This recipe was developed with Kellogg's All Bran cereal I have never used any other bran cereal for this so I cannot guarantee good results with anything else --- if desired a crumb topping can be sprinkled on top, see my recipe#184305 for the topping mixture.

EXTREME BANANA NUT BREAD 'EBNB'

Extreme Banana Nut Bread 'EBNB' image

This is my mom's dense, excellent, and definitely unhealthy banana nut bread recipe. It's always completely gone in minutes. This is great at parties, but hazardous at home. HEALTH WARNINGS: EBNB may be habit forming. A very flexible recipe that will accommodate changes based on what you have on hand. Use any type of fat in place of the butter, such as shortening or oil. It works with either brown or white sugar too.

Banana nut bread is a classic recipe loved by many. Adding All Bran cereal to the recipe adds a crunchy texture and a boost of fiber. If you're planning to make an All Bran banana nut bread, here are some valuable tips to help you make the perfect loaf.

Tip 1: Choose ripe bananas

The key to a flavorful banana nut bread is using ripe bananas. The riper the bananas, the sweeter they become. When the bananas start to develop brown spots, it's a good indicator that they're ripe and perfect for baking. Ripe bananas also mash easier, making it easier to mix them into the batter.

Tip 2: Use fresh nuts

Whether you're using walnuts, pecans, or almonds, make sure they're fresh. Nuts can become stale and lose their flavor over time. Rancid nuts can also ruin the flavor of your banana nut bread. If possible, buy your nuts in small quantities and store them in an airtight container in the refrigerator to keep them fresh.

Tip 3: Preheat your oven

Before you start mixing your ingredients, make sure your oven is preheated to the right temperature. This way, you won't have to wait for the oven to heat up while your batter is ready to go. Preheating your oven also ensures that your bread cooks evenly.

Tip 4: Don't overmix your batter

One of the most common mistakes when making banana bread is overmixing the batter. Overmixing the batter can lead to a tough, rubbery bread. Mix your ingredients just until they're combined. It's okay if there are still some lumps in the batter. This will give your bread a tender texture.

Tip 5: Grease your pan

Make sure you grease your bread pan before pouring in your batter. This will prevent the bread from sticking to the pan and make it easier to remove. You can use butter, cooking spray, or oil to grease your pan.

Tip 6: Add All Bran cereal carefully

When adding the All Bran cereal to your batter, be careful not to overmix. The cereal should be added gently and mixed just until it's incorporated. Overmixing the cereal can make your bread tough and dry.

Tip 7: Test for doneness

To make sure your bread is cooked through, insert a toothpick or cake tester into the center of the bread. If it comes out clean, the bread is ready. If there are still wet batter on the toothpick, cook the bread a little longer. Be careful not to overcook the bread, as it can become dry.

Tip 8: Cool your bread before slicing

After taking the bread out of the oven, let it cool in the pan for 5 to 10 minutes before transferring it to a cooling rack. Let the bread cool completely before slicing it. If you slice the bread while it's still warm, it can crumble and break apart.
Conclusion
Making All Bran banana nut bread is a delicious and healthy way to enjoy a classic recipe. By following these valuable tips, you'll be able to make the perfect loaf every time. Remember to use ripe bananas, fresh nuts, and preheat your oven. Also, be careful not to overmix your batter and make sure you grease your pan. Finally, test for doneness and cool your bread before slicing. Happy baking!
