I have made this bread for many years. The recipe comes from and old book, over 25 years ago, The cover has left the book, but I believe it was called Ohio State Fair 4H Winning Recipes or something like this. My SIL wanted a hand made bread recipe. I search along time though my cookbook collection to find it. Thought I would post it to perserve it. I haven't made it in a long long time. This was my go to recipe before the invention of bread machines. I will have to take the time to make it again soon. This recipe has never failed me.Most and so tasty..

Number Of Ingredients 7

5 1/2-6 1/2 cups all-purpose flour (bread flour won't work)
3 tablespoons sugar
2 teaspoons salt
1 (1/4 ounce) package dry active yeast
1 1/2 cups water
1/2 cup milk
3 tablespoons margarine (I use unsalted butter)

Steps:

  • In a large bowl thoroughly mix 2 cups of flour, sugar,salt and undissolved Yeast.
  • Combine water, milk and margarine in a sauce pan. Heat over low heat until liquids are warm. (margarine does not need to be melted).
  • Gradually add to dry mixture and beat 2 minutes with a mixer, at medium speed scrapping the sides of the bowl.
  • Stir in enough of the remainig flour to make a soft dough.
  • Turn dough out on a lightly foured board and kneed until elastic and smooth. About 8 minutes.
  • Place in a greased bowl. Turn dough over and cover. Let rise in a warm place intil doubled. About 1 hour.
  • Punch down dough. Turn onto a lightly floured board. Cover and let rest for 15 minutes.
  • Divide dough in half. Shape each into a loaf.
  • Place each half in a greased 8 1/3 x 4 1/2 x 2 1/2 inch loaf pan.
  • Cover and let rise in a warm place until doubled. About 1 hour.
  • Bake in 400F oven for 25 to 30 minutes.
  • Remove from pan and let cool on a wire rack.

Delicious, basic bread recipe. Yummy! When I make this recipe, I bake one, and freeze the other two loaves, then use them later. To use later, I simply thaw in greased bread pan & let rise above & continue to follow same directions as posted. Enjoy!

Number Of Ingredients 6

2 3/4 cups water (approx. 105 degrees)
1 tablespoon yeast
1/3 cup sugar
1 tablespoon salt
2 tablespoons lard
6 -7 cups occident flour

Steps:

  • In large bowl, mix sugar, yeast, melted lard and warm water.
  • Stir and let stand approximately 2-5 minutes, until bubbly.
  • Add salt and flour; stir, then mix well.
  • Let stand (covered with a towel) for 30-60 minutes.
  • Punch down, then knead.
  • Shape into three loaves.
  • Place into greased loaf pans and let rise until rounded above pan.
  • Bake at 350 for 30 minutes or until done.
  • Remove from pans and butter tops, if desired, for a softer crust.
  • Note: Adjust flour as needed.

NO-SALT WHITE BREAD



No-Salt White Bread image

Very simple white bread recipe for breadmaker (if you're clever you can adapt for oven!) Whole wheat flour could be substituted. This is originally a medieval Tuscan recipe, created by peasants who couldn't afford the high taxes on salt. Perfect for those of us on low-sodium diets!

1 cup warm water
1 tablespoon olive oil
1 1/4 teaspoons sugar
1 1/4 teaspoons yeast
3 1/4 cups flour
1 egg white

Steps:

  • Combine water and sugar, dissolve sugar.
  • Add yeast to sugar water.
  • Put flour, yeast mixture and olive oil into breadmaker.
  • Start the breadmaker, with a plain or French loaf setting on your machine.
  • When ingredients are almost completely combined (about 5 minutes in), add egg white.
  • Allow breadmaker to complete baking.
