AIM'S FAVORITE PICKLE CHEESE MELT



Aim's Favorite Pickle Cheese Melt image

You know, growing up, I had all sorts of funny combos of food I liked. This one seems to be the one I am still eating when I want a snack and nothing else in the house sounds good. I love it with Chicken Noodle Soup.

2 slices white bread
2 slices American cheese (Kraft is my favorite!)
9 dill pickle slices (I usually use the thin hamburger dills)
butter, for frying

Steps:

  • Preheat a skillet and toss in enough butter to fry your sandwich. I tend to use more than necessary, usually, because I like mine more wet than toasty.
  • Place the pickle slices on top of the cheese and top with the other cheese slice and bread.
  • Fry the sandwich until it gets browned like you like it, but long enough on either side to melt the cheese until gooey.
  • Eat it while it's hot!

FRIED CHEESY PICKLES

Number Of Ingredients 6

Flavorless oil, for deep-frying
2 cups ranch dressing
Sriracha, to taste
12 dill pickle spears
12 slices Havarti cheese
12 egg roll wrappers

Steps:

  • Pour 2 inches oil into a large pot and heat to 360 degrees F. Line a plate with a paper towel.
  • Stir together the ranch dressing and sriracha to taste in a bowl. Set aside.
  • Drain the pickles and use a paper towel to pat off any excess moisture (I like to save the brine and use it again!). Wrap each pickle in a slice of cheese, then fold and roll the cheese-wrapped pickle in an egg roll wrapper. Fold up the left side, then the right and roll up tightly like a burrito, using a bit of water on your finger to seal the sides.
  • Working in batches to not overcrowd the pot, fry the pickles until golden brown and crispy on all sides, 2 to 3 minutes. Transfer to the lined plate to drain and cool slightly. Slice in half crosswise and serve with the Sriracha ranch.

CRISPY CHEESE PICKLE CHIPS IN THE OVEN



Crispy Cheese Pickle Chips in the Oven image

Number Of Ingredients 4

Muffin pan (regular size or mini)
Shredded cheese (I used a Mexican blend)
Thin sliced dill pickles
Everything Bagel Seasoning (optional - you can use any seasoning you want)

Steps:

  • Preheat oven to 350 degrees
  • Sprinkle 1 teaspoon shredded cheese into a non stick muffin pan.
  • Place one pickle on top of the shredded cheese.
  • Sprinkle about 1/2 teaspoon shredded cheese on top of the pickle. It won't cover it completely and that's okay.
  • Sprinkle each chip with Everything bagel seasoning if using. Note: you can use any seasoning you want you you can bake them without any seasoning. I want to encourage you to try them both ways.
  • Bake at 350 degrees for about 6 minutes or until the edges of the cheese are dark brown and all the cheese has fully melted.
  • I've noticed the silicone pans take about 3 minutes longer to get those crispy edges.
  • These cheese should be bubbling and flat. If the cheese is not bubbling they will not turn out crispy. Be sure not to take them out of the oven too soon. If you do it will just be melted cheese and it didn't have enough time to form a cheese crust that holds the chip together. The darker brown the cheese the crunchier the chip.

These tasty snacks are whole kosher dill pickles that are covered with cream cheese and wrapped with thin slices of deli beef.

8 kosher dill pickles, patted dry
2 (8 ounce) packages cream cheese, softened
2 ½ ounces thin-sliced beef luncheon meat

Steps:

  • Spread or pat cream cheese around each pickle. Wrap 2 sheets of meat around each pickle. Refrigerate pickles overnight, and slice before serving.
