1 cup packed brown sugar
2 eggs
1/4 cup unsweetened apple juice
1/4 teaspoon lemon extract
1 1/2 cups all-purpose flour
1 cup quick-cooking oats
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
3/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 1/2 cups tart apples, peeled and chopped (2 medium)
1 cup raisins
1/2 cup chopped walnuts

Steps:

  • In a mixing bowl, cream butter and brown sugar until crumbly, about 2 minutes.
  • Add eggs, one at a time, beating well after each addition.
  • Add apple juice and lemon extract.
  • Combine the flour, oats, cinnamon, baking soda, salt, nutmeg and cloves.
  • Gradually add to creamed mixture.
  • Stir in the apples, raisins and walnuts.
  • Drop by rounded tablespoonfuls 2-inch apart onto ungreased baking sheets.

3 cups old-fashioned oatmeal
1 cup raisins

Steps:

  • Preheat oven to 350 degree Fahrenheit.
  • In small bowl mix flour, baking soda, cinnamon and salt.
  • Cream butter and sugars in electric mixer.
  • Add eggs and vanilla beating well.
  • Add flour mix, mixing well.
  • Add oats, raisins, and nuts, mixing well.
  • Drop tablespoon size dough on lightly greased baking sheet.
  • Bake 10-12 minutes.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the shortening and sugar. Beat in the eggs until well blended. 1 teaspoon baking powder
1/2 teaspoon baking soda

2 large eggs
1 tablespoon vanilla
3 cups quick oats
