3 pounds chuck roast, cut into 4-5 inch chunks
1 yellow onion, sliced
2 cups beef stock
1 cup dark beer
½ tsp garlic powder
1 bay leaf
2 tbsp soy sauce
½ tsp dried thyme (optional)
2 tbsp Worcestershire sauce (optional)
2 tbsp oil
salt, black pepper to taste
6 soft hoagie rolls, sliced in half lengthwise
4 tbsp melted garlic butter
1/3 cup horseradish mayonnaise
5 oz provolone cheese, sliced

Steps:

  • Season the roast with salt and black pepper to taste.
  • Press the SAUTE button on the Instant Pot and let stand until screen reads "HOT".
  • Add the oil.
  • Add the roast chunks and brown 4-5 minutes per side.
  • Remove the roast from the Instant Pot.
  • Add the dark beer and scrape the bottom of the pot with a wooden spoon to loosen the brown bits.
  • Press the CANCEL button.
  • Add the roast, onion, garlic powder, bay leaf and soy sauce to the pot and stir to combine.
  • Add the Worcestershire sauce and dried thyme if using.
  • Close and seal the Instant pot.
  • Turn the venting knob to SEALING.
  • Press the PRESSURE COOK button and check to make sure the pressure level shows as "High" on the display.
  • Adjust the timer to 45 minutes.
  • When finished cooking, release pressure naturally according to manufacturer's directions.
  • Open the lid.
  • Remove the roast from the Instant pot.
  • Shred the roast with 2 forks.
  • Strain the cooking liquid.
  • To make the sandwiches, preheat the broiler of your oven.
  • Brush the roll halves with garlic butter and broil until golden.
  • Remove the roll top halves from the baking sheet.
  • Leave the bottom halves on the baking sheet.
  • Top with shredded beef and cheese slices.
  • Return to the oven and broil until the cheese is melted.
  • Remove from the oven.
  • Spread the horseradish mayonnaise on the roll top halves.
  • Close the sandwich and serve with cooking liquid to dunk the sandwich in.

One 3- to 5-pound chuck roast
2 or 3 tablespoons olive oil
2 whole onions, peeled and halved
6 to 8 whole carrots, unpeeled, cut into 2-inch pieces
1 cup red wine, optional
3 cups beef broth
2 or 3 sprigs fresh rosemary
2 or 3 sprigs fresh thyme

Steps:

  • Preheat the oven to 275 degrees F.
  • Generously salt and pepper the chuck roast.
  • Heat the olive oil in large pot or Dutch oven over medium-high heat. Add the halved onions to the pot, browning them on both sides. Remove the onions to a plate.
  • Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, about a minute or so. Reserve the carrots with the onions.
  • If needed, add a bit more olive oil to the very hot pot. Place the meat in the pot and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
  • With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pot, scraping the bottom with a whisk. Place the roast back into the pot and add enough beef stock to cover the meat halfway.
  • Add in the onions and the carrots, along with the fresh herbs.
  • Put the lid on, then roast for 3 hours for a 3-pound roast. For a 4 to 5-pound roast, plan on 4 hours. The roast is ready when it's fall-apart tender.

1 (4 pound) beef pot roast
1 tablespoon brown sugar
1 tablespoon salt
1 tablespoon dry mustard
¼ teaspoon black pepper
3 large potatoes, quartered
3 carrots, peeled and cut into 2-inch pieces
1 onion, sliced
⅓ cup vinegar
⅓ cup water

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Heat vegetable oil in a Dutch oven over medium heat. Cook beef in Dutch oven until browned on all sides, 2 to 3 minutes per side.
  • Mix brown sugar, salt, mustard, and black pepper together in a small bowl; sprinkle evenly over the roast. Arrange potatoes, carrots, and onion in the Dutch oven around the roast. Pour vinegar and water over the vegetables.

Steps:

  • Adjust oven rack to middle position and preheat to 300 degrees.

My boyfriend didn't like pot roast before he met me, and now? Well, let's just say this little number gets him asking me to make it...

1/8 c water
1/4 c marsala wine
3 lb chuck roast with good marbling (i usually get mine from a local butcher.)
1 au jus seasoning packet
5 clove chopped garlic
1 medium yellow onion, sliced
6 Tbsp salted sweet cream butter

Steps:

  • 1. Pour your water and marsala wine into your slow cooker, then place your roast on top.
  • 2. Sprinkle with Au Jus seasoning mix, garlic, and onions. Place the butter on top of the roast.
  • 3. Cover with lid, and cook on low for 8 hours. If you're able to, shred the meat into the juices after 7 1/2 hours. Serve with your favorite sides, or make some yummy pot roast sandwiches! :)
