, garnishing with them.

7. Play with Flavors

Almonds have a distinct and delicious flavor that can be enhanced with other flavors to create interesting and unique tea blends. You can experiment with adding flavors like vanilla, cinnamon, or cardamom to your almond tea recipe. Adding spices during brewing can give a bolder and more satisfying flavor.

8. Adjust the Temperature and Time

To make the perfect almond tea recipe, it is essential to adjust the temperature and time of the brewing process. Steeping the tea for too long or at high temperatures can result in a bitter or burnt taste. Adjusting the temperature and steeping time can help release more flavor without compromising the quality of the tea.

Conclusion

Almond tea is a delicious and refreshing beverage that can be enjoyed any time of the day. Whether you prefer your tea hot or cold, the above tips will help you create the perfect almond tea recipe that your taste buds will adore.
