ALMOND JOY BITES

I was given this recipe (or a version of it at least) the year my son turned one. During a move I lost track of where I put the recipe. I found it this Christmas in the back of my old copy of our family cookbook I had given my son when he married (he is now 23). It's now back in rotation and everyone loves it. My brother-in-law...

Time 3h40m

Number Of Ingredients 8

32 oz powdered sugar
1/2 c butter, softened
14 oz sweetened condensed milk
1 tsp almond extract
14 oz coconut, shredded
1 1/2 c almonds, chopped
1 pkg chocolate almond bark
wax paper

Steps:

  • 1. Cream butter and sugar together in bowl. Add condensed milk and mix until well incorporated.
  • 2. Stir in almond extract, coconut and nuts (if you like, you can roll the dipped balls into the chopped nuts instead of incorporating them into the mix or place one whole almond on top of each ball, pressing slightly to secure). Mix well.
  • 3. Form candy into balls measuring approximately 1-inch. (I use a 1.25 in. cookie scoop to ensure uniformity). Place balls on waxed paper and refrigerate for at least 3 hours.
  • 4. Melt almond bark in top of double boiler, stirring well. Once the chocolate is completely melted, remove the boiler from heat but allow the chocolate to stay over hot water (if the chocolate thickens too much, return to heat for a minute or so to thin).
  • 5. With a toothpick, dip each ball into chocolate and place on waxed paper until set. Do this process in small batches. If the refrigerated balls are allowed to soften too much they tend to fall off the toothpick. If the toothpick method doesn't work for you, use one fork to dip each ball (sit the ball across the tines, do not stick it on the tines) and use another to help coat the ball, tapping the fork on the side of the boiler to remove excess chocolate.
  • 6. I recommend storing these in the refrigerator ... if you have any left!

Almond Joy Bites are a delicious and healthy snack that are perfect for satisfying your sweet cravings. To make these tasty treats, you need to consider the following tips:
1. Use good quality ingredients
When making almond joys, use good quality ingredients to ensure that the end product is rich in flavor and taste. Choose high-quality dark chocolate, organic unsweetened coconut flakes, and fresh almonds that are not rancid. These ingredients will make a difference in the final taste of the almond joy bites.
2. Toast Your Coconut
Toasting your coconut flakes adds depth and flavor to the almond joy bites. It will create a nuttier and richer flavor that contrasts well with the sweetness of the chocolate. To toast your coconut, preheat your oven to 325 degrees Fahrenheit and bake for 6-8 minutes, stirring occasionally.
3. Use a Food Processor
A food processor makes it easy to chop the almonds into small pieces and shred the coconut to a finer texture. It creates a more consistent taste and texture throughout the almond joy bites.
4. Use a Silicone Mold
Using a silicone mold makes it easier to shape and remove the almond joy bites. The mold will give you perfectly-sized and shaped almond joy bites that are easy to pop out.
5. Line Your Mold With Parchment Paper
Lining your mold with parchment paper will make it much easier to remove your almond joy bites. Simply place the parchment paper in the mold before adding your ingredients, and once the bites are set, they will easily pop out.
6. Chill Your Almond Joy Bites
After making your almond joy bites, chill them for at least 30 minutes before serving. This will harden the chocolate, coconut, and almond mixture, creating a crispy texture and a richer taste.
7. Experiment with Flavors
Almond Joy bites are very versatile, and you can add various ingredients to make them even more delicious. For instance, you can add dried cherries, dried cranberries, or raisins depending on your preference.
8. Storage
