Steps:
- 1. Mix together the confectioners' sugar, 1 cup coconut, cream, almond extract and melted butter.
- 2. Stir until all are well combined. Now shape into ¾ - 1 inch fat balls.
- 3. Now roll the balls in rest of coconut and let stand about 24 hours to firm up and use crushed almonds on its top or bottom.
- 4. Makes 2 to 3 dozen balls.

- In a small bowl, cream butter and sugar until light and fluffy. Add vanilla. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in almonds. , Roll 1 teaspoon of dough around each cherry. Place on greased baking sheets. Bake at 325° for 15-20 minutes or until lightly browned. Remove to wire racks to cool slightly; roll in confectioners' sugar.

- In a large bowl, beat the coconut, milk, confectioners' sugar and butter until blended (mixture will be sticky); set aside., In a microwave-safe bowl, melt chocolate chips, candy coating and shortening; stir until smooth. Spoon about 1/2 teaspoon chocolate mixture into 42 paper-lined miniature muffin cups. , Shape 1/2 teaspoonfuls of coconut mixture into balls; gently press into chocolate. Top each with an almond. Spoon 1 teaspoon chocolate mixture over each. Let stand until set. Store in an airtight container.
