1 pound large shrimp - peeled, deveined, and butterflied with tails on
2 medium eggs, beaten
1 ½ cups panko bread crumbs
nonstick cooking spray

1 cup diced mango
⅓ cup diced red bell pepper
2 tablespoons fresh lime juice
1 small jalapeno pepper, seeded and minced

1 pound raw shrimp
1 large egg
⅛ teaspoon cayenne pepper, or to taste
