Categories     Mains     Starter

Time 35m

Number Of Ingredients 17

300g / 10oz whole prawns / shrimp (with heads and shells on (Note 7))
3 cup (750 ml) water
1/2 cup (125 ml) chicken stock/broth (, low sodium)
2 stalks of lemongrass (, outer layers peeled(Note 1))
1.5 cm / 3/5" piece of galangal (, cut into 4 slices (Note 2))
5 kaffir lime leaves (, torn roughly (Note 3))
2 Thai or birdseye chillies ((Note 4))
3 garlic cloves
120g / 4oz oyster mushrooms
1 roma tomato (, cut into wedges)
1/2 white onion ((medium sized), cut into wedges about 1 cm thick)
1 tsp sugar
3 tbsp fish sauce ((Note 5))
3 tbsp lime juice
Coriander/cilantro (, for garnish)
1 1/2 tbsp Thai roasted chili sauce ((Nam Prik Pa, Note 6))
1/3 cup (75 ml) evaporated milk

Steps:

  • Peel the prawns. Place heads and shell in pot, reserve meat.
  • Use a meat mallet or similar to bash the garlic, chilli and lemongrass so they burst open to release flavour. Add into pot.
  • Crush kaffir lime leaves with your hands. Add into pot.
  • Add galangal, stock and water. Bring to simmer on high heat, cover, then reduce to medium and simmer for 10 minutes.
  • Strain the broth, discard the prawn shells etc, then return broth into same pot over low heat.
  • Add onions and mushrooms, simmer 3 minutes. Add tomatoes, simmer for 1 minute.
  • Add prawns, simmer 2 minutes or until just cooked.
  • Stir in sugar and fish sauce, simmer for 1 minute.
  • Add lime juice, then taste. Adjust sweet (sugar), salt (fish sauce) and sour (lime) to your taste (trust me, you'll know when you like it!).
  • Ladle into bowls and serve with fresh coriander and fresh chilli! This is the CLEAR version of Tom Yum.
  • When you add sugar, also add Thai Chilli Paste and evaporated milk.
  • Then continue with recipe!
  • Following Creamy Tom Yum steps but use coconut milk instead of evaporated milk.

Abbys Oriental Yum Yum Soup is a flavourful and nutritious soup that is easy to prepare. It is a perfect blend of Thai and Chinese cuisine, making it a popular dish in many households. Whether you are a seasoned cook or a beginner, there are some valuable tips that can make your soup even more flavourful and delicious. Here are some tips that you can use when preparing Abbys Oriental Yum Yum Soup.

Tip 1 - Choose Fresh Ingredients

The freshness of your ingredients will have a substantial effect on the flavour of your soup. When making Abbys Oriental Yum Yum Soup, be sure to choose high-quality, fresh ingredients. You will need vegetables like mushrooms, baby corn, and cabbage. Make sure they are crisp and fresh. You can also choose to add some protein like tofu, chicken, or shrimp. If you are using shrimp, you want to make sure they are fresh and deveined.
Tip 1.1 - Proper Storage
Buying fresh ingredients is only half the battle when it comes to keeping them fresh for your soup. Knowing how to store your fresh produce is equally essential. Store your vegetables in the crisper drawer of your refrigerator. Be sure to remove any plastic wrapping as it can cause moisture to build up, leading to spoilage.

Tip 2 - Invest in Quality Spices and Herbs

Spices and herbs play a significant role in Abbys Oriental Yum Yum Soup's flavour profile. The right combination of spices can transform the soup's flavour and take it to another level. When making the soup, be sure to use high-quality spices and herbs. You will need ingredients like lemongrass, ginger, garlic, chillies, and coriander, to name a few. Fresh herbs are also preferable to dry herbs.
Tip 2.1 - Grind Your Own Spices
To get the most flavour from your spices, it is advisable to grind them yourself. Grinding your own spices will give you a more intense and aromatic flavour that is bound to take your soup to the next level.

Tip 3 - Know the Right Cooking Techniques

The right cooking techniques are essential in preparing Abbys Oriental Yum Yum Soup. One technique that you should master is stir-frying. Stir-frying ensures that all the ingredients are cooked uniformly and retain their nutrients. You should also learn how to simmer your soup correctly.
Tip 3.1 - Stir-fry the Vegetables Separately
When preparing Abbys Oriental Yum Yum Soup, stir-fry the vegetables separately. Each vegetable will need a different cooking time, and cooking them together can result in some vegetables being overcooked while others are undercooked.
Tip 3.2 - Simmer Your Soup on Low Heat
When simmering your Abbys Oriental Yum Yum Soup, keep the heat low. Simmering the soup on high heat can make it lose its flavour and nutrients. Low heat allows the flavours to mix and develop, resulting in a delicious soup.

Tip 4 - Make Your Soup Creamy

The creamy texture of Abbys Oriental Yum Yum Soup is what sets it apart from other soups. To make your soup creamy, you will need coconut milk. Coconut milk adds a creamy texture and a pleasant sweetness to the soup. You should use thick coconut milk for a creamier texture.
Tip 4.1 - Shake the Can of Coconut Milk
Before using the can of coconut milk, shake it well. This will ensure that the coconut cream and water mix and result in a creamy texture.

Tip 5 - Add Your Protein Last

If you are using protein like tofu, chicken, or shrimp, you should add it last. Adding protein too early can result in it being overcooked and tough. You should also ensure that your protein is cooked through before serving the soup.
Tip 5.1 - Marinate Your Protein
To infuse more flavour into your protein, marinate it before cooking. It will also make it more tender.

Conclusion

Abbys Oriental Yum Yum Soup is a delicious and nutritious soup that everyone should try. By following the tips outlined above, you can create a soup that is bursting with flavour, texture and nutrition. Remember always to use fresh ingredients, invest in quality spices and herbs, master the right cooking techniques, make your soup creamy, and add your protein last. Happy cooking!
