ALL-IN-ONE HOLIDAY BUNDT CAKE

All-in-One Holiday Bundt Cake image

This holiday recipe comes from the baking expert Dorie Greenspan. She calls it "all-in-one" because it includes elements from both Thanksgiving and Christmas: pumpkin, nutmeg, cranberries and ginger. It's really the perfect dessert for either feast, or any occasion in between. If you like, half a cup of bittersweet chocolate chips make an unexpected but delicious addition.

Time 1h30m

Yield 12 or more servings

Number Of Ingredients 17

1 1/4 sticks (10 tablespoons) unsalted butter, at room temperature, plus more for the pan
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons ground cinnamon
1/4 teaspoon grated nutmeg
Pinch salt
1 1/2 teaspoons grated fresh ginger (or 1 teaspoon ginger powder)
1 cup granulated sugar
1/2 cup packed light brown sugar
2 large eggs, at room temperature
1 teaspoon pure vanilla extract
1 1/4 cups canned unsweetened pumpkin purée
1 large apple, peeled, cored and finely chopped
1 cup cranberries, halved or coarsely chopped
1 cup pecans, coarsely chopped
Maple icing (optional; see Note)

Steps:

  • Heat oven to 350 degrees with a rack in the center. Butter a 9- to 10-inch (12-cup) Bundt pan.
  • Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, salt and ginger powder, if you're using it instead of the grated ginger.
  • Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat together the remaining butter and both sugars at medium speed until light and fluffy, 2 or 3 minutes. Add the eggs one at a time, and beat for 1 minute after each addition. Beat in the vanilla.
  • Reduce the speed to low and add the pumpkin, apple and grated ginger, if using it. Don't be concerned if the batter looks curdled. Add the dry ingredients, mixing only until they are incorporated. With a rubber spatula, stir in the cranberries and pecans. Scrape the batter into the pan and smooth the top.
  • Bake directly on the oven rack for 60 to 70 minutes, or until a thin knife inserted into the center of the cake comes out clean. Transfer to a rack and cool for 10 minutes before unmolding, then cool to room temperature on the rack. Serve in thick slices.

Holiday season is that time of the year when everyone is excited to spend quality time with their loved ones and create beautiful memories. Celebrating holidays is almost never complete without sweet treats that add warmth and happiness to the occasion. Bundt cakes are a perfect dessert for such gatherings as they are visually appealing and offer a variety of flavors. An all-in-one holiday bundt cake recipe is a simple yet delicious option that can be easily prepared with basic ingredients. Let us go through some valuable tips that will make your all-in-one bundt cake recipe even better.

Tip 1: Choosing the right pan

Bundt cakes are famous for their distinctive patterned shape that is sculpted by the special bundt cake pan. It is essential to choose the right kind of pan which is sturdy, heat-resistant and non-stick. Make sure to use a pan that has a good release so that the cake comes out seamlessly in one beautiful piece. Metal, silicone and cast iron are some of the various types of bundt cake pans available in the market. According to your preference, you can choose the material and shape that will give perfect results.
Tip 1.1: Size of bundt cake pan
The size of the bundt cake pan plays a crucial role in the outcome of your recipe. Standard bundt cake pans usually hold around 12 cups of batter. Overfilling the pan might cause the cake to overflow during baking, resulting in a messy situation. On the other hand, underfilling might lead to an uneven and dense cake. Depending on the recipe, you must choose the right cake pan size that will give you the best results.

Tip 2: Preparing the batter

Preparing the batter is the most crucial part of any baking recipe. A well-mixed batter ensures a fluffy, moist and flavorful bundt cake. Mixing the ingredients in the correct order and proportion is vital for the batter to come together perfectly. It is advisable to bring all the ingredients to room temperature before you start mixing them. This will help in even distribution and prevent lumps. Usually, bundt cakes require you to mix the dry and wet ingredients separately and then combine them, gradually folding in the flour. Do not over-mix the batter as it may lead to gluten formation and a dense cake texture. Use a hand mixer or stand mixer with attachments according to the recipe instructions.
Tip 2.1: Adding extract and flavors
Adding extract and flavors is where you can get creative with your bundt cake recipe. Extracts like vanilla, almond, or orange, and spices like cinnamon or nutmeg, can take your bundt cake to the next level. It is essential to use good-quality flavorings that do not overpower the cake's taste. Consider incorporating seasonal ingredients like pumpkin puree, orange zest or cranberries to give your bundt cake a holiday twist.

Tip 3: Baking the cake

Baking any cake requires a little patience and care. The baking time and the oven temperature are crucial factors in determining the texture and moisture of the bundt cake. Generally, bundt cakes take longer to bake than regular cakes, so it is essential to take note of the recipe's baking time. Place the cake pan in the center of the oven and rotate it periodically to ensure even baking. A toothpick inserted in the center of the cake should come out clean to indicate that the cake is baked completely.
Tip 3.1: Cooling the cake
After the baking is completed, it is essential to cool the cake before removing it from the pan. Cooling helps the cake to settle and retains the flavor and texture. Let the bundt cake cool in the pan for 10 minutes before inverting it onto a cooling rack. Gently separate the pan from the cake, and let it cool completely before glazing or decorating.

Tip 4: Adding glaze and decoration

Adding glaze and decoration is the final step in creating your all-in-one holiday bundt cake. It is essential to choose a glaze that complements the cake and does not overpower it. In contrast, decoration can be as per your preference, whether you want to keep it simple or get creative. You can use frosting, ganache, chocolate chips, caramel or nuts to give a finishing touch to your bundt cake. Piping or drizzling glaze or frosting on top of the cake can also add an elegant touch to the final product.
Tip 4.1: Storing the cake
Storing the cake is important to keep it fresh for a longer duration. It is advisable to store the fully glazed and decorated bundt cake in an airtight container at room temperature for up to a week. If you have frosted the cake, avoid stacking it as it might smudge the frosting. Freezing the bundt cake in slices is also an alternative for longer storage.

Conclusion:

All-in-one holiday bundt cake recipes are an excellent option to treat your family and guests during the festive season. With the right pan, batter, baking and decoration, bundt cakes can be delightful and eye-catching desserts. We hope these valuable tips will help make your all-in-one bundt cake recipe a memorable one. Happy baking!
