I made these one time to go with soup that we were having for dinner. I made the dough balls too big and/or let them rise too much and they ended up being huge, but they were good and they were easy to make.

1 cup very warm water
2 tablespoons very warm water
1/3 cup oil
1/4 cup sugar
2 tablespoons yeast
1 teaspoon salt
1 egg, beaten
3 -4 cups flour

Steps:

  • Mix warm water, oil, sugar and yeast; let rest for 10 minutes until yeast activates.
  • Add salt and beaten egg; blend well.
  • Add flour, one cup at a time until soft dough if formed.
  • Knead on a floured surface 5-10 minutes or until dough is smooth and elastic.
  • Shape into small balls (walnut sized) and put into a greased baking pan.
  • Let rise at least 5-10 minutes.
  • Bake at 425 degrees for 15-20 minutes.
  • *If you have more time, you can let the rolls rise in the pan until they have doubled in size.

I recently needed a quick dessert for company coming over for coffee. My cupboard was rather bare as it was my day to go shopping. However, this recipe evolved from "frantic" creativity. Your guests will be delighted with these delicious rolls and assumed you cooked all morning. Enjoy these quick and easy cinnamon rolls.

16 1/3 oz can of pillsbury grand flaky biscuits (buttery)
1/2 stick butter, melted
prepared cinnamon and sugar mix*
1/3 c nuts, chopped
glaze
GLAZE
1 c powdered sugar
1/2 Tbsp butter, melted
1/2 tsp vanilla extract
milk

Steps:

  • 1. Separate the eight biscuits; roll out each biscuit into flat circles using a rolling pen on a floured pastry cloth. Brush dough rounds with melted butter. Generously sprinkle with cinnamon sugar mix. Roll up each one jelly roll fashion; place in a oiled/buttered baking dish with seam down. Bake in a 350 degree oven for 18 - 20 minutes.
  • 2. Prepare glaze while rolls are baking. Mix all ingredients together, adding just enough milk for consistency of mixture to glaze rolls. Note: You can also use warmed Caramel Topping to glaze rolls.
  • 3. Remove baked rolls from oven and brush again with melted butter. Drizzle with glaze and chopped nuts. Serve. *I mix my own sugar cinnamon: approximately 1 tsp. of cinnamon to 1/2 cup sugar.

Delicious cinnamon rolls made with a soft, quick rising dough.

¾ cup milk
¼ cup margarine, softened
3 ¼ cups all-purpose flour
1 (.25 ounce) package instant yeast
¼ cup white sugar
½ teaspoon salt
¼ cup water
1 egg
1 cup brown sugar, packed
1 tablespoon ground cinnamon
½ cup margarine, softened
½ cup raisins

Steps:

  • Heat the milk in a small saucepan until it bubbles, then remove from heat. Mix in margarine; stir until melted. Let cool until lukewarm.
  • In a large mixing bowl, combine 2 1/4 cup flour, yeast, white sugar and salt; mix well. Add water, egg and the milk mixture; beat well. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has just pulled together, turn it out onto a lightly floured surface and knead until smooth, about 5 minutes.
  • Cover the dough with a damp cloth and let rest for 10 minutes. Meanwhile, in a small bowl, mix together brown sugar, cinnamon, softened margarine.
  • Roll out dough into a 12x9 inch rectangle. Spread dough with margarine/sugar mixture. Sprinkle with raisins if desired. Roll up dough and pinch seam to seal. Cut into 12 equal size rolls and place cut side up in 12 lightly greased muffin cups. Cover and let rise until doubled, about 30 minutes. Preheat oven to 375 degrees F (190 degrees C).
  • Bake in the preheated oven for 20 minutes, or until browned. Remove from muffin cups to cool. Serve warm
