Got this from a Happy Hour friend, who grew up on this. All the garlic smells WONDERFUL simmering, but does not have a strong taste at serving. All the measurements are "abouts" - 3 cups/2 cups - whatever. It's SOUP, not brain surgery ! Flavors improve after sitting a day or 2. I have not tried to freeze.

3 cups onions, chopped
2 cups carrots, sliced
1 1/2 cups celery, sliced
30 garlic cloves, peeled and crushed
6 tablespoons olive oil
64 ounces chicken broth
4 (15 ounce) cans cannellini beans, rinsed and drained (I put in 1 can without draining )
2 teaspoons dried sage
salt and pepper
crouton (optional)
bacon bits (optional)

Steps:

  • Saute onion, carrot, celery, and garlic in the olive oil in a LARGE soup pot for about 10 minutes.
  • Add broth, beans, and sage.
  • Simmer 1 hour (or more).
  • Add salt and coarse ground pepper.
  • Puree soup with immersion blender (or food processor in batches).
  • Serve with croutons and/or bacon bits.

2 cups great northern beans
1 teaspoon baking soda
12 cups hot water
2 tablespoons instant chicken bouillon granules
1/4 teaspoon dried rosemary
1/4 teaspoon dried thyme
1 bay leaf
10 -15 garlic cloves, separated but unpeeled
3 onions, peeled & coarsley chopped
1 shallot, chopped
5 medium carrots, coarsely chopped
4 stalks celery, chopped
1/4 cup chopped fresh parsley
1 cup lean ham, cubed
salt & pepper

Steps:

  • Soaked bean adding 1 tsp Baking Soda 8 hours or overnight.
  • Drain and rinse.
  • Place beans, water, chicken broth powder, rosemary, thyme and bay leaf in a a slow cooker.
  • Cook on High for 1 hour.
  • Meanwhile, place garlic cloves in foil; roast at 350F for 30 minutes.
  • Let cool and set aside.
  • Add onions, carrots and celery to bean mixture, Leave on High another hour.
  • Add ham cubes.
  • Reduce to Low and cook app 4 hours.
  • Remove about 1 cup of the soup from the pot and place in a bowl.
  • Break the roasted garlic cloves into pieces with your fingers and press out the cooked garlic and stir into the bowl with the soup.
  • With hand mixer or blender, carefully puree mixture until still slightly chunky. Stir it back into the pot.
  • Let it cook another 1/2 hour to blend the flavours.
  • Remove bay leaf.
  • Stir in parlsey.
  • The taste will surprise you!
  • Cooking time does not include the bean soaking time.
  • Tip:After reading Charmie's review start with 10 cups of water and add some more if needed.

Senate Navy Bean Soup With a Hint of Clove image

Caution: don't use too much clove powder, but please don't leave it out. I found this recipe in "Beans" by Alize Green, but the directions are my own. This can be made on the stove top, or made in a pressure cooker, using less water, and having lightly salted the soaking beans, so that the pressure cooker doesn't turn beans to absolute mush. If your beans are older, this is probably not a problem.

1 lb dried navy beans
2 quarts cold water
1 ham hock
1 cup diced onion
1 cup diced celery, including leaves
1 cup peeled and finely diced potato
2 teaspoons chopped garlic
1/4 teaspoon clove powder
salt & freshly ground black pepper
1/4 cup chopped Italian parsley

Steps:

  • Combine drained navy beans with water and ham hock, and bring to a boil. When boiling, reduce heat and simmer until the beans are tender. This can take 1 1/2 hours or more, if you forgot the beans in the back of the cabinet, like I did :).
  • Take out the ham bone, picking any meat off the bones. Throw out the bone. Add meat to pot, with the rest of the ingredients, except for parsley.
  • Bring soup back to a boil, then simmer until ingredients are soft.
  • Take out a cup of the beans, then with a hand blender, blend the soup. Add the cup of beans back inches Salt and pepper, then serve.
