Provided by Food Network Kitchen

Time 1h50m

Yield about 30 cookies

Number Of Ingredients 9

3/4 cup raw almonds (with skins)
1 1/4 cups all-purpose flour
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1 1/2 cups confectioners' sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/4 teaspoon salt
1/4 cup dried cherries
3 tablespoons amaretto liqueur

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Spread the almonds on a rimmed baking sheet and bake until slightly darkened, about 10 minutes; let cool completely. Transfer to a food processor and pulse until finely ground. Add the flour and pulse to combine.
  • Beat the butter in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Add 1/2 cup confectioners' sugar, the vanilla and almond extracts, and salt and beat until combined. Reduce the mixer speed to low; add the flour mixture and beat until just incorporated. Cover and refrigerate until slightly firm, about 30 minutes.
  • Meanwhile, combine the dried cherries, amaretto and 1 tablespoon water in a small microwave-safe bowl and microwave 30 seconds; set aside until the cherries are plump, about 20 minutes.
  • Scoop out a tablespoonful of dough, press a dried cherry into the center, then shape the dough into a ball, enclosing the cherry. Repeat with the remaining dough and cherries and arrange about 1 inch apart on 2 ungreased baking sheets. Bake, switching the position of the pans halfway through, until lightly golden on the bottom, 15 to 20 minutes. Put the remaining 1 cup confectioners' sugar in a large shallow bowl. Let the cookies cool 5 minutes on the baking sheets, then carefully transfer to the bowl with the sugar and gently toss. Transfer to racks to cool completely, then toss in the sugar again.

TOASTED ALMOND SNOWBALLS

Toasted Almond Snowballs image

Browning almond flour for these cookies adds a deep layer of toasty flavor, intensifying their overall nuttiness. Feel free to substitute other nuts: Pistachios, walnuts and pecans work particularly well. Snowballs keep, stored airtight at room temperature, for about a week.

Time 30m

Yield 3 dozen cookies

Number Of Ingredients 8

2/3 cup/75 grams almond flour
3/4 cup/170 grams unsalted butter (1 1/2 sticks), softened
2 1/2 cup/305 grams confectioners' sugar
1 egg yolk
1 tablespoon brandy, pastis or ouzo
1/2 teaspoon almond extract
1 1/2 cups/190 grams all-purpose flour
1/4 teaspoon fine sea salt

Steps:

  • In a medium skillet over medium heat, toast the almond flour, stirring constantly, until golden brown and fragrant, 6 to 8 minutes. Immediately pour flour into a small bowl to cool. Watch carefully: Once the flour begins to toast, it will happen very quickly.
  • Using an electric mixer fitted with the paddle attachment or a handheld electric mixer, beat butter and 1 cup confectioners' sugar on low speed until fluffy, 1 to 2 minutes. Beat in egg yolk, brandy and almond extract until well combined.
  • Reduce speed to low and gradually add all-purpose flour, salt and toasted almond flour until just incorporated.
  • Scrape the dough into an airtight container and refrigerate for at least 2 hours or overnight.
  • When ready to bake, heat oven to 350 degrees and line 2 baking sheets with parchment paper.
  • Using your hands, roll dough into 1-inch balls and place balls 1 inch apart on the prepared baking sheets. Bake for 12 to 18 minutes, until cookies begin to brown at edges. Rotate cookie sheets halfway through for even baking.
  • Place 3/4 cup confectioners' sugar into a sieve. As soon as the cookies come out of the oven, sift a thick layer of confectioners' sugar over the tops. Once cookies are cool, put remaining 3/4 cup confectioners' sugar (plus any sugar in the sieve) into a shallow bowl and toss cookies again in confectioners' sugar.

ALMOND SNOWBALLS

Almond Snowballs image

These are a great sweet treat to serve with coffee. They are very simple to make and only have 3 ingredients. You can serve them as is or in small paper patty cases. I usually make a double batch. They keep well in an airtight container- though dont last more than a few days in my home! As a bonus this recipe is also gluten free as it has no flours- just ensure you use pure icing sugar in the recipe.

Valuable Tips When Making Almond Snowballs Recipes

When it comes to making almond snowballs recipes, there are several tips that can help ensure success. From selecting the right ingredients to baking techniques, these tips will help you create a delicious and memorable dessert.
1. Choose the Right Almonds
To make the best almond snowballs, it's important to choose the right type of almonds. Raw, unsalted almonds are the best choice, as they have a mild flavor that won't overpower the other ingredients in the recipe.
2. Use High-Quality Butter
The butter is a key ingredient in almond snowballs, and using high-quality butter can make all the difference in the final outcome. Look for unsalted, European-style butter with a high fat content, as this will produce a rich and tender cookie.
3. Use Powdered Sugar
Using powdered sugar in the recipe will give the cookies a delicate texture that melts in your mouth. Be sure to sift the powdered sugar before using it, to prevent lumps and ensure a smooth dough.
4. Chill the Dough
Chilling the dough before baking is important for several reasons. First, it helps the dough firm up, making it easier to shape into balls. Second, it allows the flavors of the ingredients to meld together, resulting in a more flavorful cookie. Lastly, it helps prevent the cookies from spreading too much while baking, resulting in perfectly shaped snowballs.
5. Roll the Cookies Twice in Powdered Sugar
After baking, roll the cookies in powdered sugar while they are still warm, and then again once they have cooled. This double coating helps create a thick layer of sugar around each cookie, giving them a beautiful snowball appearance.
6. Store the Cookies Properly
To keep the almond snowballs fresh, store them in an airtight container at room temperature. They will keep for up to a week, and can also be frozen for longer storage. When freezing, be sure to wrap the cookies tightly in plastic wrap and then place them in a freezer-safe container.
7. Experiment with Flavors and Add-Ins
While traditional almond snowballs are delicious, don't be afraid to experiment with different flavors and add-ins. You could try adding chopped dark chocolate, dried cherries, or even a pinch of cinnamon to the recipe. These additions can add a new dimension of flavor and make the cookies even more interesting.
8. Make Ahead for Easy Entertaining
Almond snowballs are a great dessert for entertaining, as they can be made ahead of time and stored in the freezer. Simply thaw them at room temperature before serving, and they will be just as delicious as the day you made them.
Conclusion
By following these valuable tips, you can create almond snowballs that are sure to impress your family and friends. Remember to use high-quality ingredients, chill the dough, and double coat the cookies in powdered sugar for the best results. With a little experimentation, you can even put your own unique spin on this classic recipe.
