Time 45m

Yield 4 sandwiches

Number Of Ingredients 15

1 rotisserie chicken, skin removed and reserved and meat shredded
1/2 cup mayonnaise
2 tablespoons apple cider vinegar
1/2 tablespoon prepared horseradish
1/2 teaspoon Dijon mustard
1/2 teaspoon freshly ground black pepper
Kosher salt
1/2 small head red cabbage, cored and thinly sliced
1/2 teaspoon celery salt
1/2 tablespoon sugar
1 to 2 dashes hot sauce, optional
5 kosher dill pickle spears, thinly sliced lengthwise into ribbons, plus 1/4 cup dill pickle brine
1 carrot, shredded on the large holes of a box grater
Softened unsalted butter, for the toast
8 slices fresh Texas toast bread

Steps:

  • For the chicken: Place the chicken skin in a single layer in a large nonstick skillet. Cook the skin over low heat, flipping once, until it crisps up, about 10 minutes. Meanwhile, shred the chicken meat into bite-size pieces into a large bowl. Reserve the wings to nibble on or for another use.
  • In a large bowl, whisk together the mayo, vinegar, horseradish, mustard, pepper and salt to taste. Add the dressing to the shredded chicken and toss to coat. Set aside to let the dressing soak into the chicken.
  • For the pickle slaw: In a medium bowl, add the cabbage, celery salt, sugar, hot sauce, if using, pickles and pickle brine, and carrot. Toss together to mix well. Taste and the adjust seasonings and set aside.
  • Preheat a griddle pan over medium-low heat. Butter one side of each slice of bread. Cook the buttered sides on the griddle until toasted and golden, about 4 minutes.
  • Top the unbuttered sides of 4 slices of the toast with the crispy chicken skin, then top with the chicken and pickle slaw. Top each sandwich with a slice of bread with the buttered-side up. Serve.

Valuable Tips for Making Alabama Chicken Sandwich Recipes

If you want to make an Alabama chicken sandwich that will be loved by all, there are several tips you should follow. Here are a few valuable tips for making Alabama chicken sandwich recipes that are sure to make your sandwich stand out from the crowd.
1. Choose the Right Type of Chicken
When making an Alabama chicken sandwich, the quality of the chicken you choose is crucial. You want chicken that is tender, juicy, and flavorful. You can use boneless, skinless chicken breasts, thighs, or even chicken tenders, but make sure to remove any excess fat or connective tissue. You can also brine the chicken beforehand to ensure that it stays juicy during cooking.
2. Brine the Chicken
Brining is a process that involves soaking the chicken in a solution of salt, sugar, and water for several hours before cooking. This helps to not only add flavor to the chicken but also helps to keep it moist and tender. To make a simple brine, dissolve 1/4 cup of salt and 1/4 cup of sugar in 4 cups of water. Place the chicken in the brine and refrigerate for 2-4 hours before cooking.
3. Marinate the Chicken
Marinating the chicken is another great way to add flavor to your Alabama chicken sandwich. You can use a store-bought marinade or make your own with a combination of spices, oil, and vinegar or lemon juice. Allow the chicken to marinate for at least two hours or overnight for maximum flavor.
4. Grill or Bake the Chicken
Grilling or baking the chicken is the best way to cook it for an Alabama chicken sandwich. Grilling will give the chicken a smoky flavor, while baking will keep it juicy and tender. If grilling, preheat the grill to medium-high heat and grill the chicken for 5-6 minutes per side or until fully cooked. If baking, preheat the oven to 375 degrees and bake the chicken for 20-25 minutes or until cooked through.
5. Choose the Right Bread
The bread you choose for your Alabama chicken sandwich is just as important as the chicken itself. A good choice is a soft bun or roll, like a potato or brioche bun, that will not overpower the flavor of the chicken. You can also lightly toast the bread to give it a bit of crunch.
6. Add Toppings
The toppings you add to your Alabama chicken sandwich are what will make it unique and delicious. A classic topping is coleslaw, which adds a refreshing crunch and tangy flavor. You can also add sliced pickles, onions, cheese, bacon, or your favorite sauce, like ranch or barbecue sauce.
7. Serve with a Side
An Alabama chicken sandwich is even better when served with a side dish. Some great options include sweet potato fries, onion rings, mac and cheese, or a side salad. This will round out the meal and make it even more satisfying.
8. Enjoy!
The most important tip for making an Alabama chicken sandwich recipe is to enjoy it! The best way to enjoy your sandwich is by sharing it with family and friends. So, fire up the grill or preheat the oven, gather your favorite toppings, and enjoy a delicious Alabama chicken sandwich!
