GRILLED CHICKEN WITH ALABAMA WHITE BARBECUE SAUCE

Categories     main-dish

Time 9h15m

Yield 6 servings

Number Of Ingredients 16

1/4 cup sugar
Kosher salt and freshly ground black pepper
Two 12-ounce bottles amber beer, chilled
1 head garlic, split crosswise
2 fresh bay leaves
2 teaspoons whole black peppercorns
Two 4-pound chickens, cut into 8 pieces each
Vegetable oil, for brushing
1 cup mayonnaise
1/4 cup white wine vinegar
2 tablespoons drained prepared horseradish
2 teaspoons sugar
1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Hot pepper sauce, such as Tabasco, for seasoning

Steps:

  • For the chicken: In a pot large enough to hold the chicken, combine the sugar, 1/4 cup salt and 2 cups cold water. Stir until the salt and sugar dissolve. Pour in the beer and add the garlic, bay leaves and peppercorns. Submerge the chicken in the brine. Cover and refrigerate at least 8 hours and up to overnight.
  • For the Alabama white barbecue sauce: Meanwhile, whisk together the mayonnaise, vinegar, horseradish, sugar and Worcestershire in a medium bowl until smooth. Season with 1 teaspoon salt, hot sauce to taste and a liberal grinding of black pepper. Cover and refrigerate until you're ready to cook the chicken. (Can be made a day ahead, along with the chicken brine.)
  • Prepare a grill for medium indirect grilling. Drain and rinse the chicken and pat very dry. Season the chicken lightly with salt and more liberally with black pepper. Brush lightly with vegetable oil.
  • Brush the grill grates with vegetable oil and lay the chicken, bone-side down, on the indirect heat side of the grill. Cover and cook until the skin is golden and the chicken is about three-quarters cooked (130 to 135 degrees F on an instant read thermometer), 20 to 25 minutes. Flip the chicken pieces so they are skin-side down and continue indirect grilling until the chicken is cooked through and reads 165 degrees F on an instant-read thermometer, about 15 minutes more.
  • Brush the chicken all over with some of the Alabama white barbecue sauce and move the chicken, skin-side down, to the direct heat side of the grill. Grill just until the skin crisps, about 3 minutes, moving as necessary to keep it from burning. Let rest for 5 minutes before serving.
  • Serve the remaining Alabama white sauce on the side for dipping.

Categories     main-dish

Time 40m

Yield 6 burgers

Number Of Ingredients 16

3/4 cup mayonnaise
1/4 cup apple cider vinegar
1 tablespoon lemon juice
2 tablespoons white sugar
2 teaspoons freshly ground black pepper
12 slices thick cut hickory smoked bacon
2 pounds ground pork
1 tablespoon smoked paprika
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
1 1/2 teaspoons salt
1/4 teaspoon freshly ground black pepper
Vegetable oil, for grill rack
6 thick slices smoked Gouda (recommended: Boar's Head)
6 kaiser rolls, split
2 1/2 cups shredded green cabbage

Steps:

  • Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
  • In a small mixing bowl combine the mayonnaise, apple cider vinegar, lemon juice, sugar, and black pepper. Mix until well combined and refrigerate until serving.
  • Heat a large fireproof nonstick skillet on the grill. Add the bacon and cook over medium-high heat until the bacon is crispy, about 5 minutes, flipping once. Drain on paper towels. Reserve the rendered bacon fat from the skillet.
  • Combine the pork, smoked paprika, chili powder, cayenne, salt, and pepper in a large bowl. Add 1 1/2 tablespoons of the rendered bacon fat from the skillet. Mix well, handling the meat as little as possible to avoid compacting. Divide the mixture into 6 equal portions and form the portions into patties to fit the size of the rolls.
  • Brush the grill rack with oil. Arrange the patties on the rack, cover, and cook, turning once just until done, about 4 minutes on each side for medium-rare. During the last few minutes of cooking, top the burgers with equal amounts of smoked Gouda and put the rolls, cut side down, on the outer edges of the rack to toast lightly.
  • To assemble the burgers, spread a generous amount of Alabama White Barbecue Sauce on the cut sides of the rolls. On each roll bottom, put some shredded cabbage, a cheese-topped patty, and 2 slices of bacon. Cover with the roll tops and serve.

What is Alabama White Barbecue Sauce?

Alabama White Barbecue Sauce is a unique sauce that originated in northern Alabama in the 1920s. It is a sauce that is primarily mayonnaise-based, with vinegar, mustard, and a little bit of horseradish added for flavor. It is commonly served as a condiment alongside grilled or smoked chicken, pork, or even beef.

The History Behind Alabama White Barbecue Sauce

The origins of Alabama White Barbecue Sauce can be traced back to the 1920s when a man named Big Bob Gibson started serving chicken with white sauce at his restaurant in Decatur, Alabama. Barbecue sauces are an integral part of American cuisine, and Alabama white barbecue sauce is one of the most versatile and unique options to consider. This sauce gets its name from its white color and origin in Alabama, where it's commonly used as a dipping and marinating sauce. If you're interested in making Alabama white barbecue sauce, there are a few things to keep in mind.

Tip #1: Choose the Right Ingredients

The key to making great Alabama white barbecue sauce is to choose the right ingredients. One of the essential components of this sauce is mayonnaise, which helps create its distinctive white color and creamy texture. You'll also need vinegar, lemon juice, garlic, and mustard to give the sauce a tangy, acidic flavor. Salt, black pepper, cayenne pepper, and paprika are typical spices used for seasoning.
Mayonnaise
Mayonnaise is the base for this sauce, and it's essential to choose a high-quality, full-fat mayonnaise for the best results. Low-fat or low-calorie mayonnaise might not deliver the same richness or thickness that the sauce requires.
Vinegar
While mayonnaise gives the sauce its signature creaminess, vinegar provides the necessary acidity and brightness to balance it out. You can use apple cider vinegar or white vinegar depending on your preference.
Lemon Juice
Lemon juice is added to the sauce to give it a tangy flavor, and it also helps to cut through the richness of the mayonnaise. Fresh lemon juice is always best, but bottled lemon juice can work in a pinch.
Garlic
Garlic is an essential ingredient that gives the sauce a depth of flavor and a slight bite. You can adjust the amount of garlic based on how strong you want the flavor to be.
Mustard
Mustard is used to add additional tanginess and depth to the sauce. You can use any type of mustard, but many recipes call for Dijon mustard, which has a more robust flavor.
Spices
Lastly, you'll need a combination of spices to season the sauce, including salt, black pepper, cayenne pepper, and paprika. Adjust the amount of spice based on your preference, but be sure not to overpower the sauce.

Tip #2: Mix Ingredients Carefully

Mixing the ingredients for Alabama white barbecue sauce correctly is one of the most crucial steps in the recipe. The mayonnaise is the foundation of the sauce, and you'll want to add the other ingredients slowly to avoid breaking or separating the sauce.
Step 1: Combine Mayonnaise and Other Liquid Ingredients
Begin by whisking the mayonnaise, vinegar, and lemon juice together until the mixture is smooth and evenly combined. The combination of these liquid ingredients is essential to creating the right consistency for the sauce.
Step 2: Add Garlic and Mustard
Next, add the garlic and mustard, whisking the mixture thoroughly. You'll want to make sure that the garlic and mustard are evenly distributed throughout the sauce.
Step 3: Season with Spices
Lastly, season the sauce with salt, black pepper, cayenne pepper, and paprika, whisking until everything is combined. You'll want to adjust the seasoning to your liking, but be careful not to add too much spice or salt, as this can overpower the sauce.

Tip #3: Use Alabama White Barbecue Sauce Properly

Once you've made your Alabama white barbecue sauce, the next step is to figure out how to use it. This sauce is incredibly versatile and can be used in a variety of ways, including as a dipping sauce, marinade, or dressing. Here are a few tips on how to use Alabama white barbecue sauce:
As a Marinade
Alabama white barbecue sauce is particularly suitable as a marinade for chicken, fish, and pork. The acidic ingredients in the sauce tenderize the meat while the creaminess adds a depth of flavor. Apply the sauce to the meat before grilling, baking or sautéing, and let it rest for a few hours before cooking for the best results.
As a Dipping Sauce
Alabama white barbecue sauce is naturally creamy, making it an ideal dipping sauce for grilled or fried foods like chicken tenders, chicken wings, and French fries. You can also add a little extra hot sauce or cayenne pepper to the sauce to give it a kick for those who prefer a spicier dipping sauce.
As a Salad Dressing
Another creative use for this sauce is as a salad dressing. Since it's a creamy and tangy sauce, it pairs well with greens like spinach, arugula, and romaine lettuce. You can also use it as a dressing for coleslaw or potato salad.

Conclusion

Alabama white barbecue sauce is a classic Southern recipe that is perfect for any occasion. It's creamy, tangy, and versatile, making it a go-to sauce for a variety of dishes. When making Alabama White barbecue sauce, remember to choose the right ingredients, mix them carefully, and use the sauce properly to get the best results. With these tips in mind, you'll be well on your way to making this delicious sauce like a pro.
