BANANA YEAST BREAD

Banana Yeast Bread image

Though our two children (now grown; we have one granddaughter) dislike bananas, they've always enjoyed this. It's been a standby since my grandmother shared the recipe before I was married. Cooking is fun for me...but I have to admit I would rather bake than make a meal. This yeast bread is my favorite. -Maralee Meyer, Milford, Nebraska

BANANA NUT RAISIN BREAD FOR ABM

Banana Nut Raisin Bread for Abm image

I found this recipe on allrecipes.com and wanted to post it here for safe keeping. This is the best thing that has ever come out of my bread machine! A light fluffy tasty bread that my family gobbled up and asked for more! Remove your predetermined ideas of banana bread and try this yeast bread, the banana flavor is very subtle, but I think it adds to the nice texture. I am posting the recipe as I found it, but be warned I had to reduce the amount of yeast I used because when i used it with the full 2 1/2 teaspoons the dough spilled over the top of my ABM. I had better results with 2 tsp.

ABM BANANA YEAST BREAD

Abm Banana Yeast Bread image

This is not a traditional sweet bread but it is awesome hot out of the bread machine with a little butter. Unfortunately this is not a recipe you can set up on a timer to start later. You will need to "babysit" it for the mixing cycle as the moisture of bananas can vary greatly and you may need to add more flour or water if the moisture content needs adjusting. The prep time includes the babysitting of your dough ball - the cook time is the full bread machine cycle.

Categories     Yeast Breads

Time 3h10m

Yield 1 loaf

Number Of Ingredients 9

3 overripe bananas
1/4 cup molasses
2 tablespoons butter
3 cups white bread flour
1/2 cup white bread flour, to adjust moisture content
1/3 cup powdered milk
3/4 teaspoon salt
2 1/4 teaspoons active dry yeast
cinnamon (optional) or spices (optional)

Steps:

  • Layer ingredients in machine in the order listed or as per your machines instructions.
  • Set to 1.5 lb loaf and press start.
  • Towards the end of the mix cycle your dough ball should move freely in the machine without sticking to the sides (needs more flour) and should pick up all the loose ingredients (needs more water). One your dough ball looks fine you can let the machine do the rest of the work for you.

Yield Makes one 9x5" loaf

Number Of Ingredients 13

1/2 cup (1 stick) unsalted butter, at room temperature, plus more for pan
1 2/3 cups all-purpose flour, plus more for pan
4 medium very ripe bananas (about 13 ounces), peeled and mashed
1/4 cup sour cream
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup (packed) dark brown sugar
2 large eggs, at room temperature
1/2 cup chopped toasted walnuts
Special equipment:
A 9x5" loaf pan

Steps:

  • Preheat oven to 350°F. Grease a 9x5" loaf pan with butter and dust with flour, tapping out any excess.
  • Combine banana, sour cream, and vanilla in a medium bowl. Sift together flour, baking powder, baking soda, and salt in a large bowl.
  • Using an electric mixer, beat butter and brown sugar on medium speed in another large bowl until light and fluffy, about 3 1/2 minutes. Add eggs one at a time and beat on medium speed until fully combined, about 1 minute each. Add banana mixture and beat until just combined, about 30 seconds. Add dry ingredients in 2 batches, beating on low after each addition and scraping down sides of bowl if necessary, until fully incorporated, about 20 seconds per batch. Fold in walnuts. Transfer batter to prepared pan and smooth top with a spatula.
  • Bake, rotating halfway through, until batter is set, top is dark golden brown and starting to crack, sides are starting to pull away from pan, and a tester inserted into center of bread comes out clean, 60-65 minutes. Cool in pan on a wire rack at least 15 minutes. Run a butter knife around perimeter of pan to loosen loaf, then tap pan gently on its side until loaf releases. Transfer to a cutting board or plate and let cool completely before slicing.

Banana yeast bread is a beautifully moist and sweet bread that packs a nutritional punch. This bread is one of the most delicious ways to kickstart your mornings, liven up your breakfast, or just enjoy a quick and nutritious snack. The recipe is quite easy to prepare and comes with a plethora of variations to make it even more delicious. In this article, we will outline valuable tips to help you create the perfect ABM (Automatic Bread Maker) banana yeast bread recipe. Tip #1: Choose the Right Bananas When making banana yeast bread, it is essential to choose ripe bananas for maximum flavor and sweetness. The bananas should be brown and soft, indicating that they are fully ripened. Overripe bananas that are too brown or have an off smell should not be used as they can spoil the flavor and moisture of the bread. Additionally, use enough bananas to add the right amount of moisture and sweetness to the bread. Tip #2: Use a Good Quality Yeast The quality of the yeast you select will impact the flavor and rise of the bread. Therefore, it is crucial to use the right yeast brand and type. Instant yeast is often the ideal option to ensure that the bread rises faster and does not require proofing. A good quality yeast should be active and fresh, and have a decent shelf life. Tip #3: Mix the Bananas with Lemon Juice Mixing bananas with fresh lemon juice before adding them to the bread dough helps to prevent the bananas from turning brown, while the lemon juice adds a subtle tangy flavor to the bread. The acid in the lemon also helps to activate the yeast, which improves the rise of the bread and gives it a fluffier texture. Tip #4: Select the Right Flour Choosing the right flour is vital to ensure the correct texture and consistency of your bread. Bread flour is the recommended flour for this recipe as it contains more gluten, which helps the bread to rise and hold its structure. Whole wheat flour can be used to add a more robust flavor and a healthier twist. Tip #5: Use Warm Water Using warm water when preparing the bread dough gives the yeast the ideal temperature required to activate and rise correctly. The water should not be too hot as this can kill the yeast, halting the bread’s rise. It should be lukewarm or between 100-110 degrees Fahrenheit. Tip #6: Let the Bread Dough Rest After kneading the bread dough together, do not be in a rush to bake. Cover the dough lightly with a damp cloth or plastic wrap and allow it to rise for 1 to 2 hours. During this time, the yeast has time to activate and ferment, creating carbon dioxide to make the dough rise, yielding a more flavorful and aromatic bread. Tip #7: Add Mix-Ins to the Bread Dough ABM banana bread dough can be made even more delicious by adding mix-ins such as nuts, raisins, or chocolate chips. Before adding, it is crucial to select high-quality mix-ins to avoid added sugars and preservatives. These ingredients add a variation of flavors to the bread and give it a richer, more satisfying texture. Tip #8: Experiment with Spices Spices such as cinnamon, nutmeg, and ginger can add a warm aroma and taste to your banana yeast bread. Experimenting with different spices can give your bread a unique and exciting twist. A pinch of cardamom powder can also be used to add a fragrant floral flavor to the bread. Tip #9: Choose the Right Baking Pan The type of baking pan you use will impact the look and texture of the bread. A loaf pan or a cake pan is an ideal option for making banana bread, as it can hold its shape and cook the bread evenly. A non-stick pan should always be used to prevent the bread from sticking to the pan, which can make it look uneven or break apart. Tip #10: Allow the Bread to Cool It is vital to allow the bread to cool correctly once it is out of the oven. Cooling the bread on a wire rack rather than leaving it in the baking pan will prevent it from getting soggy. This will also allow air to circulate around the bread, giving it a more authentic and consistent texture. It is best to let the bread cool for at least 30 minutes before slicing and serving. Conclusion: Making the perfect ABM banana yeast bread is quite easy, but it does require the proper technique, selection of ingredients, and preparation ahead of time. Following the tips above will ensure that your bread turns out moist, fluffy, and full of flavor every time. Whether you are making banana bread for the first time or are an experienced baker, these tips are sure to make your recipe a hit.
