2 cups shredded cooked chicken
½ (8 ounce) package Neufchatel cheese, softened
1 (4 ounce) can hot fire-roasted diced green chiles (such as Ortega®)
¼ cup chicken broth
1 ½ tablespoons chicken taco seasoning mix (such as McCormick®)
½ teaspoon salt
¼ teaspoon ground black pepper
6 (10 inch) flour tortillas
1 cup shredded Mexican cheese blend, or to taste
avocado oil cooking spray

Steps:

roughly chopped cilantro handful
lime juice 2 teaspoons
roughly chopped red chilies 2 whole
salt ¼ teaspoon
small minced red onion ½
minced garlic 2 cloves
crushed chili ¼ teaspoon
honey 1 tablespoon
roughly chopped parsley handful
lime juice 2 teaspoons
salt ¼ teaspoon
black pepper ¼ teaspoon
paprika 1 teaspoon
olive oil 2 teaspoon
minced garlic 2 cloves

peeled shrimp 6½ ounces
flour tortillas 4
grated sharp cheddar ½ cup

Steps:

  • Mix all of the ingredients for the salsa in a bowl and let it stand for at least 30 minutes.
  • Mix all of the ingredients for the marinade and add 6½ ounces of shrimp. Mix well so that all the shrimp are covered in marinade. Let this sit in the fridge for at least 30 minutes.
  • When the shrimp have finished marinating, put a pan on medium heat (approximately 200°F) and add some marinade to the pan. Add shrimp to the pan (the shrimp should sizzle when they touch the pan). Cook the shrimp until they gain color on both sides (approximately 3 minutes cook time on each side).
  • To assemble the tortillas, lay the tortilla flat, spread a tablespoon of salsa across the tortilla, add around 6-9 shrimp over the salsa and then sprinkle some cheese over the shrimp. Fold the right and left sides of the tortilla and then roll the bottom upwards to close it.
  • Bring a pan or a skillet of oil to temperature (approximately 350°F). Add the filled tortilla to the pan and fry for approximately 10 - 15 seconds on each side (until golden brown).
  • Serve the chimichangas with sour cream, salsa or guacamole if desired.

1/4 cup long-grain white rice
Kosher salt
1/3 cup fresh cilantro leaves, roughly chopped
1 teaspoon finely grated lime zest (from 1 lime)
Four 10-inch (burrito-size) flour tortillas
1 cup canned refried black beans
1 1/2 cups shredded Mexican cheese blend (about 6 ounces)
Olive oil, for brushing
Serving suggestion: shredded iceberg lettuce, pico de gallo, diced avocado, sour cream and lime wedges

Steps:

  • Prepare the popcorn shrimp according to the package directions for the air fryer.
