Time 30m

Yield 4 servings

Number Of Ingredients 15

½ lb top sirloin steak
pico de gallo, or salsa of your choice
4 corn tortillas
1 ripe avocado
⅓ cup fresh cilantro
3 tablespoons lime juice
⅔ cup water
salt, to taste
1 ½ teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon black pepper
1 clove garlic, minced
2 tablespoons lime juice, or 1 lime

Steps:

  • Place the avocado, cilantro, lime juice, water, and salt in a blender or food processor. Blend until smooth and set aside.
  • In a small bowl, combine the chili powder, cumin, oregano, salt, pepper, garlic, and lime juice.
  • Rub the chili lime rub all over the steak in a thin, even layer.
  • Grill the steak on either a grill or stove-top grill pan. To get the "X" grill marks, sear the steak for 1 minute, then adjust about 90 degrees and grill for another minute. Flip the steak when you've achieved desired grill marks and repeat the process on the other side.

  • Prepare the tacos by topping the corn tortillas with a few strips of meat, salsa, the avocado cilantro lime sauce, and cilantro, and serve.

Yield Serves 4

Number Of Ingredients 16

For the pasilla-guajillo adobo:
2 ounces pasilla chiles (6), wiped clean, stemmed, slit open, seeded, and deveined
2 ounces guajillo chiles (8), wiped clean, stemmed, slit open, seeded, and deveined
1/4 cup distilled white vinegar
1/4 cup light Mexican beer
1/2 cup chopped white onion
4 garlic cloves, peeled
1 teaspoon fine salt, or 2 teaspoons kosher salt
1/2 teaspoon dried oregano, preferably Mexican
1/4 teaspoon cumin seeds
5 whole cloves
For the steak:
2 pounds skirt steak, cut into four 8- to 9-inch pieces
1 teaspoon fine salt, or 2 teaspoons kosher salt
1/2 cup pasilla-guajillo adobo (above)
About 1 tablespoon mild olive oil or vegetable oil

Steps:

  • Make the adobo:
  • Heat a comal, griddle, or heavy skillet over medium-low heat, and toast the chiles 2 or 3 at a time, turning them over and pressing down on them with tongs frequently, until the chiles are fragrant, about 1 minute per batch. Soak the chiles in enough cold water to cover until they're soft, about 30 minutes. Drain and discard the soaking water.
  • Put the vinegar and beer in the blender jar with the chiles and the remaining adobo ingredients. Blend until smooth, at least 3 minutes, adding a little water if necessary to puree. If you like a silky, smooth texture, strain the adobo through a medium-mesh sieve. Set aside 1/2 cup of the adobo to marinate the steak, and keep the rest in an airtight container in the refrigerator for up to five days or in the freezer for up to one month.
  • Make the steak:
  • Pat the steaks dry, season them with the salt, then coat them generously with adobo. Let them marinate in the refrigerator for 1 to 2 hours.
  • Heat a grill or grill pan over medium-high heat. Lightly oil the grill or grill pan and cook the steaks, 3 to 5 minutes on each side for medium-rare, depending on their thickness. Let the steaks rest for 5 minutes before slicing for tacos or serving as whole steaks.

  • Adobo sauce
  • Lime juice
  • Garlic cloves
  • Cumin powder
  • Chili powder
  • Cayenne pepper
  • Salt and pepper
Marinade and Cooking the Steak

In order to make the perfect adobo lime steak for your tacos recipe, you need to prepare a flavorful marinade to soak the meat in. Mix together the adobo sauce, lime juice, garlic, cumin, chili powder, cayenne pepper, and salt and pepper in a bowl. Take your steak and generously coat it with the marinade. Let it sit in the refrigerator for at least an hour or overnight for the best results.

Place the steak onto the grill or skillet and cook for about 5-6 minutes on each side, depending on how thick the steak is and how you like it cooked. Valuable Tips when Making Adobo Lime Steak Tacos Recipes

When it comes to preparing Adobo Lime Steak Tacos Recipes, there are a few tips that you should keep in mind to ensure that your final product is as delicious as it is visually appealing. Some of the most valuable tips include:
1. Choose the Right Cut of Meat
Your Adobo Lime Steak Tacos Recipe will only be as good as the quality of the meat you choose. Instead of opting for cheaper cuts, invest in high quality steak that has been well-marbled with fat. This will make your meat tender and juicy, which will ultimately enhance the flavor of your tacos.
2. Use Fresh Lime Juice
When preparing your marinade, it is essential to use fresh lime juice. This will give your meat a zesty, citrusy flavor that pairs perfectly with the other flavors in your tacos. Avoid using bottled lime juice, as it will not provide the same level of flavor as fresh lime juice.
3. Marinate Your Meat Overnight
Marinating your steak for a minimum of two hours is recommended, but allowing it to sit overnight in the fridge will provide the best results. This will allow the flavors to penetrate deeper into the meat, resulting in a more intense flavor and tender texture.
4. Don't Overcook Your Meat
The cooking process can make or break your Adobo Lime Steak Tacos Recipe. Overcooking your steak can make it tough and chewy, which will detract from the overall flavor and texture of your tacos. Cook your steak to medium-rare or medium, as this will provide the perfect balance between flavor and tenderness.
5. Experiment with Different Toppings
While the steak is certainly the star of the show, the toppings you choose can make a huge difference in the taste of your tacos. Consider experimenting with different toppings, such as guacamole, pico de gallo, sour cream, or shredded cheese. These will add extra flavor and texture to your tacos, making them even more delicious.
6. Warm Your Tortillas Before Serving
One final tip to keep in mind when preparing your Adobo Lime Steak Tacos Recipe is to warm your tortillas before serving. This will make them more pliable and easier to work with, and will also enhance their flavor. You can do this by warming them up in a skillet for a few seconds on each side, or by placing them in the oven on low heat for a few minutes. By keeping these tips in mind when preparing your Adobo Lime Steak Tacos Recipe, you can ensure that your final product is not only delicious, but also visually stunning. With the right ingredients and cooking techniques, you can create a dish that is sure to impress your guests and leave them wanting more.
