Whole wheat flour is an often overlooked baking ingredient in many kitchens. However, it is a great substitute for traditional flour in many recipes, like this one for oatmeal cookies. • 1 cup light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups milk chocolate toffee bits (such as Heath), divided
Baking Instructions

1. Preheat your oven and prepare your ingredients.

Preheat your oven to 350°F. Grease a baking sheet with cooking spray or line it with parchment paper. Gather all your ingredients in one place, making sure that everything is at room temperature.

2. Cream the butter, almond butter and sugars.

Combine the softened butter, almond butter, granulated sugar, and light brown sugar in a large bowl. Use an electric mixer to beat the ingredients together until creamy and lightened in color. This should take around 2-3 minutes.

3. Mix in the eggs and vanilla.

Add the eggs and vanilla extract to the bowl and beat until fully combined with the creamed mixture. Scrape the bowl down with a spatula to ensure that everything is fully incorporated.

4. Add flour, baking powder, baking soda, and salt.

Add the flour, baking powder, baking soda and salt to the bowl. Mix with a spatula until the ingredients are fully incorporated into the cookie dough.

5. Fold in the toffee bits.

Add 1 cup of the milk chocolate toffee bits to the cookie dough, and use a spatula to gently fold them in.

6. Scoop cookie dough onto the baking sheet.

Using a cookie scoop or spoon, drop about 1 1/2 tablespoons of dough onto the prepared baking sheet. Leave about 2 inches between each cookie to allow for spreading during baking.

7. Top with remaining toffee bits.

Take the remaining 1/2 cup of toffee bits and sprinkle them on top of each cookie dough ball. Press them in to make sure that they stick to the dough.

8. Bake the cookies.

Place the baking sheet in the oven and bake the cookies for 10-12 minutes or until the edges are lightly browned. The cookies will still be slightly soft in the center, but will firm up as they cool.

9. Cool and Serve.

Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely. Serve and enjoy your almond butter cookies with toffee!

Expert Tips for Making Perfect Almond Butter Cookies with Toffee

1. Don’t Overmix the Cookie Dough

The more you mix and handle your cookie dough, the tougher your cookies will be. So, make sure to follow the instructions carefully and mix your dough only until it's just combined.

2. Use Almond Butter

Almond butter adds a nutty flavor and health benefits to your cookies. Make sure to use creamy almond butter as the chunky variant will make the texture of cookies a little coarse.

3. Chill the Cookie Dough

Chilled dough results in thicker, more luscious cookies that won't spread too much during baking. So, after dropping the dough balls onto the baking sheet, chill the tray for at least 30 minutes before baking.

4. Top the Cookies with More Toffee

The extra toffee on top of the cookies will make them look more appealing and add an extra crunch, so don't skimp on the topping!

5. Use the Right Type of Toffee

Make sure to use milk chocolate-covered toffee bits, such as Heath or Skor, as these work best with the almond butter flavor. Dark chocolate or plain toffee bits can work well if you prefer a more intense, richer flavor.

6. Store the Cooked Cookies Properly

If you're not serving the cookies immediately after baking, make sure to store them properly. Place them in an airtight container or sealable freezer bag and store them in the fridge for up to a week, or in the freezer for up to 3 months.

7. Baking Tips to Follow

  • Preheat your oven properly to ensure even baking of your cookies.
  • Leave sufficient space between the dough balls so that they can spread evenly while baking
  • Bake the cookies for the suggested time and remove them when the edges turn slightly brown.
  • Check the cookies frequently while baking to ensure they don't end up being burnt.

With all these tips and tricks, you're sure to make perfect almond butter cookies with toffee every time!
