CHINESE CHEWS RECIPE (DATE-NUT BARS)

Chinese Chews Recipe (Date-Nut Bars) image

My mother-in-law's Chinese Chews are buttery, chewy blondies with dates and walnuts, dusted in confectioners sugar. An old family favorite!

Provided by Mamma C

Categories     Dessert

Time 55m

Number Of Ingredients 9

8.5 ounces pitted dates
1 cup chopped walnuts
8 Tablespoons salted butter
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt
confectioners sugar for dusting

Steps:

  • Preheat your oven to 350 degrees F. Prepare an 8x8 pan by lining it with parchment paper and folding it over the edges of the pan to make for easy removal and cleanup. (If you don't have parchment paper, use foil and grease it well.)
  • Cut up the dates into small pieces with kitchen scissors. (They're really sticky to chop with a knife and don't do well in a food processor or blender.) It's best to cut a pitted date in half the long way, then cut those pieces in half the long way again. Then, snip each strip into pieces.
  • If starting with walnut halves, chop them until you have one cup.
  • In a glass bowl or other microwave-safe bowl, melt your butter in the microwave, covering it with wax paper to prevent splashing. Stir in the sugar.
  • Add the eggs and vanilla to your bowl and mix with a spoon until blended. Add the flour and salt and stir. Stir in the dates and nuts until blended.
  • Pour the batter into your baking pan and use a spatula to even it out. Bake for 35-40 minutes, or until the top is golden brown. A toothpick or cake tester inserted in the center should come out clean.
  • Let the pan cool on a rack for 10 minutes. Then lift out the Chinese Chews by grasping the parchment paper and transferring everything to a cutting board. Cut into squares (I did 16 large ones, but smaller squares work well, since they are rich tasting.)
  • If you're not planning to freeze them, dust with confectioner's sugar. Transfer the bars to a rack to finish cooling. They taste best when completely cooled.
  • Store at room temperature in an airtight container. You can freeze them without the confectioner's sugar and add the sugar when they are thawed.

CHINESE CHEWS

Chinese chews, a sweet treat made with chopped dates and walnuts, and sprinkled with powdered sugar.

Provided by Steve-Anna Stephens

Categories     Dessert     Snack     Baking

Yield 48

Number Of Ingredients 8

3/4 cup all purpose flour
1 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup chopped dates
1 cup chopped walnuts
3 eggs, well-beaten
Confectioners sugar, for topping

Steps:

  • Preheat oven to 300° F. Grease and flour an 8 x 12-inch pan - if you use a smaller pan, the baking time will be longer. Note: If you grease the pan, but don't flour it, the squares will stick to the pan and be difficult to remove after baking.
  • Combine flour, sugar (not confectioners sugar), baking powder and salt. Sift with a sifter or fine mesh sieve into a medium sized mixing bowl. If you don't have a sifter, whisk dry ingredients together well to combine.
  • Stir the dates, nuts and well-beaten eggs (I beat the eggs separately with a hand mixer for about 1 minute until fluffy before adding them), into the dry ingredients. It is not necessary to beat the eggs with a mixer, you can beat them by hand with a fork. Make sure ingredients are well combined - the batter will be sticky.
  • Spread the batter out as thinly as possible into the prepared pan.
  • Bake for 30 minutes, or until top is golden brown and a toothpick inserted in the center of the pan comes out clean.
  • Let cool completely, and cut into 1 to 1 1/2-inch squares. Note: Many recipes call for cutting the squares while still warm. In my experience, they are much easier to cut after they've cooled.
  • Sprinkle with powdered sugar, using sifter or sieve, as desired. Links: The Hunt for "Chinese Chews" Chinese Chews from She Wears Many Hats

History of Almond Chinese Chews

Chinese chews are believed to have originated in the early 1900s in China. They were traditionally made with sesame seeds, honey, and sesame oil. However, as Chinese immigrants began to settle in other parts of the world, the recipe evolved to include more familiar ingredients, like flour and sugar. Over time, almond flour became a popular ingredient in Chinese chews, as it added a nutty flavor and a chewy texture that was highly enjoyable. Almond Chinese chews are a delicious dessert that everyone loves. It is a chewy, sweet treat that has a nutty flavor that comes from the roasted almonds. Making this recipe is easy but it requires attention to detail to make sure that it comes out perfect. In this article, you will learn some of the valuable tips that will help you make the best almond Chinese chews that your friends and family will enjoy.

Ingredients and tools

Before you start making the almond Chinese chews, you will need to have all the ingredients and tools ready. Here are the essential things you need:
Ingredients
- 2 cups of all-purpose flour - 1 ½ cups of sugar - 1 cup of chopped roasted almonds - 3 large eggs - 1 teaspoon of baking powder - 1 teaspoon of vanilla extract
Tools
- Mixing bowls and spatula - Parchment paper and baking tray - Measuring cups and spoons - Aluminum foil - Knife and cutting board

Valuable tips

Now that you have everything ready, it is time to know some tips that will make your almond Chinese chews turn out perfect.
1. Roasting the almonds
One of the most important steps in making the best almond Chinese chews is roasting the almonds. Roasting brings out the flavor and texture of the almonds, making them crunchy and delicious. Before roasting the almonds, make sure you have enough time to cool them after baking. If you put warm or hot almonds in the mixer or dough, the butter will melt, and the dough may turn out too thin.
2. Properly mix the dough
When creating the dough, it is essential to ensure that the mixture is properly mixed. You don't want to end up with uneven pieces that will alter the texture of the chews. After adding all the ingredients, mix the dough on low speed until the mixture forms a smooth and consistent mixture. Be careful not to overmix, or the dough will become too sticky and challenging to work with.
3. Use a proper baking dish
Using a proper baking dish is essential in this recipe. You want to spread the mixture evenly and ensure that it cooks at the same rate. One way to achieve this is by using parchment paper. It ensures that the chews come out evenly and that they do not stick to the baking tray. When spreading out the dough on the parchment paper, use a spatula and smooth it out gently.
4. Cut the chews with aluminum foil
Cutting the chews with a knife can be tricky since the mixture is sticky and can easily stick to the knife. An easy fix is to use aluminum foil to line the cutting board. This prevents the dough from sticking to the board and makes it easy to cut the chews into even pieces.
5. Store the chews in the fridge
Once you have cut your chews into individual pieces, it is essential to store them correctly to maintain their freshness. This recipe generates a lot of chews, so you may not consume all of them at once. To keep them fresh and to prevent them from drying out, store them in an airtight container in the fridge. The chews can last up to a week in the fridge.

In conclusion

Making almond Chinese chews is easy, but it requires attention to detail to make sure that you end up with the perfect treats. By following the tips outlined in this article, you can be confident that you will make delicious chewy treats that your friends and family will love. Remember to roast your almonds, properly mix your dough, use a proper baking dish, cut your chews with aluminum foil, and store them correctly. With these tips in mind, you will become a pro in making almond Chinese chews.
