These are so easy to make and shouldn't melt too much in the summer heat. It's so hard to find a Fourth of July dessert that won't melt but I think these should hold up nicely.

2 boxes Jello Cheesecake instant pudding
4 cups milk
1 1/2 cups fresh blueberries
2 cups fresh strawberries (halved and quartered)
Whipped cream for topping
Parfait glasses or jars

Steps:

  • In a large bowl, whisk together pudding mix and milk for about two minutes. Let stand for a few minutes to thicken. In your parfait glasses, add a layer of strawberries to the bottom- the more the better to get a good layer of red at the bottom. Add about 3/4 cup Cheesecake pudding mixture to your glass. Follow with a layer of blueberries. Chill in the refrigerator until ready to serve. Before serving, top with whipped cream and a few extra blueberries for garnish. Enjoy!

American Angel Food Parfait image

A fresh and fruity dessert! This creamy trifle is light as a feather and tastes like a dream... a good dream. Great to serve for the Fourth of July or anytime you're in the mood for a festive and patriotic dessert. It can be thrown together in a snap and is made with all store-bought ingredients.

1 pkg blueberries, save a few for top (6 oz)
1 pkg raspberries (6 oz) or strawberries (16 oz), save a few for top
1 pre-made angel food cake
1 pkg Cool Whip (8 - 16 oz container depending on how much Cool Whip you like)
1 clear glass container large enough to layer ingredients

Steps:

  • 1. Lightly rinse and pat dry the berries.
  • 2. Tear the angel food cake into bite-sized chunks (no need to be even).
  • 3. Start with placing half of the cake chunks in bottom of container.
  • 4. Sprinkle a layer of strawberries (or raspberries) and blueberries.
  • 5. Spread half of Cool Whip over berries.
  • 6. Repeat steps 3-5. Decorate top with leftover berries. Serve :-)

This simple, yummy recipe filled with fruit that is PERFECTLY ripe right now, appeared in our local paper this week. PRETTY, refreshing, and VERY patriotic looking.

8 ounces cream cheese, at room temperature
6 tablespoons powdered sugar
1 cup whipping cream
1 1/2 teaspoons lemon juice (fresh)
2 cups blueberries (fresh, sprinkled with sugar)
2 cups strawberries (fresh, or red raspberries sprinkled with sugar)
fresh mint leaves (to garnish) or lemon balm (to garnish)

Steps:

  • In a medium mixing bowl, place the cream cheese, lemon juice, and powdered sugar. Whip with an electric mixer until fluffy. Slowly add whipping cream, a little at a time, and continue beating until the cream is incorporated and the mixture is fluffy.
  • Into tall wine glasses or champagne flutes, spoon some blueberries into the glass, then a dollop of whipped cream mixture. Add some strawberries or raspberries, then another dollop of whipped cream. Continue until glass is full, then garnish with mint leaves or lemon balm.
