Categories     main-dish

Time 1h

Yield 6 servings

Number Of Ingredients 11

3 pounds red potatoes, peeled and sliced 1/4-inch thick
Salt
Vegetable oil, to coat pan
1 pound lean ground beef
1/2 onion, chopped
4 tablespoons (1/2 stick) butter
1/4 cup all-purpose flour
Black pepper
2 cups milk
2 cups grated sharp Cheddar
1/2 cup unseasoned dry breadcrumbs

Steps:

  • Place the potatoes in a large saucepan with water to cover by 1 inch. Add a generous pinch of salt and cook for 15 minutes, or until tender. Potatoes cook quickly. Test often for tenderness and don't overcook them. Alternatively, cook the potatoes in a pressure cooker for 5 minutes, releasing the pressure immediately to prevent overcooking. Drain the potatoes and arrange them in a 6- by 9- by 2-inch casserole dish.
  • In a large skillet, add a little oil to coat the pan. Combine the beef and onion and cook together over medium heat until the beef is browned and the onion softened, about 10 minutes. Drain excess fat.
  • Preheat the oven to 350 degrees F.
  • Melt the butter in a medium saucepan and whisk in the flour to make a roux. Cook over medium heat, whisking constantly, until the mixture bubbles and the flour turns light brown in color. Gradually whisk in the milk and continue to stir while cooking over medium heat. When the mixture thickens, season with salt and pepper, then stir in the cheese and browned beef and onions.
  • Pour the ground beef mixture over the potatoes and bake the casserole for 20 minutes, until heated through and bubbling. Sprinkle the breadcrumbs on top of the casserole and bake until the crumbs are toasted, about 5 minutes longer.

African meat potatoes casserole recipe is a delicious and nutritious meal enjoyed by many people. The dish is easy to prepare and can be enjoyed by the whole family. This article will provide some valuable tips on how to make the perfect African meat potatoes casserole recipe.

Tip 1: Choose the Right Type of Meat

The type of meat you choose for your African meat potatoes casserole recipe will greatly affect the taste and texture of the dish. It is best to choose a lean type of meat like beef, lamb, or chicken. Lean meat is low in fat and will not make the dish too greasy. On the other hand, fatty meat like pork or bacon will make the dish too greasy and unhealthy.
Tip 1.1: Cut the Meat into Small Pieces
To ensure that the meat cooks evenly, it is best to cut it into small pieces. The smaller the pieces, the easier it is for the heat to penetrate the meat and cook it evenly. Make sure that each piece is roughly the same size to ensure even cooking.

Tip 2: Choose the Right Type of Potatoes

The type of potatoes you use will also affect the taste and texture of your African meat potatoes casserole recipe. Choose a type of potato that is firm and will hold its shape when cooked. Potatoes that are too soft or mushy will not hold up well in the casserole.
Tip 2.1: Peel and Cut the Potatoes into Even Slices
It is important to peel and cut the potatoes into even slices to ensure that they cook evenly. Potatoes that are cut too thick will take longer to cook, while potatoes that are cut too thin will turn into mush.

Tip 3: Use the Right Spices

Spices play an important role in African cuisine and the right combination of spices can make all the difference in your African meat potatoes casserole recipe. Traditional African spices like cumin, coriander, ginger, and garlic can be used to add flavor to the dish.
Tip 3.1: Toast and Grind Spices
Toasting and grinding spices can bring out their flavors and make them more aromatic. Heat the spices in a dry pan over medium heat until they become fragrant. Let them cool and then grind them into a powder using a mortar and pestle or a spice grinder.

Tip 4: Add Vegetables to the Casserole

Vegetables can add flavor, texture, and nutrition to your African meat potatoes casserole recipe. Add vegetables like carrots, bell peppers, and onions to the dish to give it a more colorful and flavorful taste.
Tip 4.1: Cut Vegetables into Even Pieces
Make sure that you cut the vegetables into even pieces to ensure that they cook evenly. Vegetables that are cut too large will take longer to cook, while vegetables that are cut too small will turn into mush.

Tip 5: Cook the Casserole Slowly

Cooking the African meat potatoes casserole recipe slowly will ensure that the flavors develop and the meat becomes tender. It is best to cook the casserole on low heat for several hours to achieve the best results.
Tip 5.1: Cover the Casserole with Foil
Covering the casserole with foil will help to retain the moisture and prevent the casserole from drying out. You can remove the foil during the last few minutes of cooking to allow the top to brown and become crispy.

Tip 6: Serve the Casserole with Side Dishes

African meat potatoes casserole recipe can be served with a variety of side dishes like rice, bread, or salad. These side dishes can complement the flavors of the casserole and make for a more filling meal.
Tip 6.1: Add Some Fresh Herbs to the Dish
Adding some fresh herbs like cilantro, parsley, or basil can add a burst of freshness to the dish. Simply chop the herbs and sprinkle them over the top of the casserole before serving.
