Time 1h40m

Yield 4-6 serving(s)

Number Of Ingredients 9

2 cups long grain rice
2 (10 1/2 ounce) cans cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
4 -5 boneless skinless chicken breasts
3 -4 tablespoons butter
1/2 cup milk
parmesan cheese
sliced almonds
parsley

Steps:

  • Melt butter and add soups and milk. Reserve 1 C soup mixture. Add rice to remaining soup mixture. Pour into 9x13 baking dish. Cut chicken breasts into thirds and place on top of rice and soup. Pour remaining cup of soup over all. Sprinkle with parmesan cheese, parsley and almonds on top. Bake covered at 350 degrees for about 1 1/2 hours. Check after one hour and stir rice.
  • **Sometimes I like to make this with lower fat content. When I do I decrease the amount of rice by 1/2 C, eliminate 1 can of cream of chicken soup and add in the place 1 1/2 C chicken broth and leave out the butter and almonds. It is still very creamy and very tasty. I also use lowfat cream soups.

When it comes to comfort food, casseroles are a go-to for many people. And when you combine rice, almonds, and creamy sauce, it's tough to go wrong. Almond rice casserole recipes can be served as a main dish, a side dish, or even as a vegetarian option. The dish is easy to make and can be customized to fit your taste preference.

Almond Rice Casserole Ingredient

Rice
Rice is the base of this dish. You can use any kind of rice, but long grain white rice is the most common. Brown rice can also be used but keep in mind that the cook time may be longer. Rice should be cooked until done but still slightly firm.
Almonds
Almonds are an essential ingredient in almond rice casserole. Chopped, sliced or slivered almonds can be used, and they provide a nice crunch to the dish. If you have a nut allergy, you can substitute almonds with crispy fried onions for texture.
Creamy Sauce
A creamy sauce brings everything together in almond rice casserole. The sauce can be made with heavy cream, sour cream, or Greek yogurt, and even almond milk. To add flavor to the dish, you can add cheese or seasonings like paprika, garlic powder, or thyme.
Vegetables
Vegetables can be added to the dish to create a balanced meal. Broccoli, peas, corn, spinach, and bell peppers are common vegetables used in almond rice casserole. Vegetables should be cooked until they are tender but still have a slight crunch.

Preparing Almond Rice Casserole

Boil the Rice
The first step in making almond rice casserole is to cook the rice in boiling water until it becomes soft with a little bit of firmness. To make the process even easier, invest in a rice cooker.
Toast Almonds
After boiling the rice, the almonds need to be toasted to bring out their flavor. This is done by putting cut or sliced almonds in a pan over medium heat and stirring them for several minutes until they're golden brown. This should only take 2-3 minutes. Set aside.
Prepare the Sauce
The creamy sauce is what makes this dish rich with flavor. Once you have toasted the almonds, add the heavy cream or sour cream to the pan with the almonds and stir until the sauce is smooth. You can also add cheese and seasonings at this point.
Add the Vegetables
Next, add the vegetables to the creamy sauce and cook until they are tender. Once the vegetables are done, you can mix them with the rice and sauce.
Bake the Casserole
Once everything is mixed, add the casserole mix to a baking dish, and cover it with foil. Bake in the oven at 375F for about 30-35 minutes until it's hot and bubbly.

This dish is easy to prepare and can be customized to suit your taste buds. Below are some valuable tips to make delicious almond rice casserole recipes.

Tip 1: Choosing the Right Rice

The quality and type of rice used in almond rice casserole recipes is essential. For the best results, choose long-grain or medium-grain white rice. These types of rice have a mild flavor that blends well with other ingredients. Brown rice or wild rice can also be used for a healthier option.
Tip 1.1: Measuring the Rice
It is essential to measure the rice accurately when preparing the dish. Use a measuring cup to ensure that you use the correct amount of rice. A common ratio is one cup of rice to two cups of water or other liquids.
Tip 1.2: Rinsing the Rice
Rinsing the rice before cooking is another essential step in making delicious almond rice casserole dishes. Rinse the rice with cold water before cooking to remove any dirt, debris or extra starch. This step will result in fluffy, cooked rice without the risk of clumping.

Tip 2: Choosing the Right Almonds

The choice of almonds is crucial to the overall quality and taste of the casserole recipe. It is best to use raw almonds that are not roasted, salted or flavored. The nuts should be fresh and have a light brown color. The freshness of the almonds can affect the taste and texture of the dish. To enhance the aroma and flavor of the almonds, toast them in the oven for a few minutes before adding them to the dish.
Tip 2.1: Chopping the Almonds
To achieve the desired texture of the casserole, chop the almonds into small pieces. Use a sharp knife or a food processor to chop the nuts evenly. Be careful not to over chop the nuts, as this can result in a powdery texture that can impact the overall taste of the dish.
Tip 2.2: Garnishing with Almonds
After baking the casserole, sprinkle some chopped almonds on top to give it a beautiful and crunchy appearance. This garnishing adds texture and enhances the flavor of the dish.

Tip 3: Choosing the Right Cheese

Cheese is a vital ingredient when making almond rice casserole recipes. It is what binds the ingredients together and adds flavor and texture to the dish. The best cheeses to use for this recipe are cheddar or Gouda cheese. These cheeses have a mild flavor that complements the other ingredients in the dish.
Tip 3.1: Grating the Cheese
Grate the cheese into fine pieces before adding it to the dish. The grated cheese will melt evenly and result in a creamy consistency throughout the dish. Use a cheese grater or a food processor to grate the cheese.
Tip 3.2: Choosing the Right Amount of Cheese
The amount of cheese used in the recipe should be measured carefully, too much cheese can make the casserole too heavy, and too little can make the dish lack flavor. A common ratio is 1-2 cups of grated cheese to two cups of cooked rice.

Tip 4: Using the Right Spices

Spices can make or break the taste of almond rice casserole recipes. Do not be afraid to experiment with different spices to enhance the flavor of the dish. The most popular spices used in this recipe are black pepper, paprika, and garlic. Other spices that can be used include cumin, turmeric, and cinnamon.
Tip 4.1: Mixing the Spices
Mix the spices together before adding them to the recipe to ensure that they are evenly distributed throughout the dish. This will prevent one area of the casserole from having a more intense flavor than others.
Tip 4.2: Using Fresh Herbs
Adding fresh herbs to the mixture can give the casserole a unique flavor. Parsley, thyme, and rosemary are popular herbs that can be added to enhance the aroma and flavor of the dish. Fresh herbs should be added a few minutes before the dish is ready, to prevent them from losing their freshness and texture.

Tip 5: Adding Vegetables

Adding vegetables can make the dish more nutritious and flavorful. Vegetables such as onions, carrots, and peas can add a vibrant and colorful appearance to the dish. They can be sautéed or steamed before adding them to the recipe.
Tip 5.1: Sautéing Vegetables
Sautéing the vegetables adds a bit of sweetness and enhances their natural flavor. Heat some oil in a pan, add the vegetables and cook them until they are tender. This process will further enhance the flavor profile of the almond rice casserole recipe.
Tip 5.2: Using Frozen Vegetables
Frozen vegetables can be used as a time-saving alternative, but make sure to thaw them before adding them to the dish. This process will ensure that they cook evenly without affecting the texture of the dish.
