ALMOND-CRUSTED PORK CHOPS WITH APPLES

Almond-Crusted Pork Chops with Apples image

My mom always cooked this dish in a heavy cast-iron skillet and every time she heated the pan, it had a fragrance of pure food history. In this recipe, take care to grind the almonds fine enough so they adhere as a crust.

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 16

3/4 cup whole almonds, toasted
3/4 cup panko breadcrumbs
1 teaspoon finely grated orange zest (reserve the orange)
4 boneless pork chops (each about 8 ounces and 3/4-inch thick)
Kosher salt and freshly ground black pepper
5 tablespoons Dijon mustard
2 large whole eggs
Extra-virgin olive oil, enough for a shallow frying pan
2 tablespoons (1/4 stick) unsalted butter
2 large shallots, minced
2 Golden Delicious apples, peeled, sliced 1/4-inch thick, then diced
1 teaspoon (1 sprig) chopped fresh rosemary
Kosher salt and freshly ground black pepper
1 teaspoon (packed) light brown sugar
Juice of 1 orange (about 1/3 cup)
1/2 cup chicken stock

Steps:

  • Preheat the oven to 200 degrees F.
  • To make the pork chops: In a food processor, pulse the almonds into crumbs. Mix the breadcrumbs and almonds in a shallow dish and stir in the orange zest. Season the mixture and the pork chops with salt and pepper. In another dish, mix the mustard and eggs together. Brush the chops with the mustard mixture and dredge all over in the crumbs.
  • Heat a large ovenproof skillet over medium heat and add about 1/2 inch of the oil. When the oil is hot, brown the chops on both sides, about 3 to 4 minutes per side. Remove them to a baking sheet fitted with a wire rack and cook in the oven until they reach an internal temperature of 145 degrees F.
  • To make the apples: Pour the fat out of the skillet, then wipe the skillet and set over medium heat. Melt the butter. Add the shallots, apples and rosemary, and toss until the apples begin to brown, about 3 minutes. Add the sugar, orange juice, stock, and some salt and pepper, and bring to a simmer. Cook just until the sauce comes together, about 15 minutes. Remove the pork chops from the oven and serve with the apples.

ALMOND CRUSTED PORK WITH APPLE-ROSEMARY SAUCE

Almond Crusted Pork with Apple-Rosemary Sauce image

This is one of my favorite recipes to make when I know people are coming over because there is no way to make this dish look ugly or taste bad. White wine or apple juice may be substituted for the apple cider.

Time 2h

Yield 8

Number Of Ingredients 13

1 cup ground almonds
⅓ cup heavy cream
2 tablespoons honey mustard
½ teaspoon ground dried rosemary
2 pork tenderloins, trimmed
salt and pepper to taste
1 tablespoon butter
2 cloves garlic, minced
1 onion, diced
¼ teaspoon ground dried rosemary
3 Granny Smith apples - peeled, cored and sliced
½ cup apple cider
1 ¼ cups heavy cream

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Place a sheet of aluminum foil in a 9x13 inch baking dish.
  • Stir together the almonds, 1/3 cup heavy cream, honey mustard, and 1/2 teaspoon rosemary in a small bowl; set aside. Season the tenderloins with salt and pepper to taste. Spread the almond mixture evenly over the tenderloins and place them into the baking dish.
  • Bake in the preheated oven until the almond crust is golden brown and the pork is no longer pink in the center, about 90 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Allow the pork to rest for 10 minutes before slicing.
  • While the pork is baking, prepare the apple-rosemary sauce by melting the butter in a saucepan over medium heat. Stir in the garlic, onions, and 1/4 teaspoons of rosemary; cook until the onions have softened and turned translucent, about 5 minutes. Once the onions are tender, add the apples and apple cider. Bring to a simmer over medium-high heat and cook for 5 minutes. Pour in 1 1/4 cups of heavy cream, return to a simmer, then reduce heat to medium-low and simmer uncovered until the sauce has thickened slightly and is flavorful, 5 to 10 minutes. Season to taste with salt and pepper before serving with the pork.

Pork is a versatile meat that can be prepared in various ways to create a range of delicious dishes. One popular way to cook pork is to coat it in an almond crust. Almond crusted pork is a flavorful and healthy way to enjoy this meat. In this article, we will discuss valuable tips to create perfect almond crusted pork dishes.

Tip 1: Choose the right cut of pork

The first step to creating great almond crusted pork is selecting the right cut of pork. Some cuts of pork work better than others when it comes to this dish. Ideally, you should choose a cut that has a good amount of fat and flavor, such as pork loin or pork chops. These cuts hold up well to the coating and remain tender and juicy after cooking.

Tip 2: Prepare the pork properly

To ensure that the almond crust sticks well to the pork and cooks evenly, it's essential to prepare the meat properly. First, you should pat the pork dry with a paper towel to remove any excess moisture. Then, season the pork with salt and pepper and let it sit so that the seasoning can penetrate the meat.

Tip 3: Create the almond coating

The next step in creating a delicious almond crusted pork dish is to make the almond coating. To do this, you'll need to grind almonds into small pieces in a food processor or blender. Then, mix the ground almonds with other ingredients such as flour, breadcrumbs, and spices.

Tip 4: Coat the pork evenly

To ensure that the almond coating sticks to the pork and cooks evenly, it's important to coat the meat properly. Begin by dredging the pork in flour to create a base layer. Then, dip the pork into beaten eggs and finally coat it in the almond mixture. Be sure to press the almond mixture into the pork to ensure it adheres well.

Tip 5: Use the right amount of oil

To cook the almond crusted pork to perfection, it's important to use the right amount of oil. You want enough oil to cover the bottom of the pan and come about halfway up the pork. Using too much oil can make the crust soggy, while using too little can cause the coating to burn.

Tip 6: Cook at the right temperature

Cooking almond crusted pork at the right temperature is crucial for achieving a crispy crust and juicy, flavorful meat. The pan should be heated to medium-high heat before adding the pork. Cook the pork for approximately 3-4 minutes on each side or until it reaches an internal temperature of 145°F.

Tip 7: Let it rest before slicing

After cooking the pork, it’s essential to let it rest for at least five minutes before slicing. This allows the juices to redistribute throughout the meat, resulting in a tender and moist texture. Slicing the pork too soon can cause the juices to leak out, leaving the meat dry and tough.

Tip 8: Experiment with different flavor combinations

Almond crusted pork is a versatile dish that can be flavored in numerous ways. Experiment with different herbs and spices to create unique flavor combinations. Some popular flavor combinations to try include rosemary and garlic or cumin and chili powder.

Tip 9: Pair with the right sides

When serving almond crusted pork, it’s important to pair it with the right sides. Roasted vegetables, such as asparagus or broccoli, make a tasty and healthy accompaniment. You can also serve the pork with a side salad or quinoa for a complete and satisfying meal.

Tip 10: Store and reheat leftovers properly

If you have leftovers, it's important to store and reheat them properly to ensure they remain safe to eat. Store leftover almond crusted pork in an airtight container in the refrigerator for up to three days. Reheat the pork in the oven or microwave until it reaches an internal temperature of 165°F.

Conclusion

Creating a delicious almond crusted pork dish is easy when you follow these valuable tips. Start by choosing the right cut of pork and preparing it properly. Then, create the almond coating, coat the pork evenly, and cook at the right temperature with the right amount of oil. Let the pork rest before slicing, experiment with different flavor combinations, and pair with the right sides. Remember to store and reheat leftovers properly to avoid foodborne illness.
