Steps:
- Empty peeled plum tomatoes into a bowl and break them up with your hands or a spoon.
- Heat olive oil in a saucepan and add the chopped garlic. Gently fry ingredients together.
- Add the peeled plum tomatoes to the saucepan. Simmer on low to medium heat for 10 minutes.
- Season the sauce with salt. Add the torn basil leaves at the very end.

- In a medium saucepan, heat olive oil over medium-high. Add garlic; cook until fragrant, about 1 minute. Add red-pepper flakes (optional) and tomatoes, breaking them up as you go. Season with salt and pepper. Bring to a boil, then reduce to a rapid simmer. Cook, stirring often, until sauce thickens, about 15 minutes. Stir in oregano leaves.

FIVE MINUTE TOMATO SAUCE RECIPE

- Combine the olive oil, red pepper flakes, sea salt, and garlic in a cold saucepan.
- Stir while you heat the mixture over medium-high heat, saute just 45 seconds or so until everything is fragrant - you don't want the garlic to brown.
- Stir in the tomatoes and heat to a gentle simmer, this takes just a couple minutes.
- Remove from heat and carefully take a taste (you don't want to burn your tongue) -- If the sauce needs more salt add it now.
- Stir in the lemon zest, and that's it! Simple, quick, and delicious.

Found this recipe in David Rocco's Dolce Vita and my daughter loves it! I've adjusted some of the ingredients to the way we like it. Also, I doubled up so I could freeze some.

- In a stockpot, heat up olive oil and lightly brown garlic and onion. (and red pepper flakes, if using them).
- Add tomato sauce, salt, basil and parsley.
- If using plum tomatoes, in stockpot, puree whole tomatoes with hand blender.
- Simmer sauce for 5 minutes.
- Cook noodles according to pkg.
- Spoon sauce over noodles and serve with a fresh salad and bread.

- Spray saute pan with non stick cooking spray. Add garlic and cook. Add tomato, red wine or tomato juice, basil, fennel or anise and oregano. Saute for 4-5 minutes.
- Remove to blender and puree to desired consistency. Return to stove. Adjust thickness and seasonings to taste.
