KATHYS FRIED HALLOUMI CHEESE WITH LIME AND CAPER VINAIGRETTE
A starter for 6 or light meal for 4 with French/pitta bread We had this as a delicious starter at a friends house, and I begged her for the recipe, I cant wait to try it!! I'm guessing at the amount of halloumi, but basically you want to have about four 'fingers' per person, as a starter. The dressing was marvellous! I love halloumi but have never tried making it, well, thats now going to change :D

Steps:
- Pat cheese dry with kitchen paper.
- Slice into fingers.
- Prepare dressing by mixing all ingredients together in bowl. Check taste.
- You can make it ahead of time and put in fridge overnight, but take out to warm up a little before serving.
- Coat cheese slices in seasoned flour.
- Heat oil in frying pan.
- Fry cheese slices in hot oil, about 1 minute each side, till golden.
- Serve immediately with dressing poured over.
- Serve with Greek pitta bread/French bread.

CYPRIOT FRIED HALOUMY CHEESE (SAGANAKI HALOUMI)
With gluten free option. A very quick to prepare tasty meze. We enjoy this as a delicious breakfast item or it could always be a snack! I serve it with pita bread but a crusty bread would be very good. Modified from The Complete Middle East Cookbook by Tess Mallos, Cyprus section.

Steps:
- Cut cheese into 1/4 inch slices, dip in water and dredge in flour if desired (I do like it this way).
- Heat enough oil in a small frying pan to cover base, fry cheese until slightly golden on each side.
- Squeeze some lemon on top and serve with rest of the lemon wedges and a crusty bread or some pita to dip into the lemon flavoured oil.

AKROTIRI: CYPRIOT PORK SOUVLAKI WITH TZATZIKI
This recipe is from week three of my food blog, "Travel by Stove." I'm attempting to cook one meal from every country on Earth, and Akrotiri is my third stop. Akrotiri was a tough one because it is basically an RAF base on the island of Cyprus, so the food is heavily influenced by the British people who live and work there. Pork souvlaki is a kind of Cypriot fast food, cooked on skewers and served in a hot pita. It is topped with a blend of cucumber and Greek yogurt called tzatziki.

Steps:
- Whisk the olive oil, lemon juice, garlic and oregano together in a large bowl. Add the cubed pork and toss until coated. Cover and refrigerate for one hour.
- Thread the pork onto skewers (you can use metal or soaked wooden ones). Cook over hot coals or under the broiler, turning frequently, until nicely blackened but not overcooked.
- Meanwhile, mix the tzatziki ingredients together in a small bowl.
- Add the pork to hot pita bread and fold. Top with tomato, onion, cucumber and shredded lettuce. Add about 1 to 2 tablespoons tzatziki to the top of each serving.

FRIED HALLOUMI WITH HONEY AND WALNUTS
To easily roast the walnuts, place chopped nuts on a microwavable plate. Microwave HIGH at 30 second intervals, checking as to not burn.

Steps:
- Heat oil in a heavy skillet over medium heat.
- Add the halloumi and brown well on all sides, about 2 minutes per side.
- Remove to a serving platter or bowl and top with honey and roasted walnuts. Garnish with chopped fresh mint, if desired.
